SAUSAGE BREAKFAST WRAPS
"I love breakfast burritos--but they're typically high in fat and cholesterol. So I created my own healthier version," says Ed Rysdyk Jr., Wyoming, Michigan. "Since my wraps freeze beautifully, they make an anytime meal. Let the sausage mixture cool for about an hour before assembling and freezing the wraps."

- In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture., Bake, uncovered, at 350° for 30-35 minutes or until set. Break up sausage mixture with a spoon. Place 2/3 cup down the center of each tortilla; top with salsa. Fold one end over sausage mixture, then fold two sides over.

- Preheat grill to medium heat.
- Lightly drain tomatoes of excess oil. Coarsely chop and add tomatoes, cheese, onion, basil and garlic together in a small bowl. Stir to combine and set aside.
- Grill sausages to until cooked through, about 10-15 minutes, turning once or twice. Keep warm.
- Place one sausage on a tortilla. Place 1/4 of the tomato mixture on top. Roll up the tortilla and secure with toothpicks. Repeat with remaining sausages. Grill 2-3 minutes or until flatbread is crispy, turning once. Serve warm.

STICKY SAUSAGE WRAPS

- Combine the mustard, ketchup and sugar. Preheat the barbecue. Toss the sausages on and sizzle for about 15 minutes, or until they are crispy, but not quite cooked through. Brush the sticky sauce all over the sausages and cook them for another 5 minutes, basting regularly.
- Heat the tortillas on the barbecue for 30 seconds each side. Roll the sticky sausages in the wraps, along with some baby gem leaves. Finish with a dollop of corn relish.

SAUSAGES WITH STICKY ONION GRAVY

- Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
- For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

- Heat oven to 190C/170C fan/gas 5. Mix the hoisin sauce, honey, mustard and sesame seeds. Add the sausages, tossing well to coat them.
- Line a baking tray with foil and arrange the sausages on it, spaced apart. Smooth any remaining glaze on top of the sausages to make them extra sticky. Bake for 20-25 mins until golden. Pack in a container, or wrap in foil, with some cocktail sticks.
