Steps:
- Stir 1 cup water and sugar in small saucepan over medium heat until sugar dissolves. Bring to boil. Chill sugar syrup until cold, about 1 hour.
- Combine sliced strawberries, fresh orange juice and orange peel in processor. Puree until smooth. With processor running, gradually add chilled sugar syrup and process until well blended. Transfer sorbet mixture to 13x9x2-inch glass dish. Freeze just until sorbet is firm, stirring every 30 minutes, about 3 hours total. Transfer frozen sorbet to processor. Puree until smooth. Spoon into dessert glasses and serve immediately or freeze in covered container up to 3 days.
STRAWBERRY AND ORANGE CAVA SORBET
This recipe is from the May 1992 issue of Bon Appétit. Fruity and refreshing! Cooking time is freezing time in the ice cream maker. Zaar wouldn't let me enter Brut Cava as an ingredient so its listed as sparkling Spanish wine. Posted for Spain - ZWT #5.

- Puree strawberries in blender. Add to syrup.

- Process strawberry mixture in ice cream maker according to manufacturer's instructions.
- Transfer sorbet to covered container and freeze until ready to serve.
- Scoop sorbet into glasses. Top with fresh berries and serve.

STRAWBERRY ORANGE SORBET
Got this one from "The Ice Cream & Frozen Yogurt Cookbook" by Mable and Gar Hoffman. This is what happens when you buy strawberries from Costco -- you've got to come up with a LOT of recipes to use 'em up. This was a delightful sorbet, made with fresh Valencia orange juice and extremely ripe strawberries. I varied the original recipe a bit by throwing in a quarter (well, closer to a half) cup of orange-flavored liqueur at the end of the freeze cycle.

- Combine water and sugar in a small saucepan. Stir until sugar dissolves. Bring to a boil; boil gently for five minutes, then set aside to cool.
- Remove caps from strawberries, then puree in a blender or food processor.
- Combine pureed strawberries, cooled syrup, and orange juice; stir until well blended.
- Refrigerate for a minimum of four hours,or overnight if possible.
- Transfer to ice cream maker and freeze according to manufacturer's directions. Optional: About five minutes before sorbet is finished, add 1/4 - 1/2 cup of Grand Marnier, Triple Sec, or other orange-flavored liqueur.

Steps:
- Pour water and sugar into a medium saucepan over medium heat to make simple syrup. Stir occasionally until sugar dissolves. Bring to a boil for 2 to 4 minutes. Remove from heat and let cool, about 30 minutes.
- Add strawberries and sugar syrup to a blender and blend until smooth. Leave a few chunks of strawberries if you like. Add orange juice, lemon extract, and salt and give it a swirl. Refrigerate for 1 to 2 hours; this helps it freeze in the ice cream maker quickly as it has a lot of water.
- Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze for 8 hours to overnight.
- Scoop sorbet and serve.

- Combine sugar and water in a heavy saucepan; cook over medium heat, stirring constantly, until sugar dissolves.
- Remove sugar syrup from heat; cool.
- Place thawed strawberries in container of an electric blender or food processor; process until smooth.
- Pour through a wire mesh strainer into a 8-inch square pan, pressing with back of spoon against the sides of the strainer to squeeze out juice.
- Discard pulp and seeds.
- Stir lemon juice, sugar syrup, and champagne into strawberry puree.
- Cover and freeze at least 4 hours.
- Position knife blade in food processor bowl; add frozen mixture, and process until smooth.
- Return to pan and freeze until firm.
- Repeat processing procedure, and return mixture to pan; freeze until firm.
- Spoon into glasses, and serve with fresh strawberries.
