LIGHT CINNAMON COFFEE CAKE

This moist coffee cake uses whole wheat flour and little oil, but you can't tell that its a healthier version!

1/2 cup nonfat milk
1/4 cup canola oil
1/4 cup egg substitute or 1 whole egg
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup packed brown sugar
1/2 cup chopped walnuts
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon butter, melted

Steps:

  • Preheat oven to 375 and grease a 8 inch or 9 inch square baking pan with nonstick cooking spray.
  • In a bowl, whisk together the milk, oil and egg or egg substitute.
  • In another bowl, stir together both flours, white sugar, baking powder and salt.
  • Add dry mixture to milk mixture and stir until just combined.
  • Pour into greased pan.
  • Mix together all topping ingredients and sprinkle evenly over cake batter.
  • Bake for 18-28 minutes, depending on size of pan used. Check with knife near center to see if comes out clean.
  • Cool on wire racks and store in airtight container.
  • NOTE: I used a 9 inch flexible baking mold and it was finished in 18 minutes. It will take longer baking time if using 8 inch pan.

1 (16 1/2 ounce) box yellow cake mix
4 eggs
1/2 cup water
1/2 cup oil
1 (3 1/2 ounce) box instant vanilla pudding
1 cup sour cream
1 cup brown sugar
1/2 cup white sugar
1 teaspoon cinnamon
4 tablespoons butter or 4 tablespoons margarine, melted
3 tablespoons flour
1/2 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Mix together, cake mix, eggs, pudding mix, oil, water, & sour cream.
  • In a separate bowl, mix together, with a fork, the brown sugar, sugar, flour, melted butter, & optional, nuts.
  • In a greased & floured 9x13 inch cake pan, place 1/2 of cake batter. Sprinkle, on top, 1/2 of cinnamon sugar mixture. Layer the rest of the batter & then the rest of the cinnamon sugar topping. You can take a butter knife & cut through the batter, length wise & width wise, to help distribute the topping mixture. This can, also, be baked in a Bundt Pan, too, ( though it may need to bake a little bit longer).
  • Bake for 35 minutes or until top springs back to touch or toothpick comes out clean.

2 1/2 cups all-purpose flour
1 cup firmly packed brown sugar
3/4 cup sugar
3/4 cup corn oil
2 1/2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
3/4 cup chopped walnuts
3/4 teaspoon cinnamon
1 cup buttermilk
1 egg, lightly beaten
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 350F.
  • Butter a 13 X 9 inch pyrex baking dish.
  • Combine flour, sugars, oil, 2 ½ tsps cinnamon, ginger and salt in large bowl and blend well.
  • Transfer ½ cup of this mixture to a small bowl.
  • Stir in walnuts and ¾ tsp cinnamon and set aside.
  • Add buttermilk, egg, baking powder and soda to remaining mixture and blend thoroughly.
  • Turn batter out into prepared pan, spreading evenly.
  • Sprinkle with nut mixture.
  • Bake about 35 minutes.
  • Serve warm or let cool.

Ah its a beautiful morning and it can't go better without a cup of coffee and a delicious slice of coffee cake, and did I mention its in the microwave? Yep, this recipe is so easy to make and its really delicious.

1 tablespoon butter (softened)
2 tablespoons sugar
2 tablespoons whisked eggs
2 tablespoons cream cheese
1/4 cup flour
1/8 teaspoon baking powder
1 tablespoon butter
2 tablespoons flour
1 tablespoon brown sugar
1 teaspoon ground cinnamon

Steps:

  • In a mug, place a tablespoon of butter and soften it in the microwave for 10-15 seconds. Then, go ahead and add 2 tablespoons of sugar and whisk until light and fluffy. Add 2 tablespoons of whisked egg and mix it up until well blended. Then, take 2 tablespoons of cream cheese and mix them until most of the cream cheese has been mixed in (its okay if theres some chunks). Finally, add 1/4 cup of flour and 1/8 teaspoon of baking soda and mix it all up until you get a cake batter consistency.
  • For the crumb topping in another bowl, take a tablespoon of butter, 2 tablespoons flour. 1 tablespoon brown sugar and a teaspoon of cinnamon and mix it all up until you get crumbs. If its not completely crumbed place a splash of cinnamon.
  • Then pop it in the microwave for 1 minute, allow it to cool for another minute and enjoy.

  • Preheat oven to 350°F.
  • Grease round cake pan.
  • Combine sugar and cinnamon; set aside.
  • Measure all remaining dry ingredients into a bowl and mix well.

This is a recipe I modified from Martha Stewart's website. It's very tasty. Can be made in a round cake or 9x9" brownie pan or I use a 9 serving mini loaf pan to make little individual cakes. On the sugar, make sure what you use is vegan. I use organic evaporated cane juice sugar. Regular sugar is often processed with animal derivatives.

2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine
2 tablespoons sugar
1 teaspoon cinnamon
1/4 cup soy yogurt
3/4 cup milk
2 tablespoons margarine

Steps:

  • Preheat oven to 350 degrees and lightly grease a round cake pan, 9x9" brownie pan or mini loaf pan.
  • Mix together the flour, 3/4 cup sugar, baking powder and salt.
  • Cut the margarine into small chunks and add to the mix. Mix for a couple of minutes if using a mixer. This is the "dry ingredient mix".
  • Remove 1/2 cup of the dry ingredient mix and put in a separate bowl. Add the cinnamon and 2 tablespoons of sugar and mix together well. This is the "topping".
  • To the remaining dry ingredient mix, add the soy yogurt and milk until the consistency is smooth. Put into a round cake pan, 9x9 brownie pan, or spread evenly in a mini loaf pan (I use an ice cream scoop for even serving sizes).
  • Spread the topping evenly onto the batter. Melt the 2 tablespoons of margarine and drizzle over the top.
  • Bake at 350 for 35 minutes, or until a toothpick entered into the center of the coffee cake comes out clean.
