Grilled Strip Steaks With Garlic and Oregano image

This is nice and simple strip steak seasoned with an herbal wet rub. This dish would go well with any grilled vegetables.

4 strip steaks (about 1 inch thick)
3 cloves garlic (minced)
2 tablespoons/30 mL olive oil
1 tablespoon/15 mL dried oregano
1 teaspoon/5 mL salt
1 teaspoon/5 mL black pepper (ground)

Steps:

  • Combine minced garlic, olive oil, and dried oregano in a bowl. Place steaks on a large plate and coat well on both sides with mixture. Cover lightly with plastic and place in refrigerator for 2 hours. Remove from fridge 30 minutes before going onto the grill. This will help the meat come up to temperature before coming into contact with heat.
  • Preheat grill for medium-high heat.
  • Remove plastic wrap from steaks and season both sides of meat with salt and black pepper.
  • Place steaks on the grill and cook for 5 to 6 minutes per side, depending on thickness and desired doneness. Once cooked to preference, remove from heat and set onto a cutting board. Lightly tent with aluminum foil. Do not wrap tightly. Let steaks rest for 7 to 10 minutes. Slice and serve or serve steaks whole with your favorite side dishes.

1 top round beef steak (1 1/2 - 2 pounds)
2 tablespoons butter
2 tablespoons olive oil
Kosher salt
Freshly ground pepper
1/2 cup dry red wine
1/2 teaspoon dried oregano

Steps:

  • 1 top round beef steak (1 1/2 - 2 pounds) The steak should be 1/2-inch thick. If necessary, pound it between two sheets of waxed paper to achieve this thickness. 2 tablespoons butter 2 tablespoons olive oil Warm the butter and olive oil together in a large saute or cast-iron pan set over medium-high heat. When the butter is foaming rapidly, add the steak and fry to brown on one side, about 3 minutes. (If the steak is larger than your saute pan, cut it in half) Kosher salt Freshly ground pepper 1/2 cup dry red wine 1/2 teaspoon dried oregano Turn, and season with salt and pepper. Brown the other side, about 3 minutes. Remove from the pan to a warm platter and set aside. Add the wine and oregano to the pan, scraping up any meat that may have stuck to the bottom. Simmer to sweeten the wine, about 1 minute. Meanwhile, cut the meat into six equal portions. When the wine sauce is ready, pour it over the meat and serve immediately.

GRILLED CUBAN STEAK WITH OREGANO POTATOES



Grilled Cuban Steak with Oregano Potatoes image

An authentic Cuban "mojo" marinade lends tremendous flavor to skirt steak.

Number Of Ingredients 9

2 lb beef skirt steak
1 cup fresh orange juice
1/2 cup olive oil, divided
2 medium red onions, quartered
6 garlic cloves, peeled, divided
2 tbsp Dijon mustard
2/3 cup fresh oregano, divided
1 1/4 lb russet potatoes (about 4-6 medium potatoes)
Salt and coarsely ground black pepper

Steps:

  • Lightly pound steak with toothed end of Meat Tenderizer. Place juice, 1/4 cup of the oil, one onion quarter, 3 garlic cloves, mustard and half of the oregano in blender. Blend on low speed until smooth. Set aside 1/2 cup of the marinade. Combine steak and remaining marinade in large resealable plastic bag; refrigerate 10 minutes.On Double Burner Griddle, heat remaining oil over medium heat 1-3 minutes or until shimmering. Slice potatoes into 1/4-in. slices and chop remaining oregano. Arrange potatoes in a single layer on griddle; cook 8-10 minutes or until golden brown, turning once. Combine potatoes, remaining garlic pressed with Garlic Press, oregano, salt and pepper in Stainless (6-qt.) Mixing Bowl; toss to coat. Cover and set aside.Heat Grill Pan on medium-high heat 5 minutes. Remove steak from marinade; discard marinade. Season steak with salt and pepper. Grill half of the steak 2-4 minutes or until no longer pink, turning once. Brush steak with reserved marinade. Remove steak from pan; tent with foil. Repeat with remaining steak. Place remaining onion wedges into pan; cook 1-2 minutes or until lightly charred. Serve steak with potatoes and onions.

