Marinated Grilled Steak with Poblano Peppers image

1/3 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
zest and juice from 1 lime
2 cloves garlic, minced
1 Tbsp. roasted ground cumin
1 tsp. chili powder
1 beef skirt steak (1 lb.)
2 poblano chiles
2 onions, cut into thick wedges
1 lime, cut into 4 wedges

Steps:

  • Heat greased grill to medium-high heat.
  • Mix dressing, lime zest, juice, garlic and spices until blended; reserve 1 Tbsp. mixture. Pour remaining mixture over steak in shallow dish; turn to evenly coat both sides. Refrigerate 1 hour to marinate.
  • Meanwhile, cut chiles in half; remove and discard seeds and ribs. Spray with cooking spray; grill 5 to 7 min. or until crisp-tender and slightly charred, turning occasionally. Remove from heat; place in paper bag. Peel and discard skin. Remove steak from marinade; discard marinade.
  • Grill steak 5 min.; turn steak. Add onions, brushed with reserved dressing mixture; grill 5 min. or until steak is medium doneness (160°F) and onions are tender, turning onions after 3 min. Serve steak with onions, roasted chiles and lime wedges.

One of our favorites adapted from Eatingwell. This recipe is full of bold flavors. We also think the sauce would make a great salad dressing.

1/2 cup fresh cilantro leaves, chopped
2 tablespoons red wine vinegar
2 tablespoons reduced-fat sour cream
1 teaspoon chili powder (I use Ancho)
1/4 teaspoon ground cumin
1/2 teaspoon salt, divided
1 1/4 lbs steak, cut into 2-inch pieces
2 poblano peppers, cut into 2-inch pieces
1 sweet onion, cut into 2-inch squares
1 teaspoon extra virgin olive oil

Steps:

  • If using Bamboo Skewers start them soaking in water so they don't burn on the grill.
  • Combine cilantro, vinegar, sour cream, garlic, chile powder, cumin and 1/4 teaspoon salt in a small bowl. Set aside.
  • Preheat grill to high.
  • Toss steak, peppers and onion pieces with oil and remaining salt in a bowl. Thread steak, peppers and onions onto eight skewers. **I thread all my meats and veggies seperate as we like our steak medium rare but prefer our peppers and onions to be a little more charred. I also "double" thread the veggies (using 2 skewers, about 1/2" apart) so the veggies are easier to turn on the grill and don't just "spin" on the skewer. It takes some time but is worth it. Grill all to desired doneness.
  • Serve with sauce.

  • While the beef is marinating, prepare the cilantro sauce. Add the ingredients to a blender and puree on high until smooth. You are looking for a rich, creamy consistency. If your sauce is too oily, add some more cilantro/parsley, if it is too thick simply thin it with a little olive oil. Season with added vinegar and sea salt to taste, and set aside.
  • Once the beef has marinated, begin assembling the skewers, alternating between beef and vegetables. There should be enough ingredients to create 8 skewers, with 4 pieces of beef per skewer, 1 mushroom, 2 cherry tomatoes, bell pepper and red onion.
