- Combine broth, soy sauce, sugar, chili sauce, lime juice, and ginger and boil 5 minutes. Meanwhile, toss chicken with cornstarch until completely coated. Add chicken and shiitakes to broth and simmer 15 minutes. Remove the pan from the heat and stir in snap peas, red pepper, zest, and cilantro. Let soup stand 2 to 3 minutes before serving.

- Preheat oven to 375 degrees F. Take your napa cabbage half, and cut it in half again lengthwise. Place the cabbage on a sheet pan and drizzle lightly with oil. Roast for 25 minutes.
- Meanwhile, in a large stockpot, heat 1 tablespoon oil over medium heat. Add the ginger and garlic and cook for 2 minutes, until fragrant but not browned. Add the fermented bean curd and cook for another minute. Then add the onion, carrots, scallions, daikon, kelp, dried shiitake mushrooms, and water. When the napa cabbage is done roasting, add it to the pot as well.
- Bring to a boil, turn the heat down to low, and simmer with the lid on for 4 hours. Strain the stock, and season with salt to taste.

- Place chicken carcasses into a large stock pot add the water and bring to a simmer for 30 minutes. Cover the lid to allow partial escape of the steam either through holes already in your lid or by leaving the lid slightly displaced.
- Turn off the heat and wait 5 minutes before skimming any scum, foam or froth that may have accumulated on the surface.

- Spread stock bones and meat in a large roasting pan. Spray a thin layer of oil onto the bones and meat. Roast on the bottom rack until the bones and meat turn an even golden brown color, about 40 minutes. Flip once, halfway through, and check on the bones frequently. If a higher part of the bones cooks too fast, cover with aluminium foil to avoid burning.
- Transfer bones and meat to a large stock pot (I used a 16-quart pot). Pour a cup of hot water into the roasting pan and scrape the brown bits off the pan. Pour everything into the stock pot.
- Add cold water to the stock pot to cover the ingredients by one inch. Turn on high heat. Add green onion, ginger, bay leaves, Japanese sake, and aromatics to the pot. Cook until bringing to a boil, stir a few times, and turn to low heat. Cook the broth at a gentle simmer. Cover and cook for 4 to 6 hours (remove the beef during this process), until the all the collagen on the bones has fallen off and the marrow is mostly dissolved. During the cooking, check on the stock and skim the brown foam from the top with a large spoon.
