Beef fajitas are delicious served with a lot of condiments on the side. My favorites are guacamole, extra cilantro, and beans and rice!

1 pound lean steak, cut into strips
½ cup fresh lime juice
½ tablespoon ground black pepper
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
1 large onion, cut into thin strips
1 julienned green bell pepper
2 lemons, quartered
salt and pepper to taste
6 (12 inch) flour tortillas

Steps:

  • Combine the lime juice, ground pepper and cilantro in a shallow dish. Place steak strips into the marinade and refrigerate for two to four hours.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak strips, and fry until cooked to your liking. Remove meat and set aside.
  • Add remaining oil and onions to the skillet. Cook over medium low heat, until translucent, stir in green peppers and steak. Squeeze the juice of 1 lemon over the top and stir. When the green bell peppers are just tender remove the pan from the heat. Season with salt and pepper to taste. Serve the steak fajitas with tortillas and lemon wedges on the side.

When friends call to ask me for a new recipe to try, I often suggest these flavorful fajitas. Just put the beef in the slow cooker before church and come home to a hot delicious main dish.

1-1/2 pounds beef top sirloin steak, cut into thin strips
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 garlic clove, minced
1-1/2 teaspoons ground cumin
1 teaspoon salt-free seasoning blend
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
1 large green pepper, julienned
1 large onion, julienned
6 to 8 flour tortillas (8 inches)
Shredded cheddar cheese, salsa, sour cream, lettuce and tomatoes, optional

Steps:

  • In a skillet over medium heat, brown the steak in oil. Place steak and drippings in a 3-qt. slow cooker. Stir in the lemon juice, garlic, cumin, seasoning blend, chili powder and red pepper flakes. Cover and cook on high for 2-1/2 to 3 hours or until meat is tender., Add green pepper and onion; cover and cook for 1 hour or until vegetables are tender. , Warm tortillas according to package directions; spoon beef and vegetables down the center of tortillas. Top each with cheese, salsa, sour cream, lettuce and tomatoes if desired. Fold in sides of tortillas and serve immediately.

1 pound beef flank steak or beef top sirloin steak
1 small onion, thinly sliced
2 tablespoons butter
1 can (14-1/2 ounces) diced tomatoes, drained
1 jar (7 ounces) roasted sweet red peppers, drained and coarsely chopped
1-1/3 cups water
1/4 teaspoon hot pepper sauce
1 package (4.8 ounces) Pasta Roni angel hair pasta with herbs
2/3 cup half-and-half cream

Steps:

  • Place steak on a broiler pan. Broil 4 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a large skillet, saute onion in butter until tender. Add tomatoes and peppers; saute 1 minute longer. Add water and pepper sauce. Bring to a boil; stir in pasta with contents of seasoning packet. Return to a boil. , Reduce heat to medium; cook, uncovered, for 5-6 minutes or until pasta is tender, stirring frequently. Stir in cream; heat through. Thinly slice beef; serve over pasta.

1 can (7 oz.) whole kernel corn, drained
1/4 cup BULL'S-EYE Original Barbecue Sauce

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add meat; cook and stir 3 to 4 min. or until browned.
  • Add contents of Pasta and Seasoning pouches and water; stir. Reduce heat to medium; cover. Cook 5 to 7 min. or until pasta is tender.

2 (10 inch) flour tortillas, cut into 1/2 inch strips
3 tablespoons olive oil, divided
1/2 lb beef top sirloin steak, cut into thin strips
1 medium green pepper, sliced
1 small onion, sliced
2 tablespoons soy sauce
1 tablespoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon pepper
1 teaspoon cornstarch
2 tablespoons lime juice
1 cup cubed pineapple
1 medium tomatoes, chopped

Steps:

  • In a large skillet, fry tortilla strips in 2 tablespoons oil on both sides for 1 minute or until golden brown.
  • Drain on paper towels.
  • In the same skillet, cook the chicken, beef, green pepper, onion, soy sauce, brown sugar, chili powder, cumin, and pepper in remaining oil for 3-4 minutes or until chicken is no longer pink.
  • In a small bowl, combine cornstarch, and lime juice until smooth, add to the pan.
  • Bring to a boil, cook and stir for 1 minute or until thickened.
  • Stir in pineapple, and tomato, heat through.
  • Serve with tortilla strips.
