PARMESAN CRUSTED STEAK

This Parmesan Crusted Steak is a unique and delicious way to grill steak. It'll take a tasty steak and up the ante on flavor. Whether you make it for dinner or a special occasion, it'll be sure to please.

2 New York Strip Steaks ((1.5 inches thick))
2 teaspoons Signature Beef Seasoning
3 Tablespoons mayonnaise
¼ cup grated Parmesan cheese
2 cloves garlic (minced)
1 teaspoon dried basil
½ teaspoon fresh ground black pepper

Steps:

  • Turn on the smoker. Preheat your smoker to 225 degrees F.
  • Prep the steaks. Season the New York strip steaks on all sides with Hey Grill Hey Signature Beef Seasoning (or equal parts salt and pepper).
  • Make the Parmesan crust mixture. In a small bowl, combine the mayo, Parmesan, garlic, basil, and black pepper and set aside.
  • Smoke the steaks. Place steaks on smoker, close the lid, and cook until the internal temperature of the steaks are 10 degrees away from your target temperature. (Pull at 115 degrees F for rare, 125 for med rare, 135 for medium, 145 for medium-well, and 150 for well done).
  • Preheat your oven. When your steak is nearly to temperature specified above, set your oven to High Broil. Place a cast iron skillet on the very top rack of your oven to preheat. It needs to preheat for about 8-10 minutes.
  • Add the Parmesan crust. Remove the steaks from the grill and place them on a plate. Top each steak with half of the Parmesan mixture. Carefully place the steaks onto the preheated cast iron skillet and slide them under the broiler.
  • Broil the Parmesan crusted steaks. Broil for about 2-3 minutes, or until the Parmesan crust has melted and the top of the cheese is bubbly and browned. Your steak should be a few degrees under your final desired internal temperature, (125 degrees F for rare, 135 for medium rare, 145 for medium, 155 for medium well, and 160 for well done).
  • Rest and serve. Rest the steaks for 5-10 minutes. The carry over cooking and heat from the skillet should finish the cooking process while the steak rests in the skillet for 5-10 minutes. Remove the steaks from the skillet and serve.

6 beef sirloin steaks (1-1/2 lb.)
1/3 cup KRAFT Grated Parmesan Cheese
1 tsp. cracked black pepper

Steps:

  • Heat oven to 375ºF.
  • Heat large heavy ovenproof skillet on medium heat 3 min. Add oil; tilt skillet to evenly cover bottom with oil. Add steaks; cook 2 min. Turn.
  • Sprinkle with cheese and pepper. Place skillet in oven.
  • Bake 8 to 10 min. or until steaks are medium doneness (160ºF).

3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
3 tablespoons water
1/3 cup finely crushed saltines
1/3 cup grated Parmesan cheese
1/2 teaspoon dried basil
4 beef cube steaks (4 ounces each)
3 tablespoons canola oil
1-1/4 cups tomato sauce
2-1/4 teaspoons sugar
1/2 teaspoon dried oregano, divided
1/4 teaspoon garlic powder
4 slices part-skim mozzarella cheese
1/3 cup shredded Parmesan cheese

Steps:

  • In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat eggs and water. Place cracker crumbs, grated Parmesan cheese and basil in a third bowl. , Coat steaks with flour mixture, then dip in egg mixture and coat with crumb mixture. In a large skillet, brown steaks in oil for 2-3 minutes on each side., Arrange steaks in a greased 13x9-in. baking dish. Bake, uncovered, at 375° for 25 minutes or until thermometer reads 160°. Combine the tomato sauce, sugar, 1/4 teaspoon oregano and garlic powder; spoon over steaks. Bake 10 minutes longer., Top each steak with mozzarella cheese; sprinkle with shredded Parmesan cheese and remaining oregano. Bake 2-3 minutes longer or until cheese is melted.

These calamari steaks come out so tender you can break them with a fork. They are fast and easy to make and oh so good.

4 calamari steaks
1-2 fresh lemons
2 c oil for frying
EGG DIP
4 eggs, beaten
1/2 c sherry
1 tsp oregano, dried
1 tsp basil, dried
1 tsp thyme, dried
1 tsp parsley flakes
1/2 tsp white pepper
1/2 tsp salt
BREADING
1 1/2 c unseasoned bread crumbs
1/2 c parmesan cheese, shredded
1 tsp oregano, dried
1 tsp basil, dried
1 tsp thyme, dried
1 tsp parsley flakes
1/2 tsp white pepper
1/2 tsp salt
1 tsp onion powder
1 tsp granulated garlic

Steps:

  • 1. Mix together ingredients for egg dip and put calamari steaks in to soak for 15-30 minutes
  • 2. While steaks are soaking mix together breading ingredients. Start heating oil to shimmering. I use canola or vegetable and only enough to half cover the steaks. I do not completely cover in oil. Olive oil will throw the taste off completely. I speak from experience on that one.
  • 3. Double Bread steaks, out of dip into breading, back into egg, back into breading.
  • 4. Fry steaks until golden on one side then flip. About 2 1/2 minutes a side. DO NOT OVERCOOK or these will be like chewing rubber bands
  • 5. Remove from oil, blot on paper towels.
  • 6. Serve with a squeeze of fresh lemon. (bottled is ok if you don't have fresh) * Note: I served with a artichoke and will also have this recipe posted for your enjoyment

1 large egg white, lightly beaten
2 teaspoons water
Dash pepper
1/2 cup finely crushed saltine crackers
1/2 cup grated Parmesan cheese
4 beef cubed steaks (4 ounces each)
2 tablespoons butter
1 can (8 ounces) pizza sauce

Steps:

  • In a shallow bowl, combine the egg white, water and pepper. Set aside. On a plate, combine cracker crumbs and cheese. Dip each cube steak into the egg mixture, then coat with cracker-cheese mixture. , In a large skillet, melt butter; brown steaks on both sides. Add pizza sauce and simmer for 3-5 minutes. Garnish with remaining crumb mixture. Serve immediately.

  • Combine breadcrumbs and 2TB parmesan cheese. Melt butter then pour in and mix around until everything is saturated. Put breadcrumbs and dressing to the side preparded to top steak.
  • I had 3 steaks at a total weight of 1.5 pounds. Top sirloin cut but any cut is fine. Salt and pepper steaks to taste.
  • Preheat oven to broil. Cook steaks just shy of desired done temperature. Top steak with dressing then place buttered breadcrumb mix on top. Put in preheated broiled oven for 1-2 minutes or until crumble topping has browned.
