3/4 cup bottled strawberry-flavored nonalcoholic margarita drink mix
1 box Betty Crocker™ Super Moist™ white cake mix
Vegetable oil and egg whites called for on cake mix box
1 tablespoon grated lime peel
1 container (8 oz) frozen whipped topping, thawed
Strawberries, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or lightly spray bottom only of 13x9-inch pan. Add enough water to drink mix to measure 1 1/4 cups.
  • In large bowl, beat cake mix, drink mix, oil and egg whites with electric mixer on low speed 2 minutes. Pour into pan. Bake and cool and directed on box for 13x9-inch pan.
  • Gently stir lime peel into whipped topping; spread over top of cake. Garnish with strawberries. Store covered in refrigerator.

This Strawberry Margarita Cake is absolutely amazing. Tasting like a sweet combination of strawberries and lime, with a burst of tequila, this delicious layer cake is going to make you happy. Moist and tender, this lime and strawberry cake is absolutely amazing.

2 boxes white cake mix
8 large Egg whites
2 1/2 cups water
1 cup canola oil
1/2 cup fresh squeezed lime juice
3 large limes (zested)
1 1/2 cup unsalted butter (softened)
4 Tbsp tequila
2 Tbsp triple sec
4 Tbsp strawberry puree (prepared)
9 cups confectioners sugar (sifted)
2 teaspoons lime zest

Steps:

  • Preheat oven to 350 degrees and spray your three (8 inch) round cake pans with cooking spray, set aside.
  • Using a standing mixer, beat together the cake mix, egg whites, water, and canola oil until combined.
  • Whisk in the lime juice, and lime zest until incorporated.
  • Divide the batter evenly between the three prepared cake pans.
  • Bake in the oven for 25-28 minutes or until a toothpick comes out clean.
  • Allow to cool completely.
  • Using a standing mixer, combine all ingredients into the mixer and beat until combined, smooth and stiff with peaks.
  • Scoop 1 Cup of frosting into the piping bag and set aside
  • Using the cake leveler, remove the domes from the cakes to level them out
  • Place one cake round onto the cake board
  • Scoop 1 Cup of frosting onto the cake and smooth evenly
  • Place the second cake round onto the top of the frosting
  • Scoop 1 Cup of frosting onto the second cake layer and smooth evenly
  • Place the last cake round onto the top of the frosting
  • Using the remaining frosting, frost entire cake
  • Pipe dollops of frosting onto the top of the cake
  • Place Lime and strawberry slices onto the frosting
  • Zest a lime all over the top of the cake
  • Place into the fridge for an hour to allow the frosting to harden up a bit
  • Cut into slices and enjoy!

2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
⅔ cup milk
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 ½ cups white sugar
½ cup lard
2 eggs
1 cup pureed fresh strawberries, or more to taste
1 (16 ounce) container vanilla buttercream frosting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans.
  • Combine flour, baking powder, baking soda, and salt in a bowl.
  • Combine milk, vinegar, and vanilla extract in another bowl.
  • Beat sugar and lard together in a mixing bowl using an electric mixer until creamy. Add eggs and beat to combine. Beat in flour mixture alternately with milk mixture and strawberry puree, making 3 dry and 2 wet additions. Beat for 1 minute. Pour evenly into the prepared pans.
  • Drop cake pans 2 to 3 times on the countertop to break any air bubbles.
  • Bake in the preheated oven until a toothpick inserted into the centers of the cakes comes out clean, 30 to 40 minutes. Remove from the oven and let cool on wire racks for 10 minutes. Turn cakes out onto the rack to cool completely, 15 to 30 minutes more.
  • Ice cooled cake using vanilla frosting between the layers and on the top and sides.

This cake was very easy to make. The cake makes a very light and tasty cake.I found the recipes on another web site the other day and made it for my daughters birthday. It was a big hit with everyone. They all wanted the recipe for them selves.

3/4 cup bottled nonalcoholic strawberry margarita mix (I used Daily's)
1 (18 ounce) package white cake mix
1/3 cup vegetable oil
3 egg whites
1 tablespoon lime zest
1 (8 ounce) container frozen whipped topping, thawed
strawberries (for garnish) or lime (for garnish)

Steps:

  • Preheat oven to 350°F.
  • Grease bottom of 13x9x2-inch pan.
  • Add enough water to strawberry margarita mix to measure 1 1/4 cups.
  • Beat cake mix, drink mix, oil, and egg whites in large bowl on low speed 2 minutes.
  • Pour into pan.
  • Bake 28 to 33 minutes or until toothpick comes out clean.
  • Cool completely, about one hour or longer.
  • Gently stir lime peel into whipped topping, then frost the cake.
  • Then garnish with limes or strawberries if you like.
