OLD FASHIONED GINGERBREAD CAKE



Old Fashioned Gingerbread Cake image

This is the easiest gingerbread cake you'll ever make and the best tasting too. The texture is excellent. A family favourite.

Provided by Crosby's Molasses

Number Of Ingredients 15

2 cups flour
1 ½ teaspoon baking soda
½ teaspoon salt
½ cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
½ cup soft butter
¾ cup Crosby's Fancy Molasses
1 egg
1 cup boiling water
1/2 cup butter
1/2 cup lightly packed brown sugar
3 Tbsp. Crosby's Fancy Molasses
1 cup plus 3 Tbsp. 35% cream (whipping cream)
1 tsp. pure vanilla

Steps:

  • Preheat oven to 350 F
  • Grease and flour an 8"x 8" square pan (or line the pan with parchment paper.) *
  • Sift together dry ingredients in a large bowl.
  • Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe...)
  • Add the boiling water.
  • Beat for another two minutes and turn into prepared pan.
  • Bake 50-55 minutes, or until cake springs back when lightly touched.

This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

½ cup white sugar
½ cup butter
1 egg
1 cup molasses
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

I remember coming home after school to the wonderful aroma of spices, my Mom made this Gingerbread as an after school snack. Today, this is one of my favorites.

1/2 c shortening
1/2 c sugar
2 eggs, beaten
2 1/2 c sifted all purpose flour
1 1/2 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 tsp ginger
1 tsp cinnamon
1/4 tsp cloves
1 c steen's syrup
1 c boiling water

Steps:

  • 1. Cream the shortening and sugar until fluffy.
  • 2. Add eggs, sifted all purpose flour, baking powder, soda, salt, ginger, cinnamon and cloves alternately with the Steen Syrup and water.
  • 3. Beat enough to mix thoroughly, pour into a well-greased 9x13 pan and bake at 350 degrees for 40 to 45 minutes

I adapted this recipe come from Nigella Lawson's Cookbook, How To Be A Domestic Godess. It is rich, moist and quite delicious! I have made a few changes to suit my personal preferences.

1/2 cup unsalted butter, plus
2 tablespoons unsalted butter
1/2 cup brown sugar, plus
2 tablespoons brown sugar
3/4 cup real maple syrup, plus
1 tablespoon real maple syrup
3/4 cup molasses, plus
1 tablespoon molasses
2 teaspoons fresh ginger, finely grated (or more to taste)
1 teaspoon ground cinnamon
1 cup milk
2 tablespoons milk
2 large eggs, beaten to mix
1 teaspoon baking soda, dissolved in 2 tablespoons warm water
2 cups all-purpose flour
aluminum foil (grease a 12x8x2 roasting pan or spray with cooking spray) or parchment paper (grease a 12x8x2 roasting pan or spray with cooking spray)
1 tablespoon lemon juice
1/2 cup confectioners' sugar, plus
2 tablespoons confectioners' sugar, sifted
1 tablespoon warm milk
1/2 teaspoon lemon extract

Steps:

  • Preheat the oven to 325°F.
  • In a saucepan, melt the butter along with the sugar, syrup, molasses, ginger, and cinnamon. Off the heat, add the milk, eggs, and baking soda in its water.
  • Measure the flour out into a bowl and pour in the liquid ingredients, beating until very well mixed (it will be a very liquid batter). Pour it into the pan and bake for 3/4 - 1 hour until risen and firm.
  • Be careful not to overcook it, as it is nicer a little stickier, and anyway it will carry on cooking as it cools.
  • And when it is cool, begin the frosting. Whisk the lemon juice into the confectioners' sugar first, then gradually add extract and milk, as needed to make desired consistency.
  • Spread over the cooled gingerbread with a palette knife, and leave to set before cutting.

Laurie Colwin's Gingerbread image

The writer Laurie Colwin had an obsession with gingerbread, publishing a few different essays and recipes exploring its charms. In the essay that precedes this moist, cakelike rendition, from her book "Home Cooking," she writes that it is "home food" - not fancy restaurant food, that is, but soothing cold-weather food that is simple to make, ideal for an afternoon spent holed up indoors. The essay is also a paean to Steen's cane syrup, from Louisiana, which comes in cheerful yellow cans. Steen's is easy to find online, if not at your local supermarket, but the recipe does not suffer if you use another brand of light molasses instead. Serve the cake plain with whipped cream, or with fruit and a dollop of crème fraîche, or glazed with lemon icing, as Ms. Colwin often did. (The New York Times)

4 ounces (1 stick) unsalted butter, additional for buttering pan
1/2 cup light or dark brown sugar
1/2 cup light molasses
2 large eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 1/2 tablespoons ground ginger, or to taste
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 teaspoons lemon brandy or vanilla extract (see note)
1/2 cup buttermilk (or milk with a little plain yogurt beaten into it)

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch cake pan and set aside. Cream remaining 4 ounces butter with the brown sugar. Beat until fluffy, add molasses, then beat in eggs.
  • Add flour, baking soda, ground ginger, cinnamon, cloves and allspice.
  • Add lemon brandy or vanilla extract and buttermilk and turn batter into pan.
  • Bake for 20 to 30 minutes (check after 20 minutes). Cool on a rack.
