BUTTERMILK MASHED POTATOES
Steps:
- In a large pot, bring 2 quarts of water and 1 tablespoon of salt to a boil. Meanwhile, peel the potatoes and cut them into 1 1/2-inch cubes. Add them to the boiling water and bring the water back to a boil. Lower the heat and simmer uncovered for 10 to 15 minutes, until the potatoes fall apart easily when pierced with a fork.
- Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.
- As soon as the potatoes are tender, drain them in a colander. Place a food mill fitted with a small disk/blade over a heatproof bowl. Pass the potatoes through the food mill, turning the handle back and forth. As soon as the potatoes are mashed, stir in the hot milk mixture with a whisk or rubber spatula. Add enough buttermilk to make the potatoes creamy. Add 1 teaspoon of salt and the pepper, and serve hot. To keep the potatoes warm, place the bowl over a pan of simmering water for up to 30 minutes. You can add a little extra hot milk to keep them creamy.
MASHED SWEET POTATOES

- Wash and peel the sweet potatoes, then cut them into 1 1/2 to 2-inch chunks
- Place them into a large pot and cover them with cold water (they should be covered by 4 or so inches of water so they cook evenly)
- Place the pot on the stove, add some salt and turn the heat on high to bring to a boil
- Once boiling, cook about 8 minutes, until they are tender but not falling apart
- Drain thoroughly, then pop them back into the pot and place them over medium heat to dry them out a bit
- Add the buttermilk, pepper and some salt to taste
- Using a potato masher, mash up the sweet potatoes until smooth, and serve them alongside Creole Meatloaves with Trinity Gravy

- Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

- Pop the meat in the freezer for a few minutes to stiffen it up for slicing.
- Place potatoes in a pot and cover with cold water. Bring water to a boil. Salt the water and cook the potatoes until tender, 12 to 15 minutes. Drain. Halve the steak lengthwise then very thinly slice the meat. Heat the oil in a very large skillet over high heat. I am putting together a Weight Watcher's Thanksgiving. I found this on Rachael Ray's Yum-O site. I will be using pure maple syrup as it has less sugar content than the traditional sugars used in sweet potatoes. This sounds great!
