Steps:
- Combine the flour and salt. Using a pastry blender, cut in the shortening until the pieces are the size of small peas. Sprinkle 1 tablespoon of the water over part of the mixture, then gently toss with a fork. Push moistened portion to the side of the bowl. Repeat, using 1 tablespoon of water at a time, until all is moistened. Divide the dough in half. Form each half into a ball and flatten slightly. Wrap in plastic and refrigerate for at least 30 minutes.
- Transfer one piece of dough to a lightly floured surface. Roll the dough from the center to the edges to form a 12-inch circle. Wrap the crust around the rolling pin. Unroll it onto a 9-inch pie plate. Ease the crust into the pie plate, being careful not to stretch it. Trim the bottom crust evenly with the rim of the pie plate, and return the pastry-lined pie plate to the refrigerator.
- In a large mixing bowl, stir together the sugar and cornstarch. Add the strawberries, raspberries, and blueberries; gently toss until berries are coated. Allow fruit mixture to stand for about 15 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Place a baking sheet in the oven to preheat.
- Roll out the remaining pastry for the top crust. Stir the berry mixture and pour the filling into the pastry-lined pie plate. Place the top crust over the pie and trim the edges, leaving a 1/2-inch overhang. Fold the top crust under the bottom crust, pressing lightly to seal. Crimp the edges of the crust and cut vents in the top to allow steam to escape. To prevent over-browning, cover the edge of the pie with foil.
- Bake in the preheated oven on the baking tray for 25 minutes. Remove the foil.
- Bake for an additional 20 to 30 minutes, or until the filling is bubbling and the crust is golden. Cool on a wire rack.

STRAWBERRY RASPBERRY PIE
This is a great pie to use fresh fruit if available. Frozen fruit can be used, just thaw slightly and drain the liquid. I have made it as a two crust pie or a lattice pie crust, either way is great and it is extra delicious served with a scoop of vanilla ice cream!

Steps:
- 1. Prepare crust for pie. Preheat oven to 425F Place bottom crust in pie plate
- 2. To prepare filling, cut stems off strawberries and cut in half or in fourths if they are large. Put rinsed fresh berries in large bowl, add sugar and cornstarch. Stir the marmalade with a spoon until its thin, then add to berries. Mix gently with large spoon. If using frozen fruit, just thaw slightly and pour off liquid, before adding sugar, cornstarch and marmalade. Pour into pie crust.
- 3. If doing a lattice pie, roll out crust and cut strips with pizza cutter and arrange in lattice pattern over filling. Pinch and seal edges and flute. Brush with egg and water mixture and sprinkle with almonds, if desired. Bake 10 mins. Reduce to 350 and bake 40 minutes. Let cool completely on wire rack.
- 4. Whisk powdered sugar, water and vanilla in small bowl until smooth. Drizzle over pie. Note: For making a 2 crust pie, seal the edges, flute and make a couple slits in center of top crust to allow heat to escape. Also, let the pie rest a few hours before serving and it will slice up nicely.
MIXED BERRY PIE
Here's a delightful way to enjoy summertime fruits. If you're short on one of the berries, just make up the amount with one of the other fruits in the pie. -Elaine Moody, Clever, Missouri

FROZEN STRAWBERRY PIE
This is all about strawberries with raspberries as a backup singer. I love them both but raspberries can make a strawberry come to life. The tang of the cream cheese mixed with the rich cream and sweetened condensed milk makes such an easy pie filling. It's like a distant cousin of the key lime pie and this one is frozen so it doesn't need the ice cream or even whipped cream to go with it.

Steps:
- For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 10-inch pie dish and set side.
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, ginger and melted butter. The texture should resemble wet sand. Press the crumbs into an even layer in the bottom and up the sides of the pie dish. Use the bottom of a measuring cup or glass to pack the bottom crust firmly. Bake until the crust firms up and browns lightly, 10 to 12 minutes. Remove from the oven and set aside on a rack to cool completely.
- For the filling: In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to stiff peaks. Transfer to a medium bowl and refrigerate.
- In the same mixing bowl of the electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth. Slowly pour in the condensed milk and continue to mix until incorporated and smooth. Add the lemon zest and juice and salt and beat on medium-high speed until combined, 1 to 2 minutes. If necessary, transfer the mixture to a large bowl to allow for the whipped cream. Use a rubber spatula to fold the raspberries into the filling mix, then fold in the whipped cream.
- To assemble: Spoon the filling into the completely cooled crust. Freeze the pie for at least 6 hours, up to 12 hours.
- For the topping: In a medium bowl, toss the strawberries with the brown sugar and vinegar. Remove the pie from the freezer, top with the strawberry mixture and serve.

STRAWBERRY RHUBARB PIE
An excellent pie to make when strawberries and rhubarb are at their peak. This delicious fruit-filled pie is a recipe from Canadian Living magazine, May 1993. You can substitute a plain top crust instead of the lattice top if you like; brush with the egg glaze and cut steam vents. Tip: Keep a clear plastic quilt ruler with your baking and cooking supplies to measure pastry strips for lattice pies, to measure squares or strips of dough, pastry, or pasta, or as a guide for cutting squares evenly.

STRAWBERRY-RASPBERRY PIE - TASTES LIKE SUMMER!

- For crust: Cut together butter, sugar and flour with a pastry blender to form pea sized bits. Press into a pie plate (preferably glass). If you use a 9 inch pan, you will have a thicker, more cookie-like crust. If you use a 10 inch pie plate, it will be spread thinner and be more crumbly. When pressing a crust into a pie plate, start with the edges, then press the remaining material into the bottom.
- Bake at 325 degrees F for 15-18 minutes until lightly brown. Allow to cool to room temperature before filling.
- For Filling: In a small sauce pot, simmer 1/2 cup mashed strawberries, 1/2 cup raspberries and 2/3 cup water for 3 minutes. In a small bowl, blend sugar and cornstarch, then add remaining 1/3 cup water and mix into a slurry. Pour sugar/cornstarch mix into berry mix on stove. Bring to boil, stirring constantly. Boil one minute. The color of the mix will turn from dull to glossy. Set aside to chill. Room temperature is okay, refrigerator temperature is better. Don’t pour hot filling over your berries or you’ll end up with a big, sloppy mess.
- While the cornstarch mix is chilling, prep your berries. Rinse berries in a colander if they are dirty – never soak your berries to wash them. (They act like sponges.) Place berries on a kitchen towel and pat dry. (Too much moisture will make your pie runny.) Remove the hulls. If the berries are small, you can leave them whole. Larger berries may be sliced. Sliced berries tend to make a neater pie. Whole berries save time. Your choice. It’s all good.
