STRAWBERRY CINNAMON OATMEAL

This is just a little something I concocted this morning in lieu of how chilly it is outside (yes yes I know 50 degrees isn't very cold, but it is for florida). It combines my two favorite things--cinnamon and strawberries!

Number Of Ingredients 5

1/2 cup oats
3/4 cup water
1 teaspoon Equal sugar substitute
1/2 cup strawberry, chopped
1 tablespoon cinnamon

Steps:

  • Combine the oats and water in a bowl, stir and add about half the Equal and cinnamon.
  • Microwave for 1 minute.
  • Stir, then add in the strawberries and stir again.
  • Microwave for 1 more minute.
  • Stir again and add in the remainder of the Equal and the cinnamon.
  • Microwave again for 1 minute. (It should be done at this point, but depending on your microwave or how gooey you like your oatmeal you can heat it longer).
  • Enjoy!

½ cup strawberry yogurt fruit spread
½ cup margarine, softened
¾ cup white sugar
¾ cup brown sugar
1 egg
1 teaspoon vanilla extract
½ cup olive oil
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
3 ¼ cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the strawberry spread, margarine, white sugar and brown sugar until smooth. Beat in the egg and vanilla, then stir in the olive oil. Combine the flour, baking soda and cinnamon; stir into the creamed mixture. Mix in the oats until well blended. Drop dough by heaping spoonfuls 2 inches apart onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven, or until the tops are lightly browned. Let cookies stand for 1 minute on the baking sheet before removing to wire racks to cool completely.

  • Preheat oven to 350 degrees Fahrenheit. Grease a 9x13 baking pan or a 12-cup muffin tin with non-stick cooking spray or line baking sheet with silicone liners. Set aside.
  • In a large bowl, whisk together the eggs and milk. Add the maple syrup, coconut oil, vanilla, baking powder, cinnamon, and salt. Stir in the oats and the strawberries.
  • Spread batter into a casserole dish or divide batter evenly into prepared muffin tin or silicone muffin liners. Sprinkle with additional strawberries, if desired.
  • Bake in preheated oven until just set and no longer jiggly - about 30-35 minutes in a baking pan or 20-25 minutes in muffin tins.

  • Pour the dry ingredients into the wet mixture and stir to combine . The batter will be very wet. Fold in the diced strawberries and almonds, then pour into the prepared baking pan.
  • Bake for 35 minutes or until the bars are thickened and golden and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.
