This pretty strawberry kiwi salad is always a hit when I serve it! The recipe came from a cookbook, but I personalized it. Sometimes just a small change in ingredients can create a big difference. -Laura Pounds, Andover, Kansas

1/4 cup canola oil
1/4 cup raspberry vinegar
1/4 teaspoon Worcestershire sauce
1/3 cup sugar
1/4 teaspoon paprika
2 green onions, chopped
2 tablespoons sesame seeds, toasted
1 tablespoon poppy seeds
12 cups torn fresh spinach (about 9 ounces)
2 pints fresh strawberries, halved
4 kiwifruit, peeled and sliced

Steps:

  • Place the first five ingredients in a blender; cover and process 30 seconds or until blended. Transfer to a small bowl; stir in green onions, sesame seeds and poppy seeds., In a large bowl, combine spinach, strawberries and kiwi. Drizzle with dressing; toss to coat.

Strawberry Dressing:
1/2 cup strawberry jam
1/4 cup white wine vinegar
1/3 cup olive oil
1 tsp seasoned lemon pepper
1 1/2 tsp seasoned salt
Salad
8 cups torn spinach
1/2 cup chopped walnuts (I used almonds)
2 cups sliced strawberries
2 kiwis, peeled quartered and sliced

Steps:

  • In a small bowl, combine jam, vinegar and oil. Whisk until smooth. Stir in lemon pepper and seasoned salt. Mix until well blended. Cover and refrigerate. Shake before serving. Makes one cup.
  • Place spinach in a large salad bowl. Arrange walnuts, strawberries and kiwi over spinach. Drizzle dressing over salad.

2 ½ tablespoons raspberry jam
⅓ cup vegetable oil
8 cups spinach, rinsed and torn into bite-size pieces
½ cup chopped walnuts
8 strawberries, quartered
2 kiwis, peeled and sliced

Steps:

  • Mix together raspberry vinegar, raspberry jam, and vegetable oil in a small container.
  • Combine spinach, nuts, strawberries, and kiwi in a salad bowl. Toss with raspberry dressing.

Someone brought this salad to a pot luck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

2 tablespoons sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
½ cup olive oil
¼ cup distilled white vinegar
¼ teaspoon paprika
¼ teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
¼ cup almonds, blanched and slivered

Steps:

  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
  • In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

2 tablespoons white wine vinegar
2 tablespoons finely chopped fresh basil leaves
1 tablespoon olive oil
1 teaspoon sugar
Kosher salt and freshly ground black pepper
5 ounces baby Spinach, washed and dried
1/4 cup crumbled goat cheese
1/4 cup slivered almonds

Steps:

  • For the dressing:
  • Add 3/4 cup strawberries, white wine vinegar, basil, olive oil, sugar, salt, and pepper to a food processor or blender and puree until smooth.
  • For the salad:

2 tablespoons vegetable oil
2 tablespoons honey
2 tablespoons orange juice
1 tablespoon cider vinegar or white vinegar
1 teaspoon poppy seed, if desired
2 teaspoons Dijon mustard
1 small jicama
2 kiwifruit
1/2 pint (1 cup) fresh strawberries
8 cups ready-to-eat spinach (from 9- or 10-oz bag)

Steps:

  • In a tightly covered jar or container, shake all the dressing ingredients.
  • Peel the jicama, removing the brown skin and a thin layer of the flesh just under the skin. The skin can sometimes be slightly tough. Cut about half of the jicama into about 1x 1/4-inch sticks to measure about 3/4 cup. Wrap remaining jicama and refrigerate for another use.
  • Peel the kiwifruit. Cut lengthwise in half, then cut into slices. Rinse the strawberries with cool water and pat dry. Remove the leaves and cut the berries lengthwise into slices.
  • Remove and discard the stems from the spinach leaves. Rinse the leaves in cool water. Shake off excess water and blot to dry with paper towels. Tear any large leaves into bite-size pieces.
  • In a large salad bowl, place the spinach, strawberries, jicama sticks and kiwifruit slices. Shake the dressing again to mix ingredients. Pour the dressing over the salad ingredients, and toss with 2 large spoons or salad tongs. To keep salad crisp, serve immediately.

1/2 cup vegetable oil
1/4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
1/4-1/3 cup white sugar
1 pinch paprika
1 -2 tablespoon poppy seed

Steps:

  • In a large bowl toss the spinach with the strawberries and toasted almonds.
  • In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
  • Sprinkle the feta over the top of salad.
  • Serve immediately.
