CHOCOLATE STRAWBERRY CREPES WITH CARAMEL SAUCE



Chocolate Strawberry Crepes with Caramel Sauce image

1 1/2 cups fresh sliced strawberries
1 tablespoon sugar, or more if needed
2 tablespoons orange liqueur (recommended: Grand Marnier)
6 French style crepes (recommended: Frieda's)
6 tablespoons chocolate hazelnut spread (recommended: Nutella)
6 tablespoons whipped topping (recommended: Cool Whip)
Caramel sauce (recommended: Smucker's)
Cocoa powder, for dusting (recommended: Hershey's)

Steps:

  • In a medium bowl, macerate strawberries, sugar, and orange liqueur for 30 to 60 seconds.
  • Lay 1 crepe flat on serving plate and lightly spread 1 tablespoon chocolate spread, 1 tablespoon whipped topping, and 1/4 cup strawberry mixture. Roll crepe or fold in quarters. Drizzle with caramel sauce.
  • Serve immediately with a dusting of cocoa powder.

1/4 cup sugar
1/2 cup heavy cream
2 oz fine-quality bittersweet chocolate (not unsweetened; no more than 60% cacao if labeled), coarsely chopped
1/8 teaspoon salt
1 tablespoon unsalted butter
1 lb strawberries, halved if large
Accompaniment: lightly sweetened whipped cream

Steps:

  • Cook sugar in a dry 1-quart heavy saucepan over moderately high heat, undisturbed, until it begins to melt, about 2 minutes. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel, 1 to 2 minutes.
  • Remove from heat and carefully pour in cream (mixture will steam and bubble vigorously). Once bubbles begin to subside, return pan to moderate heat and cook, stirring constantly, until caramel is dissolved.
  • Remove from heat, then add chocolate and salt and stir until chocolate is melted. Add butter and stir until just melted.
  • Cool sauce slightly, then drizzle over strawberries.

This is an utterly simple dessert that is a refreshing finish to any meal. Be sure to use bright red ripe berries.

1 1/2 pints sweet ripe strawberries
1 1/2 cups fresh orange juice (from 3 large oranges)
3 tablespoons sugar, or to taste

Steps:

  • Wash and hull: 1 1/2 pints sweet ripe strawberries.
  • Cut the berries in half or in quarters if they are large.
  • Stir together: 1 1/2 cups fresh orange juice (from 3 large oranges), 3 tablespoons sugar, or to taste.
  • Pour the juice over the berries and let them soak for at least 30 minutes. Serve cold.
  • Substitute a fruity red wine for the orange juice and add a squeeze of lemon juice.
  • Add the segments of 1 or 2 oranges to the sliced strawberries.

One way to extend the life of fresh fruits is to incorporate them into caramel sauces. Any caramel sauce base can be enlivened by ripe or slightly overripe fruit, such as bananas, strawberries and stone fruit. This fruit caramel sauce is an excellent way to add a deeper sweetness and a hint of the season to your favorite desserts.

1 cup granulated sugar
4 ounces fresh or frozen fruit, peeled if necessary, such as bananas, peaches or berries, chopped into 1/4-inch pieces (3/4 cup)
1/2 teaspoon kosher salt (Diamond Crystal)
1/4 cup heavy cream

Steps:

  • Heat a large skillet over medium heat. Add the sugar and cook, stirring frequently, until it all melts into a light gold syrup, 5 to 6 minutes. Continue to cook to a golden brown color, about 1 minute more. Carefully add the fruit all at once and reduce the heat to medium-low. The hot syrup may bubble and become foamy.
  • Continue to cook, stirring constantly until any hard clumps of caramel dissolve and the fruit pieces soften and break down, about 4 minutes. Stir in the salt and heavy cream until there are no white streaks then remove from heat. Transfer to a bowl and use immediately, or cool and refrigerate in an airtight container for up to 1 week.
  • Serve warm as a topping for ice cream, pies or tarts, or use as a caramel filling for layered cake or trifles. If cold, reheat gently in a small saucepan over low heat.

1 cup sugar
1/2 cup heavy cream
1 teaspoon freshly squeezed lemon juice
1 tablespoon unsalted butter
4 navel oranges

Steps:

  • Combine the sugar and 1/4 cup water in a small high-sided saucepan. Using your finger, stir to create a sandy mixture, being careful not to get sugar on the side of the pan. Set pan over medium heat. Without stirring, cook mixture until dark amber in color, swirling pan carefully while cooking to keep the color uniform, about 10 minutes.
  • Reduce heat to low. Slowly add the cream, and stir with a wooden spoon to combine. Remove pan from heat, add the lemon juice and butter, and stir until well blended, about 2 minutes. Set aside.
  • Using a very sharp knife, cut top and bottom from oranges. Carefully slice away peel and white pith. Place oranges in serving bowls, and pour at least 3 tablespoons reserved caramel sauce over each. The unused caramel can be stored in an airtight container and refrigerated for up to 1 week.

  • Heat sugar in a dry 10-inch heavy skillet over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt, then stop stirring and cook, swirling skillet occasionally so sugar melts evenly, until it is dark amber. Remove from heat and immediately add orange-juice mixture. Boil, stirring, until caramel has dissolved and sauce is slightly thickened, about 2 minutes.
  • Add strawberries and cook, stirring, until heated through, about 1 minute. Serve immediately.