Oregano Lemon Grilled Calamari image

2 pounds calamari tubes and tentacles
2 tablespoons lemon zest (2 lemons)
1 lemon, juiced, plus more for serving
1 teaspoon minced garlic (1 clove)
6 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
2 teaspoons salt
1 teaspoon pepper
Lemon juice, to finish
Chopped parsley, for garnish

Steps:

  • Slit the calamari tubes up 1 side and lightly score 1 side. Place the tubes and tentacles in a bowl and add the lemon zest, lemon juice, garlic, olive oil, oregano, salt and pepper and toss to combine. Refrigerate for 30 minutes.
  • Preheat a grill pan on high heat.
  • Remove the calamari from the refrigerator and place on the grill in batches for 1 1/2 to 2 minutes per side. Cut the tubes into strips and leave the tentacles whole. Before serving, sprinkle with lemon juice and chopped parsley.

No matter how little time you have for cooking, you needn't sacrifice taste or nutrition in the name of convenience. This delicious one-dish meal, which combines succulent roasted chicken with assorted tomatoes and potatoes, requires only 45 minutes of cooking time.

3 1/2 pounds chicken, cut into 10 serving pieces
4 medium Yukon gold potatoes, scrubbed and cut into medium-size chunks
4 plum tomatoes, cut into medium-size chunks
1 large onion, cut into medium-size chunks
1/4 cup extra-virgin olive oil
1/4 cup fresh oregano leaves, coarsely chopped
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 450 degrees with rack in upper third. Combine the chicken, potatoes, tomatoes, and onion in a large roasting pan. Add the olive oil, oregano, salt, and pepper; toss to combine. Arrange the chicken, skin-side up, over the top of the vegetables. Roast until the juices run clear and a thermometer inserted in the thickest part of the thigh registers 170 degrees, about 45 minutes.

UTICA GREENS



Utica Greens image

This dish was popularized by Joe Morelle in the late 1980s at the Chesterfield Restaurant in Utica, N.Y., where it is on the menu as greens Morelle. More widely known as Utica greens, it has become commonplace, in modified versions, in Italian restaurants throughout central New York, and even migrated to New York City, Las Vegas and Florida. This version of the dish is fairly spicy. Use fewer cherry peppers if you prefer it less hot. You will have leftover oreganato, the topping of bread crumbs and cheese; use it for another greens dish or add it to baked chicken or shrimp. Typically served in restaurants as an appetizer, Utica greens makes a great main course at home with some crusty bread and a glass of red wine.

1/2 cup extra-virgin olive oil
1 cup bread crumbs
1/2 cup Parmigiano-Reggiano, grated
1 head escarole, about 1 1/4 pound, bottom removed, leaves separated and washed thoroughly to remove grit
2 tablespoons extra-virgin olive oil
4 slices prosciutto (about 2 ounces), sliced thin and cut into roughly 1-inch squares
4 to 6 hot cherry peppers (pickled will do if you can't find fresh), tops and seeds removed, broken by hand or chopped into 4 or 5 chunks
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup Parmigiano-Reggiano, grated, plus 2 or more tablespoons for garnish

Steps:

  • Bring a large pot of water to boil over high heat. Prepare an ice bath in a large bowl and set aside.
  • Meanwhile, in a medium bowl, prepare the oreganato: Mix the oil, bread crumbs and cheese until well blended. It should have the texture of moist beach sand. Set aside.
  • When the water is boiling, blanch the greens until they are nearly limp but still a little firm, about 1 to 2 minutes. Plunge them into the ice bath to stop the cooking. Remove and drain them well in a colander or salad spinner, allowing them to remain moist but not dripping wet. Squeeze just a little of the moisture from them, then chop them into 2-inch pieces. Set aside.
  • Heat the broiler. Coat a large pan with the olive oil. Over medium heat, sauté the prosciutto, cherry peppers and garlic until the prosciutto is browned and slightly crisp, about 5 minutes. (Lower heat slightly if garlic begins to brown too quickly.) Add the chopped greens to the pan, season with salt and pepper and stir to mix well.
  • Add 1/2 cup Parmigiano-Reggiano and 1/2 cup of the oreganato. Cook 3 to 4 minutes, stirring frequently to blend, scraping the bottom of the pan to keep the oreganato from burning.
  • Sprinkle another 1/4 cup oreganato atop the greens. (Save leftover oreganato for use in another greens dish, or add it to baked chicken or shrimp.) Place the pan under the broiler and broil until the top browns, about 2 minutes. Remove from the broiler and sprinkle a bit more cheese on the dish. Serve immediately.

3 tablespoons panko bread crumbs
2 tablespoons freshly grated Parmesan cheese

2 (5 ounce) sole fillets
1 tablespoon butter
¼ cup whipping cream
2 tablespoons Pinot Grigio wine
½ teaspoon lemon juice
