STRAWBERRY-PINK LEMONADE ICEBOX CAKE



Strawberry-Pink Lemonade Icebox Cake image

This easy icebox cake requires no oven at all and is a celebration of pink--4 different shades to be exact! Ground freeze-dried strawberries lend color to the lemon-scented whipped cream. If your whipped cream looks like it's getting too stiff at any time, simply stir in a little extra heavy cream to smooth it out.

Four 1.2-ounce bags freeze-dried strawberries (about 8 cups)
2 cups confectioners' sugar
2 teaspoons finely grated lemon zest
8 to 8 1/2 cups heavy cream, chilled
72 round lemon cookies, such as Pepperidge Farm
4 cups sliced fresh strawberries (from about 1 1/2 pounds strawberries)

Steps:

  • Put half of the freeze-dried strawberries into a large food processor, cover the opening with a kitchen towel and blend until finely ground. Add the remaining freeze-dried strawberries and blend again until finely ground. Sift through a fine mesh strainer into a medium bowl and discard the seeds. Set aside.
  • Add the confectioners' sugar, lemon zest and 6 cups heavy cream to the bowl of a stand mixer fitted with the whisk attachment. Blend on low at first, then work up to medium-low speed until very soft peaks form.
  • Remove 3 cups of the whipped cream mixture to a medium bowl and add 2 tablespoons of the strawberry powder. Whisk by hand to medium peaks. One by one, dab the bottom of 18 of the cookies with a very small amount of the strawberry whipped cream and arrange in a circle in the center of a large flat serving dish or cake stand. Carefully spread the strawberry whipped cream over the cookies, leaving a slight border. Top the cream with 1 cup of the sliced strawberries.
  • Remove 3 cups of the whipped cream mixture to the same medium bowl and add 6 tablespoons of the strawberry powder. Whisk by hand to medium peaks. Stir in more of the remaining heavy cream if the strawberry whipped cream starts to look too stiff. Arrange 18 cookies on top of the strawberries, then top with the strawberry whipped cream, leaving a slight border. Top the cream with 1 cup of the sliced strawberries.
  • Remove 3 cups of the whipped cream mixture to the same medium bowl and add 10 tablespoons of the strawberry powder. Whisk by hand to medium peaks. Stir in more of the remaining heavy cream if the strawberry whipped cream starts to look too stiff. Arrange 18 cookies on top of the strawberries, then top with the strawberry whipped cream, leaving a slight border. Top the cream with 1 cup of the sliced strawberries.
  • Remove the remaining whipped cream mixture to the same medium bowl and add the remaining strawberry powder. Whisk by hand to medium peaks. Stir in more of the remaining heavy cream if the strawberry whipped cream starts to look too stiff. Arrange the remaining 18 cookies on top of the strawberries, then top with the strawberry whipped cream, leaving a slight border.
  • Cover the icebox cake with plastic wrap and refrigerate until the cookies are softened and the cake is chilled, at least 8 hours and up to overnight. Put the remaining 1 cup sliced strawberries in a storage container and refrigerate until serving.
  • When ready to serve, top the icebox cake with the remaining sliced strawberries.

2-3/4 cups coarsely crushed saltines (about 60 crackers)
1 cup sugar, divided
1/2 cup butter, melted
2 cups sliced fresh or frozen sliced strawberries, thawed
1 teaspoon lemon juice
1 teaspoon grated lemon zest
1/4 cup cold water
1 envelope unflavored gelatin
2 packages (8 ounces each) cream cheese, softened
1/2 cup heavy whipping cream
Lemon slices, optional

Steps:

  • Preheat oven to 350°. Combine crushed crackers and 1/4 cup sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 15-18 minutes. Cool completely on a wire rack., Combine strawberries, 1/2 cup sugar, lemon juice and zest; let stand 10 minutes. Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Transfer strawberry mixture to a food processor or blender; pulse until smooth. Microwave gelatin on high until melted, about 10 seconds; stir into strawberry mixture., Beat cream cheese and remaining sugar until smooth. Gradually beat in cream and strawberry mixture. Transfer filling to crust. Refrigerate, covered, until set, about 2 hours. If desired, top with lemon slices.,

