EASY STRAWBERRY CREAM CHEESE DANISH
Deceptively easy to make, this strawberry cream cheese danish is perfect for entertaining and takes just a few minutes to make!

Steps:
- Preheat oven to 400 degrees.
- Spray a baking sheet with nonstick spray.
- In a medium bowl mix cream cheese, powdered sugar and vanilla until thoroughly blended. Set aside.
- Lay puff pastry sheet on the baking sheet, use a knife to cut 1" slices into the outer thirds of the dough.
- Spread cream cheese mixture onto intact middle section of the dough. Top with strawberry preserves.
- Starting at the top fold the dough strips across the middle section at a downward angle, alternating sides to form a braid pattern.
- Beat together egg and water and use a pastry brush (affiliate link) to coat the top of the danish.
- Bake for 20 minutes or until golden brown.
- Serve warm or cold. Refrigerate up to three days.

STRAWBERRIES AND CREAM DANISH

- Preheat oven to 400°F.
- Cover a baking sheet with parchment paper or baking mat.
- Unfold the puff pastry sheets on a lightly floured surface. Using about a 3-inch circular shape, either a biscuit cutter or the rim of a drinking glass, cut 4 circles out of each pastry sheet.
- Using a smaller 2-inch circular shape or a knife, lightly score a circle about ½ inch from the edge of each pastry circle. Use a fork to make pricks throughout the inside circle, piercing through the pastry so it doesn't rise while baking.
- In the bowl of a mixer fitted with the paddle attachment, beat the cream cheese, granulated sugar and vanilla until smooth and creamy. Spoon the cream cheese mixture inside the smaller circle of the pastry.
- Whisk the egg, then brush onto the edges of the Danish. Sprinkle with coarse sugar.
- Bake for 15 to 17 minutes or until edges are golden brown and puffed up. Transfer to a serving platter and top with sliced fresh strawberries.
- Make glaze by mixing powdered sugar and milk together until thin glaze forms. Drizzle over Danish. Serve warm or at room temperature. Refrigerate any leftovers.

- Place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and cream them together on low speed until smooth. With the mixer still on low, add the egg yolks, ricotta, vanilla, salt, and mix until just combined. Don’t whip!
- Lightly flour a rolling pin and your working surface. Unfold one sheet of puff pastry and gently roll it out until it is a 10 x 10 inch square. Cut the sheet into 9 squares. Place squares on one sheet pan. Create an inner square on the inside of each square by lightly pressing a knife about 1/2 inch from the edge. Repeat with second sheet of puff pastry.
- Place one heaping teaspoon of cream cheese into the center of each square. Put one strawberry half in the center of cream cheese within each pastry, cut side down. Note: if not putting strawberry, add 1/2 teaspoon of more cream cheese filling.
