Time 10m

Number Of Ingredients 10

1/2 C (120g) Sugar (Evaporated Cane Juice)
1/2 C (115g) Water
2 Stems of Mint (stems and leaves)
1/2 (55g) Lime cut into 4 wedges (3 wedges cut 1/2, save the last wedge for garnish)
4-8 Leaves Whole Mint ((depends on taste, I use 8 or more). Reserve one stem for garnish.)
4 (125g) Strawberries (3 large, quartered for muddling, 1 berry for garnish)
1 - 1 1/2 oz (28-42g) Mint Simple Syrup (cooled (recipe above))
2 oz (57g) White / Light Rum (or leave out for mocktail**)
Crushed Ice
Club Soda

Steps:

  • Pour the sugar and water in a two-quart saucepan, then add the mint and bring to a boil. Stir. Boil until all the sugar is dissolved. Set aside to steep for 10 minutes and allow to the syrup to cool. Remove the mint leaves and pour into a lidded container for storage in the refrigerator until ready to use.
  • In a 16 oz (454g) highball glass, layer the cut lime wedges, mint leaves, and quartered strawberries.
  • Pour in the simple and muddle the mixture for about 30 seconds. The goal is to squeeze out the lime juice, mash the berries and to allow the mint to release its oils. There should be bits of strawberries left when muddling is complete.
  • Add the light rum (or omit for mocktail) to the muddled mixture, then add crushed ice (I fill mine almost to the top). Top off with Club Soda. Stir well.Garnish with a lime wedge, medium strawberry, and mint stem. When finishing the mojito, have a spoon on hand to dig out the delicious strawberry bits!

Categories     Drink

Time 5m

Yield 1

Number Of Ingredients 7

2 to 4 strawberries, hulled and sliced (4 if small berries, 3 if medium, 2 if truly massive)
8 mint leaves
1/2 ounce simple syrup (1:1 sugar and water; I prefer turbinado sugar)
3/4 ounce fresh squeezed lime juice
2 ounces white rum
1 ounce sparkling water
Crushed ice

Steps:

  • Muddle the strawberries: Place the strawberries, mint, and simple syrup in the bottom of a glass, and muddle until the strawberries are smushed and juicy. If you don't have a muddler, crumple the mint with your hands just a bit before dropping it into the glass, then smush with the back of a spoon to release the flavor.
  • Add the remaining ingredients: Add crushed ice on top of the strawberries and mint, then pour in the lime juice and rum.
  • Stir: Use a bar spoon or teaspoon to stir the drink. Don't stir too vigorously, otherwise you'll bring the mint to the surface!
  • Top with sparkling water: Fill the remainder of the glass with more crushed ice, then top with sparkling water.

Time 33m

Yield 1 serving(s)

Number Of Ingredients 6

4 ripe strawberries
10 mint leaves
1/2 lime, cut into small wedges
1 1/2 teaspoons vanilla-flavored syrup
2 ounces vanilla rum (or regular light rum such as bacardi)
splash club soda

Steps:

  • Split 2 vanilla beans and scrape insides, add scraping and pods to bottle of rum. Shake well and let sit for a week before using. The longer it sits the more intense the flavor will get. When the rum turns dark similar to a spiced rum it is ready for use.
  • Make vanilla syrup. bring 1 cup of water and sugar to a boil until sugar is dissolved into a syrup. add insided and pods of 2 vanilla beans and cover after cooled transfer to a capped squirt bottle of plastic container.
  • In a blender, or with an immersion hand mixer purree berries.
  • In an old fashioned glass add the mint and limes. Muddle mint and lime until all juice is released from limes and mint has released it oils. (while muddling try not to shred the mint into small pieces, pressing down on mint and not scraping will do this).
  • Add strawberry purree and vanilla syrup to lime and mint.
  • Fill the glass completely with large ice cubes and add rum.
  • Stir all ingredients until mixed completely and top with splash of club soda. If you wish to shake the drink I suggest straining and serving it up and strained to avoid tiny bits of mint.

STRAWBERRY BASIL MOJITO

Strawberry Basil Mojito image

We're right in the middle of bountiful strawberry season. We eat strawberries on everything in the summer, don't you? Did you know that most strawberry farmers have to use organic growing conditions ANYWAY to get strawberries to grow, even if their farm is not certified organic? And that frozen, fresh, organic or not, just EAT THEM anyway you can get them in your body. The nutritional value is the same. I'm sharing one of my favorite items from a Strawberry Get-Together with you. Cuz it's awesome. And because a lot of people have been bugging me for this recipe.
