Steps:
- Pound steak to flatten.
- Lightly cook onion and celery in butter
- until golden.
- add bread cubes, seasonings, parsley and water.
- Cut meat into 4 pieces
- Spread meat with dressing mixture.
- Roll up
- fasten with toothpicks.
- roll in flour.
- brown in hot oil.
- Dilute soup with 1 cup of water.
- pour over meat.
- cover
- simmer over low heat for 1 hour 30 minutes.

STUFFED HAM STEAK
I thought this would be a change from the usual ham steak with pineapple. I am putting this here to try this week.

Steps:
- Preheat oven to 450°F.
- Remove the fat from around the ham steaks; using whole cloves stud the ham and keep aside.
- Add celery and onion to butter and sauté for about 10 minutes. Toss slightly after adding bread cubes, cinnamon, egg, parsley and salt.
- Take a big double-thick square aluminum foil, put one of the ham steaks in the middle and cover using stuffing mixture. Arrange the other ham steak on the top. Use toothpicks, if required, to secure the second ham.
- Pull up the aluminum foil, cover the ham and seal. Fold the ends so that ham is completely secured inside.
- Put on on the oven rack and bake for25 minutes.
- Unwrap the foil and bake for 10 more minutes.
- Arrange on the platter and serve hot.

STUFFED FLANK STEAK
This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. Just cover and cook at medium setting (50 per cent) in a microwave-safe dish for 30 minutes, rotating dish halfway through cooking. Serve with sauce from the pan.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the stuffing mix, water and butter or margarine. Mix well and let stand for 5 minutes. Spoon the stuffing onto the steak, leaving a 1 inch border. Add the green onions and the red bell pepper.
- Roll from the long edge of the steak and secure with wooden toothpicks. Place steak seam side down in a 9x13 inch baking dish.
- In a separate small bowl, combine the gravy, wine OR apple juice, garlic and cheese. Mix well and pour over the steak.
- Bake at 350 degrees F (175 degrees C) for 1 hour, remove from oven and let stand before slicing.

- Preheat oven to 350°. In a small nonstick skillet, saute onion in butter until tender. In a large bowl, combine the bread crumbs, poultry seasoning, salt, 1/8 teaspoon pepper and onion., Flatten steak to 1/2-in. thickness; spread with stuffing to within 1 in. of edges. Roll up jelly-roll style, starting with a long side; tie with kitchen string. Rub with remaining pepper. , Place in an 11x7-in. baking dish coated with cooking spray. - In a large bowl, combine the stuffing, onion, celery and parsley. In a small bowl, beat the egg substitute; stir in broth and butter. Pour over stuffing mixture. - Preheat oven to 350°F (175°C).
- Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
- Lay the flank steak on a cutting board. Add salt and pepper on both sides, to taste.
- Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of provolone. Press down lightly to compress the spinach.
- Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
- Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10-15 minutes, until medium rare.
- Remove the toothpicks, then serve!

- Flatten steaks to 1/4-in. thickness; set aside. In a large skillet, cook bacon over medium heat until crisp; using a slotted spoon, remove to paper towels. Drain, reserving 3 tablespoons drippings. , Saute onion in the drippings. Add the croutons, parsley, salt, celery salt, sage, pepper and bacon. Spread over each steak to within 1 in. of edges. This is a tried and true recipe for my family. I've been making this for many years. I got the recipe from my mother-in-law. You could also use flank steak in place of the round steak for this recipe.

- Pound the salt, garlic powder and black pepper into the steak.
- Lay the stuffing on top of the steak and roll up jelly-roll style.
- Place toothpicks in steak to hold in place.
- Place the steak in the crock pot.
- Mix the cream of mushroom soup, dry onion soup mix and water in bowl until smooth.
- Pour over the steak in the crock pot.
- Cook on low for about 6 hours.
- Thicken the broth for gravy if you like.
- Serve with mashed potatoes, if desired.
- Slice the steak into serving pieces.

This is a quick weeknight throw-together meal that is very tasty. Any type of inexpensive beef will do, even ground. All amounts are approximate.

- Preheat oven to 350.
- Prepare Stuffing, any recipe will do. I like Stovetop, it's quick and tasty!
- Heat oil and stir fry diced steak until 3/4 done. (You may add pepper or any seasonings you like during this step.).
- Add steak to stuffing mix and toss together well.
- In large saucepan, mix 1 1/2 cups Water with both packages of Brown Gravy Mix. Whisk continually on High heat until it boils, then for about one minute more. Mixture will thicken into gravy when done. (You may substitute any prepared gravy recipe you like.).
- Place steak and stuffing mixture in baking pan or casserole dish.
- (Optional) Sprinkle diced peppers over mixture.
- Pour gravy over top.
- Fluff slightly with fork so that gravy seeps down through the mixture.
- Bake at least 30 minutes. This may be kept in the oven for up to two hours without drying out too much due to the gravy, and the longer you bake it, the better it tastes!
