1 lb flank steak
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon chili powder
4 cloves garlic, chopped
1 yellow onion, chopped
3 bell peppers, seeded, diced
9 medium flour tortillas
3 cups shredded mexican cheese blend
8 oz monterey jack cheese, sliced into 1-inch (2 1/2 cm) pieces
18 tortilla chips
2 tablespoons fresh cilantro, chopped

Steps:

  • Season flank steak with olive oil, salt, pepper, cumin and chili powder.
  • Heat a pan over high heat. Add the flank steak and cook for 3 minutes on each side.
  • Remove the flank steak from the pan and let rest for 10 minutes.
  • Preheat oven to 350°F (180°C).
  • Turn heat down to medium. Add oil, garlic and onion to the pan. Cook until onions are translucent.
  • Add the bell peppers, salt, and pepper, and cook for 5 minutes, until softened.
  • Slice steak into ¼-inch (1 cm) cubes.
  • Add the cubed steak and stir to combine. Remove from heat.
  • Lay out one medium tortilla. Sprinkle Mexican cheese in the center, place two tortilla chips side by side over it, place a 1-inch chunk of jack cheese over the tortilla chips and finally, add roughy two spoonfuls of fajita mix on top.
  • Fold the top part of the tortilla over the mix and towards yourself, rotate the tortilla and repeat, creating folds as you go. Continue until the entire tortilla is folded towards the center. Flip over and place on a small baking pan.
  • Cover with mexican blend cheese and bake for 25 minutes.
  • Top with cilantro, serve.

Steps:

  • Preheat the oven to 450°F (230°C).

  • Using your hands, rub the seasoning into the vegetables, then into the steak. Flip the steak and season the other side.
  • Squeeze the lime juice over the top of the steak and veggies.

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Add the chicken breast to a bowl and season with salt, chili powder, garlic powder, and cumin.
  • In a large skillet, heat 2 tablespoons vegetable oil and cook chicken until slightly charred and no longer pink. Cook chicken in batches to avoid overcrowding the pan. Remove cooked chicken from the skillet, and transfer into a bowl.

1 can black beans, drained and rinsed
18 oz tortilla chips, 1 bag

Steps:

  • Preheat the oven to 450˚F (230˚C).
  • Season the steaks with the salt, pepper, paprika, garlic powder, cumin, and cayenne, rubbing fully over the meat.
  • Add oil to a skillet over medium-high heat and add the steaks. Cook the steaks for 3 minutes per side.
  • Let the steaks rest for 10 minutes, and then cut into bite-sized pieces. Set aside.
  • Spray a bundt pan with cooking spray and create three layers of nachos consisting of shredded cheddar cheese, sliced jalapeños, diced red onion, diced tomatoes, black beans, and the steak. Top with more cheese.
  • Place into the oven to melt and heat up for about 10 minutes.
  • Take a serving tray and place on top of the warm bundt pan and carefully invert the nacho ring onto the tray.

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Heat a large ovenproof skillet over medium heat and add the oil. Sauté the onion, garlic, and bell peppers until soft, about 5 minutes.
  • Combine the chili powder, paprika, cayenne, cumin, garlic powder, oregano, salt, and pepper in a dish, and use the mixture to season the flank steak with on both sides. Lay the steak flat on a cutting board with the grain running up and down. Place the sautéed onions and peppers in the middle of the steak, leaving an inch or so on both ends. Cover the onions and peppers with a layer of cheese.
  • Tightly roll up the meat from left to right; this will ensure that you cut against the grain when you slice the meat. Stick toothpicks through the sides of the roll to help it hold its shape and use a sharp knife to cut in between the toothpicks.
  • Return the skillet to high heat, add the steak, and sear until a nice crust has developed, about 3 minutes. Flip and repeat with the other side. Transfer the skillet to the oven and bake for 10 minutes, or until cooked to your preference.

1/3 cup olive oil
4 cloves garlic
2 limes, juiced
2 canned chipotle peppers in adobo with a little adobo sauce
Handful fresh cilantro
1 whole flank steak
Olive oil, as needed
2 yellow onions, sliced
2 red/yellow bell peppers, sliced
1 tablespoon taco seasoning
One 18-ounce bag sturdy tortilla chips
8 ounces grated Monterey Jack and Cheddar mix
Handful fresh cilantro leaves
Salsa
Sour cream
Pico de gallo

Steps:

  • For the flank steak: Combine the olive oil, garlic, lime juice, chipotle peppers with sauce and cilantro in the bowl of a food processor or a blender. Blend until totally combined. Put the flank steak in a large resealable plastic bag or baking dish. Pour in the marinade and make sure it adequately coats the meat. Seal the bag or cover tightly and refrigerate for 24 hours at least.
  • For the nachos: When ready to make the nachos, preheat the oven to 350 degrees F. Heat an indoor grill pan to high. Remove the meat from the marinade (discard the marinade).
  • Drizzle a little olive oil on the grill and grill the meat over very high heat, about 4 minutes per side. (Turn it 45 degrees halfway through on both sides to get nifty grill marks.) Set aside to rest.
  • In a large skillet, heat a couple of tablespoons of olive oil over medium-high heat. Add the onions and peppers, sprinkle over the taco seasoning and cook until the vegetables are somewhat soft and starting to get black bits, 3 to 5 minutes. Set aside.
  • Slice half of the flank steak into strips against the grain, then chop the slices into smaller bites (see Cook's Note). Put the sauteed veggies on a cutting board and roughly chop to get them into smaller pieces.
  • Arrange the tortilla chips on a large ovenproof platter (or baking sheet). Sprinkle plenty of cheese all over the top. Put the platter in the oven for 3 minutes or so, just long enough to melt the cheese (but not burn the chips). Generously sprinkle the peppers, onions and chopped steak all over the top. Garnish with cilantro leaves.
  • Serve immediately with salsa, sour cream and pico de gallo.