2 ½ cups all-purpose flour
2 teaspoons white sugar
1 teaspoon salt
½ cup cold unsalted butter, cubed
½ cup cold vegetable shortening
½ cup ice cold water
4 cups hulled and quartered fresh strawberries
1 cup white sugar
½ cup lemon juice
1 ½ cups water
1 ⅓ cups white sugar
½ cup cornstarch
¼ teaspoon salt
5 egg yolks
½ cup lemon juice
3 tablespoons butter
2 tablespoons lemon zest
6 egg whites
¼ teaspoon cream of tartar
3 tablespoons white sugar

Steps:

  • Whisk flour, sugar, and salt together in a large mixing bowl for the crust until well combined. Add butter and shortening and mix until pea-sized crumbs form. Drizzle in water 1 tablespoon at a time and gently mix until dough starts to come together. Turn dough onto a lightly floured surface and pack into a ball. Cut dough in half and flatten into 2 discs. Cover each tightly with plastic wrap and refrigerate for at least 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Roll out 1 piece of dough to fit a pie pan, reserving the second piece for another use. Prick the bottom using a fork to prevent bubbles. Line dough with parchment paper or aluminum foil, making sure to cover bottom and sides. Fill crust with pie weights, dried beans, or dry rice to weigh it down.
  • Bake crust in the preheated oven until golden brown and cooked through, 15 to 20 minutes.
  • Remove crust from the oven, leaving oven on. Remove pie weights and liner and return crust to the oven. Bake 15 to 20 minutes more.
  • Meanwhile, combine strawberries, sugar, and lemon juice in a saucepan over medium heat. Cook until strawberries are rendered down, 10 to 20 minutes. Remove from heat.
  • Whisk water, sugar, cornstarch, and salt together in a saucepan until dissolved. Reserve 4 tablespoons of cornstarch slurry in a bowl. Heat the saucepan over high heat until mixture turns clear and thickens, about 5 minutes. Add egg yolks, lemon juice, butter, and lemon zest and whisk until butter is melted, about 3 minutes more. Add reserved slurry 1 tablespoon at a time until filling mixture is thick again.
  • Pour hot filling into baked pie crust. Cover filling with strawberry compote.
  • Place egg whites in a large mixing bowl and beat using an electric mixer on high speed until bubbles start to appear. Add cream of tartar and continue to mix on high speed until soft peaks form. Reduce mixer speed to medium and add sugar slowly until fully integrated. Return mixer to high speed and mix meringue until stiff peaks form.
  • Cover pie with meringue fully to seal in all filling.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Bake pie in the preheated oven for 45 minutes until meringue topping is firm and lightly browned. Remove from oven and use a blow torch to toast the peaks to a dark brown.

2 1/4 cups all-purpose flour
1/2 cup graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon fine salt
1 cup lightly packed light brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
2 teaspoons pure vanilla extract
1 large egg
1 cup milk
Confectioners' sugar, for dusting
One 8-ounce package cream cheese, at room temperature
1 cup marshmallow creme
1/2 cup finely diced strawberries
1/4 cup strawberry jam

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk together the flour, graham cracker crumbs, baking powder, baking soda and salt in a medium bowl. Set aside.
  • Beat together the brown sugar, butter and vanilla in a large bowl with a stand mixer on medium-high speed until light and fluffy, about 2 minutes. Add the egg and beat until combined. Reduce the speed to low and add the dry ingredients in 3 batches, alternating with the milk, beginning and ending with the dry ingredients; beat after each addition until just combined.
  • Scoop tablespoon-mounds of batter and place on the prepared baking sheets about 1 inch apart. You should have 20 cookies per baking sheet.
  • Bake, rotating the baking sheets halfway through, until the tops of the cookies spring back when lightly touched, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely, about 30 minutes. Using a small fine-mesh sieve, dust the tops of the cookies with confectioners' sugar.
  • For the filling: While the cookies cool, whisk the cream cheese and marshmallow creme together in a medium bowl with a handheld mixer until smooth and well combined. Transfer to a piping bag fitted with a medium round tip.
  • Gently fold the strawberries and jam together with a rubber spatula in a medium bowl until combined; set aside.
  • Flip half of the cookies so they are flat-side up; pipe a ring of cream cheese filling around the edge of the cookies to create a "dam," then spoon about 1 teaspoon of the strawberry filling in the center. Sandwich them with the remaining cookies flat-side down. Using a small fine-mesh sieve, dust the tops of the cookies with confectioners' sugar.
