4 cups sliced fresh plums (about 1-1/2 pounds)
1 tablespoon lemon juice
1/2 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 frozen deep-dish pie crust (9 inches)
TOPPING:
1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons cold butter

Steps:

  • Preheat oven to 375°. In a large bowl, sprinkle plums with lemon juice. Combine sugar, flour, salt and cinnamon. Add to plums; toss gently to coat. Pour into pie shell. , For topping, in a small bowl, combine sugar, flour, cinnamon and nutmeg; cut in butter until crumbly. Sprinkle over filling. , Bake until filling is bubbly, 50-60 minutes. Cover edge loosely with foil during the last 20 minutes if needed to prevent overbrowning. Cool on a wire rack.

¾ cup white sugar
3 tablespoons cornstarch
1 pinch salt
1 cup water, divided
3 tablespoons lemon juice
½ teaspoon almond extract
3 drops red food coloring, or as desired
3 cups fresh strawberries, sliced
1 (9 inch) baked pie crust
8 ounces heavy whipping cream
3 tablespoons confectioners' sugar, or to taste

Steps:

  • Stir sugar, cornstarch, and salt together in a medium saucepan. Add 3 tablespoons water and mix into a paste.
  • Bring remaining water to a boil in a pot. Add to sugar mixture slowly. Let mixture simmer over low heat, stirring constantly, until thick and clear, about 5 minutes. Remove from heat. Add lemon juice, almond extract, and red food coloring.
  • Let mixture cool for at least 15 minutes; fold in strawberries. Pour into the prepared pie crust. Chill until set, at least 1 hour.
  • Whip heavy cream in a mixing bowl using an electric mixer; add confectioners' sugar slowly until combined. Spread topping over chilled pie.

1 (15 ounce) box refrigerated pie crusts
2 lbs plums, pitted, cut into 1/2-inch-thick wedges
1 quart strawberry, trimmed and quartered
1 cup sugar
1 1/2 teaspoons sugar
1/2 cup cornstarch
3/4 teaspoon ground cinnamon
1 egg

Steps:

  • Place baking sheet on center oven rack. Preheat oven to 375 degrees.
  • Fit single pie crust into a 9-inch pie pan.
  • Mix fruit, 1 cup sugar, cornstarch and cinnamon; spoon into pie shell.
  • Place remaining pie crust over fruit; flute edge. Cut slits and top and prick with fork to release steam. Brush on egg; sprinkle with remaining sugar.
  • Bake on sheet 1 hour, 20 minutes or until bubbly. (If crust browns too quickly, shield with strips or pieces of aluminum foil.).

1 small red pepper, chopped
1/2 purple onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons fresh basil, chopped
5 eggs
1 cup half-and-half
1 teaspoon salt
1/2 teaspoon pepper
2 cups monterey jack cheese, shredded
1/3 cup parmesan cheese
3 plum tomatoes, cut into 1/4-inch slices

Steps:

  • Fit pie crust into a 9-inch deep dish tart pan; prick bottom and sides of pie crust with a fork.
  • Bake crust at 425-degrees for 10 minutes. Remove from oven; set aside.
  • Saute bell pepper, onion, and garlic in hot oil for 5 minutes or until tender; stir in basil.
  • Whisk together eggs and next 3 ingredients in a large bowl; stir in sauteed vegetables and cheeses. Pour into crust; top with tomato.
  • Bake at 375-degrees for 40 to 45 minutes or until set; shielding edges with strips of aluminum foil after 30 minutes to prevent excessive browning. Let stand 5 minutes before serving.

1 (9 inch) prepared graham cracker pie crust
1 (8 ounce) package Neufchatel cheese, softened
2 tablespoons white sugar
2 teaspoons pure vanilla extract
2 tablespoons milk
1 pint fresh strawberries, hulled
1 cup strawberry glaze

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake pie crust in preheated oven until lightly browed, about 5 minutes; allow to cool completely before filling.
  • Beat together Neufchatel cheese, sugar, vanilla extract, and milk together in a bowl until slightly thinned; spread with a spatula onto the pie crust.
