STRAWBERRY OATMEAL PANCAKES
Fluffy, fruity and full of flavor, these Strawberry Oatmeal Pancakes are a fun and easy breakfast that even the pickiest of eaters will love.

Steps:
- In a large bowl stir together the oats and buttermilk. Let sit for 20 minutes.
- Add the eggs, vanilla, and oil to the bowl, and whisk to combine.
- Add the flour, whole wheat flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir together until combined.
- Fold in the strawberries.
- Place a large skillet over medium heat. Lightly spray with cooking spray.
- Add ½ cup of the batter to the skillet and spread it out into a circle shape.
- Cook for 3 minutes on the first side until bubbles come up in the center and burst.
- Flip and cook for an additional 3 minutes or until the bottom is browned.
- Serve immediately with whipped cream and maple syrup.

STRAWBERRY OATMEAL BLENDER PANCAKES

- Pulse the oats in a blender until finely ground.
- Add the milk, yogurt, egg, banana, vanilla extract, baking powder, baking soda, and salt to the blender. Blend until smooth.
- Heat a nonstick pan or griddle over medium heat and coat lightly with olive oil or coconut oil spray. Working in batches, pour the batter into the skillet, about ¼ cup batter per pancake. Sprinkle chopped strawberries on the pancakes. Cook the pancakes until bubbles appear around the edges and the bottoms are nicely browned, 2-3 minutes. Flip and cook another 1-2 minutes until done. Repeat with the remaining batter.
- Serve pancakes immediately or keep warm in a 200°F oven. Serve with a dollop of Greek yogurt, chopped strawberries and a drizzle of maple syrup.

STRAWBERRY OATMEAL PANCAKES

- In a large mixing bowl, combine the oatmeal and the buttermilk and let sit for 20 minutes.
- After the 20 minutes, add the eggs, vanilla and oil and mix well.
- Add the flours, sugar, powder, soda, salt and cinnamon and mix until incorporated.
- Gently mix in the fresh strawberries.
- Heat your griddle to 350 degrees.
- Drop the thick batter (about 3/4 cup size) onto the griddle, kind of spread into a circle shape and cook for 3 minutes, flip and then cook for 2 or 3 more minutes or until batter is not raw.
- * I find that on my non stick griddle, not greasing it works best to not burn the pancakes. I do however spray my spatula with non stick cooking spray for easy flipping ????
- Serve warm with fresh whipped cream, maple syrup or both.
- Makes about 8 larger sized pancakes.
- *To freeze: prepare as usual, let cool completely on a cooling rack, place in freezer friendly plastic gallon sized bags, with parchment paper in between each pancake. To reheat: remove from the freezer and warm in the microwave or oven.

Steps:
- Place oatmeal, milk, egg and brown sugar blend together in a bowl and stir until blended. Allow to rest for 10 minutes.
- Gently stir in flours and baking powder.
- Fold in strawberries.
- Heat lightly oiled griddle and drop pancake batter by 1/2 cup per pancake.
- When bubbles form all over the pancake, flip the pancake and brown other side. Repeat with remaining batter.
- Serve with butter and sugar-free syrup or no sugar added strawberry preserves, if desired.
