Yucatan Beef Taquitos with Red Rice image

2 pounds flank steak, cut into 2-inch strips
8 cups beef stock
1/2 yellow onion, chopped
1/4 bunch cilantro leaves, chopped
2 cloves garlic, smashed
1 bay leaf
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
5 plum tomatoes, cored and diced
1 yellow onion, diced
1/4 bunch cilantro leaves, chopped
1 chipotle en adobo, chopped
Kosher salt and freshly ground pepper
Vegetable oil, for frying
16 corn tortillas
Flour and water, as needed
6 plum tomatoes, roasted
1/2 yellow onion, diced
2 cloves garlic, chopped
1/3 cup vegetable oil
2 cups white rice
Kosher salt and freshly ground black pepper
4 cups chicken stock
1/2 cup diced carrot
1/2 cup fresh green peas

Steps:

  • Make the Beef: In a large pot, combine the steak, stock, onion, cilantro, garlic, and bay. Season with salt and pepper, to taste. Bring to a boil, lower the heat, and simmer until very tender, about 2 hours. Remove bay leaf. Let cool and shred the beef. (Strain the stock and reserve for another use.)
  • Meanwhile, make the Taquitos: Heat the oil in a large skillet over medium-high heat. Add the tomato, onion, cilantro, and chipotle and cook, stirring, until soft. Season with salt and pepper, to taste. Let cool and mix with the shredded beef.
  • In a large saucepan, pour the oil to a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer inserted in the oil reads 365 degrees F. Working in batches, fry the tortillas until just limp (not crisp!), about 2 to 3 seconds.
  • Mix a little flour and water together in a small bowl to make a paste. Fill each tortilla with about 1 1/2 ounces of the beef filling and roll to form a tube. Seal each taquito with the paste. Refrigerate the taquitos until ready to serve.
  • Make the Red Beans: Puree the tomatoes, onion, and garlic in a blender.
  • Put the rice in a strainer in the sink and rinse, letting the water run over it for at least 5 minutes. Drain the rice and shake to remove any excess moisture.
  • Heat the oil in a large saucepan with a tight-fitting lid, over medium heat. Add the rice and cook, stirring, until golden brown, about 8 minutes. Add the tomato puree and stir to combine. Season with salt and pepper, to taste. Add the stock and bring to a boil. Lower the heat and cook, covered, for 25 minutes.
  • Remove the rice from the heat and let rest for 10 minutes. Fluff the rice with a

  • Reheat the oil to 365 degrees F. and fry the taquitos until crispy and hot. Serve immediately with the rice and beef.

These easy oven baked taquitos with steak, corn and HERDEZ® Guacamole Salsa is a terrific way to use leftover steak or chicken to make a delicious appetizer or meal.

1 cup diced leftover steak
1 cup shredded cheddar cheese or Mexican cheese blend
3/4 cup corn kernels
2 green onions, diced
2 TBS chopped fresh cilantro
1/4 teaspoon cumin
1/4 teaspoon chile powder
1/4 teaspoon garlic powder
1/2 teaspoon kosher salt, divided
8 6-inch flour tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped red onions
1/4 cup chopped cilantro

Steps:

  • Preheat oven to 425ºF. Lightly coat baking sheet with non-stick cooking spray.
  • In a small bowl combine steak, cheese, corn, green onions, 2 TBS cilantro, cumin, garlic powder and 1/4 teaspoon kosher salt.
  • Layout tortillas on your work surface.
  • Starting with one tortilla, lay it flat and arrange 1/4 cup of steak mixture in a line across down the center.
  • Roll tortilla tightly around the filling so it is snug. Lay it seam-side-down on the prepared baking sheet.
  • Prepare the remaining tortillas the same way. Place them on the prepared baking sheet, leaving some space between each taquito so all sides will bake evenly.
  • Spray taquitos with non-stick spray and sprinkle with 1/4 teaspoon kosher salt.
  • Bake for 15 minutes or until taquitos are crisp and golden brown. Remove from oven and let cool slightly before serving.
  • Top with shredded lettuce, tomatoes, red onions and 1/4 cup chopped cilantro.

2 1/2 cups chopped tomatoes
2 cups chopped onions
3/4 cup chopped fresh cilantro
6 tablespoons fresh lime juice
1 1/2 tablespoons chopped serrano chilies or jalapeño chilies
3 cups crumbled queso fresco or mild feta cheese (about 18 ounces). Queso fresco, also known as queso blanco, is available at Latin American markets and in some supermarkets.
24 4-inch corn tortillas
2 pounds skirt steaks, trimmed

Steps:

  • Combine first 5 ingredients in medium bowl. Season salsa with salt and pepper. (Can be made 4 hours ahead. Cover; chill.)
  • Preheat oven to 350°F. Place queso fresco in bowl. Wrap tortillas in foil, enclosing completely. Place in oven until heated through, about 15 minutes.
  • Meanwhile, prepare barbecue (medium-high heat) or preheat broiler. Season steaks generously with salt and pepper. Grill or broil steaks to desired doneness, about 5 minutes per side for medium-rare. Thinly slice steaks across grain. Place in serving bowl.
  • Arrange bowls of salsa, queso fresco, corn tortillas and steak on table. Allow guests to assemble their own taquitos.

Just when you thought taquitos couldn't get any better, we added steak to them. This is a simple and delicious dinner the whole family will love. It comes together quickly and only requires a few simple ingredients.

2 cups cooked steak (cut in bite-size pieces)
1 cup shredded cheddar cheese
½ cup salsa
½ cup sour cream
salt and pepper to taste
10 flour tortillas (8 inch)

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl combine the cooked steak, cheese, salsa, sour cream, salt and pepper to taste.
  • Spread 2 heaping spoonfuls of steak mixture in the center of the tortilla. Roll it up and place seam side down on a cookie sheet. Repeat until all the tortillas are filled and rolled.
  • Place cookie sheet in the oven and cook for 20 minutes or until the tortillas turn a little brown. Watch them to make sure they don't burn.
  • Serve with your choice of dipping sauce (I chose guacamole)

Like tacos, only neater to eat. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Serve with salsa and sour cream.

1 tablespoon vegetable oil, plus more
vegetable oil, for brushing on the taquitos
1 medium onion, finely chopped
1 garlic clove, minced
3/4 lb lean ground beef
1/2 cup salsa, plus more salsa, for dipping
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 (6 inch) flour tortillas
1/2 cup cheddar cheese or 1/2 cup monterey jack cheese, shredded
sour cream

Steps:

  • Heat the oven to 400°. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.
  • Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 2 tablespoons of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.
  • Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the taquitos lightly with vegetable oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes. Serve them hot with sour cream and/or salsa.

1/2 cup dry bread crumbs
3 tablespoons taco seasoning
1 pound lean ground beef (90% lean)
10 corn tortillas (6 inches), warmed

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine eggs, bread crumbs and taco seasoning. Add beef; mix lightly but thoroughly. , Spoon 1/4 cup beef mixture down the center of each tortilla. Roll up tightly and secure with toothpicks. In batches, arrange taquitos in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook 6 minutes; turn and cook until meat is cooked through and taquitos are golden brown and crispy, 6-7 minutes longer. Discard toothpicks before serving.
