STEAMED CHICKEN (ZHENG JI) WITH GINGER-SCALLION DIPPING SAUCE
Chicken rubbed with salt and then steamed, served with a ginger-scallion dipping sauce to bring out its full flavor. Serve with steamed rice. Serves 4 as a main course or 8 as part of a multi-dish Chinese style dinner.

Steps:
- Rinse the chicken in cold, running water, and blot dry completely with paper towels.
- Rub the salt all over the skin of the chicken and inside the cavity.
- Place the chicken, breast-side down, on a heat proof platter, and set aside for 15 minutes.
- Set up your steamer, or place a rack inside a wok or other deep pan.
- Fill with about 2 inches of hot water.
- Cover tightly and gently steam over medium heat for 1 hour, replenishing the water from time to time.
- Remove the platter of cooked chicken and pour off all of the liquid.
- In a small bowl, combine the sugar, salt, soy sauce, ginger, garlic, and scallions.
- In a small pan, combine the oils and heat until they smoke.
- Pour the hot oils over the ginger-scallion mixture.
- Chop the chicken into serving sized pieces and serve with dipping sauce.

CHINESE STEAMED CHICKEN WITH GINGER SCALLION SAUCE
This is a refreshing and simple recipe. It includes chicken steamed with ginger and herbs served with a ginger scallion sauce.

- Pat dry the chicken. Rub salt on the whole chicken and let it sit in the fridge overnight. Make sure to get some salt in the cavity as well. Use more salt if needed.
- The next day, toast the coriander and fennel on the stove for 10-20 seconds.
- Add coriander, fennel, and the ginger to a small cheese cloth. Tie the ends together to make it into a small spice package. Stuff it into the cavity of the chicken.
- Use kitchen twine to tie the legs together to close the cavity. Use a second piece of twine to tie the legs to the tail. Finally, use one more piece of twine to tie around the length of the chicken (see picture above). The twine should go between the legs and wrap around the length of the chicken. Optional: You can use one more piece of twine to around the height of the chicken which will help you lift it out of the steamer.
- Prepare your steamer pot. Place a heat proof plate on your steamer attachment. Bring water to a boil. Add the chicken to the steamer. Let the chicken steam for 30 minutes.
- After 30 minutes, turn off the heat and let the chicken sit for another 20 minutes.
- Carefully take out the chicken with tongs, and remove the spice package from the cavity. Pour the steaming liquid into a small bowl. This liquid can be used in future dishes or to cook the rice.
- Let it cool completely (~10 minutes).
- Once it is cool enough to handle, cut the chicken into bite sized pieces. Serve with rice and ginger scallion sauce. The chicken can be served at room temperature or cold.

Delicious delicious delicious. I had some stars next to the recipe and remembered why tonight. Flavorful and lovely. This is modified from Mark Bittman's book "The minimalist cooks dinner". Note that if you steam the chicken at the same time as you cook the rice this is very fast to prepare.

Steps:
- **For rice salad**.
- Add peas to boiling water and cook 2 - 4 minutes. Drain.
- Cook rice according to directions.
- Add minced shallot to the rice. Stir.
- Add lime juice, oil, and soy. Stir.
- Add cilantro, peas, red pepper, and ground black pepper. Stir.
- Taste and adjust seasonings if necessary (lime juice, soy, or pepper.).
- You can serve this warm or at room temperature.
- **For chicken**.
- Steam chicken over simmering water for 10 - 15 minutes depending on the size of the breasts.
- **For scallion-ginger sauce**.
- While the chicken is cooking, make the dressing by combining the minced ginger, oil, scallions, soy sauce, sesame oil, lime juice and cilantro.
- **To serve**.
- On a bed of the rice salad, place the chicken breasts. Spoon over the scallion ginger sauce. Enjoy with a nice glass of Pinot Grigio or Beer!

GOLDEN SESAME CHICKEN WITH GINGER DRESSING
Not something you would ever find in a fast food restaurant, these chickies pack a punch of flavor, and are very pretty too, on their bed of fresh spinach. For couth guests only! ;-) Note: I get the greatest grated ginger (how's that for alliteration?) by freezing the ginger root first and then grating it on a Microplane zester.

- Prepare the marinade first:.
- Combine egg whites, soy sauce, sesame oil, ginger, and scallion. Whisk together until frothy.
- Add the chicken and marinate, refrigerated, 30 to 40 minutes.
- Meanwhile, prepare the Ginger Dressing:.
- Combine the ginger, soy sauce, sherry, garlic, sesame oil, chili flakes, scallions, lemon juice and orange juice in a saucepan and bring to a boil.
- Reduce the heat and simmer 5 minutes.
- Remove from the heat and set aside while preparing the chicken.
- Sesame coating:.
- Mix the two types of seeds together. That's it.
- Cooking the chicken:.
- Drain the excess liquid from the chicken and dip them in the sesame seed coating, covering them completely on all sides.
- Place the chicken pieces on a tray in the refrigerator about 30 minutes before cooking to allow the coating to dry.
- This would be a good time to start preheating your oven to 350 degrees F.
- Heat the canola oil in a heavy pan.
- Saute chicken on each side until crispy on the outside. Use tongs to turn them.
- Transfer them to a cookie sheet (I cover the sheet with parchment paper first) and place in the oven 3 minutes to make sure they are fully cooked in the center. (Yes, you preheated an oven for all of 3 minutes baking. Do you want salmonella? Just do it!).
- Serve the chicken nuggets on a bed of raw spinach leaves and drizzle the Ginger Dressing over the top or put in a bowl to serve on a platter.
