These soft and chewy strawberry oatmeal cookies are made with 4 ingredients and take 12 minutes! Healthy enough for breakfast, they are made with no eggs and no refined sugar, but you'd never tell. Vegan, Gluten Free, Dairy Free.

2 cups rolled oats (gluten free, if needed)
2 large bananas (mashed)
1/4 cup strawberries (chopped)
1/2 cup almond butter (can sub for any nut or seed butter of choice)
1/4 cup chocolate chips of choice (optional)

Steps:

  • Preheat the oven to 175C/350F. Line a large tray with parchment paper or prepare a Silpat cookie sheet. Set aside.
  • In a large mixing bowl, combine all your ingredients, except for your chocolate chips, and mix well. Fold through your chocolate chips.
  • Form 16 small balls of dough and place each one on the lined tray/cookie sheet. Press each ball into a cookie shape. Bake for 12-15 minutes, or until golden on the edges.
  • Remove from the oven and allow cooling on the tray/sheet before transferring to a wire rack to cool completely.

2 cups unbleached all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup unsalted butter
3/4 cup sugar substitute (The Splenda Baker's Blend is ideal. You can substitute it for 1 1/2 cups granulated sugar-substitute)
2 eggs
1 teaspoon vanilla extract
1 cup fresh strawberries, chopped
1 cup semi-sweet chocolate chips (Can be substituted with bittersweet or milk chocolate)
4 tablespoons unsalted butter
2 tablespoons heavy cream

Steps:

  • For the cookies:.
  • Using your electric mixer, cream together the butter and Splenda Baking Blend until smooth.
  • Gradually beat in the eggs one at a time. Then , add the vanilla extract and mix until completely blended.
  • Slowly add the dry ingredients and mix well. Then, fold in the chopped strawberries.
  • Refrigerate dough for approximately 1 hour.
  • Preheat oven to 375 degrees, and line 2 baking sheets with parchment paper.
  • Scoop 1" to 2"in mounds of dough onto the baking sheets. Place in oven to bake for 15-20 minutes or until golden brown.
  • Place cookies on wire rack and completely cool.
  • For the chocolate:.
  • Place chocolate chips and butter in a microwave-safe bowl and microwave for 30 to 40 seconds
  • Begin stirring melted chocolate and butter, and gradually add the heavy cream until completely blended.
  • Dip cooled cookies halfway into chocolate and place on a parchment paper-lined baking sheet.
  • Chill in freezer until chocolate say set (approximately 10-15 minutes).

250g unsalted butter, softened
200g light brown soft sugar
100g golden caster sugar
1 medium egg, plus 1 yolk (freeze the leftover white for another recipe)
1 tsp almond extract
1 tsp vanilla extract
400g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
½ tsp fine salt
150g milk chocolate, chopped, or chocolate chips
250g seedless raspberry jam
150g white chocolate, finely grated

Steps:

  • Put the butter and both sugars in a large bowl and whisk using electric beaters until light and fluffy. Add the whole egg and egg yolk, then mix thoroughly, scraping down the sides of the bowl to make sure everything is combined. Add the almond and vanilla extracts, and mix to combine.
  • Tip in the flour, baking powder, bicarbonate and salt, and mix until it forms a dough. Keep mixing until you don't have any more pockets of flour. Knead in the chocolate chips.
  • Heat the oven to 180C/160C fan/gas 4. Divide the mixture into 26-28 equal balls of around 40g each. Arrange on a large baking tray and leave to chill for at least 1 hr in the fridge. Can be made a day ahead and chilled overnight. Line two baking trays with baking parchment and arrange the cookies on them, leaving 5cm space between each so they can spread. Bake one tray of cookies on the top shelf for about 15-17 mins until crisp and golden, then remove from the oven and bake the second tray. Leave to cool completely on the trays.
  • To make the filling, put the jam in a bowl with the finely grated white chocolate and mix well to combine.
  • Once the cookies are cool, you're ready to sandwich them. Top the flat side of each with a thin layer of the jam filling, then sandwich with another. You should have 13-14 cookie sandwiches in total. If you have time, chill for a further 30 mins for the filling to set, then serve.

2 ounces freeze-dried strawberries
2 ¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
1 cup unsalted butter, softened
1 cup brown sugar
½ cup white sugar
2 large eggs
2 teaspoons vanilla extract
¾ teaspoon strawberry extract
2 cups white chocolate chips

Steps:

  • Place a rack in the center of the oven and preheat to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper. Crush freeze-dried strawberries to a fine consistency.
  • Sift flour, baking soda, salt, and baking powder together in a bowl.
  • Beat butter, brown sugar, and white sugar together in a larger mixing bowl until fluffy. Add eggs, crushed strawberries, vanilla extract, and strawberry extract. Mix in dry ingredients in three additions, adding white chocolate chips with the last addition.
  • Scoop cookies with a 1 1/2 tablespoon-sized scoop and place onto the prepared baking sheets, 2 inches apart.
  • Bake in the preheated oven until lightly golden, about 14 minutes. Remove from the oven and let cool on the cookie sheets for 3 to 5 minutes before removing to wire racks to cool completely.
