PORK ENCHILADAS RECIPE

These pork enchiladas are packed with red sauce, cheese, and onions in soft corn tortillas. The meat is cooked in an Instant Pot for quick preparation.

For the Pork:
1 (4-pound) bone-in Boston butt roast
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons dried oregano
1 tablespoon brown sugar
1 teaspoon coriander
1 teaspoon chili powder
1 tablespoon garlic (minced)
3 tablespoons onion (minced)
2 teaspoons olive oil
1 (15-ounce) can red enchilada sauce
2 cups chicken broth
2 tablespoons apple cider vinegar
For the Enchiladas:
8 to 10 corn tortillas
2 cups Monterey Jack cheese (shredded)
1 small red onion (thinly sliced)
For Serving:
Sour cream

Steps:

  • Gather the ingredients.
  • Trim fat off of pork. Try to get as much as you can, but you can also leave some for flavor.
  • Rub pork with salt, pepper, oregano, brown sugar, coriander, and chili powder.
  • Place roast in Instant Pot insert. Add garlic, onion, olive oil, enchilada sauce, chicken broth, and vinegar. Cover and allow it to marinate in refrigerator for at least 1 hour but up to 24 hours.
  • Place insert into the Instant Pot. Turn roast in the liquid. Cook on meat setting for 60 minutes. Allow steam to escape when timer goes off.
  • Remove roast from liquid and cool slightly. Shred meat with 2 forks until you have small pieces. You probably will not use all of the pork, you can set it aside for another recipe. You can also pull out the bone and use it for another recipe or dispose.
  • Leave liquid in the Instant Pot insert. Cook on sauté setting, uncovered for 8 to 10 minutes or until sauce has reduced by one-third.
  • Preheat oven to 350 F. Add a 1/2 cup of sauce to shredded pork and toss to coat. Set aside pork and remaining sauce in separate bowls while you prepare tortillas.
  • Heat oil in a small sauté pan on medium-high heat. Add a tortilla to pan and cook for 20 seconds per side. Remove from oil with tongs and place on a plate. Continue until you have fried all the tortillas. They are not supposed to get crispy; the oil just helps to make them pliable.
  • Dip each tortilla into the sauce you set aside and coat both sides.
  • Stack tortillas on a plate until you've coated all of them. Pour a cup of sauce into bottom of a 9 x 13-inch casserole dish. Fill each tortilla with a 1/4 cup of pork, along with a few slices of red onion and a few tablespoons of grated Monterey Jack cheese.
  • Roll up tortilla around filling and place seam-side down into baking dish. Fill the baking dish tightly with enchiladas.
  • Pour another cup of the sauce of top of enchiladas and then top with remainder of shredded Monterey Jack cheese.
  • Bake for 25 minutes, uncovered, until cheese is melted and browned and sauce is bubbly.

1 1/2 lb cubed pork
2 can(s) enchilada sauce
2 can(s) chopped green chilies
1 1/2 Tbsp granulated garlic
oil (enough for browning pork)
1 large onion (chopped)
24 yellow corn tortillas
1 lb mild cheddar cheese (shredded)
1/2 c flour (for dredging pork & making gravy)

Steps:

  • 1. Preheat oven to 400 degree's. Dredge pork in flour and then fry in oil until browned and done. Add 2 TBS flour to hot mixture to start a gravy.
  • 2. Add 2 cans Enchilada Sauce, Green Chilies and Garlic. If the mixture seems too thick, you can add a small amount of water to it.
  • 3. Heat Corn Tortilla's in a small amount of hot oil to soften them. Drag the Tortilla's through the gravy mixture, one at a time. Layer in a 9x13 greased pan. After the first 6 Tortilla's are placed in the pan, sprinkle cheese and some onion on each plus a small amount of the gravy mixture. Begin the process again, layering to a stack of four. Sprinkle the top tortilla with cheddar cheese then place in oven. Bake approximately 20 minutes - or until bubbling.

2/3 cup chopped green pepper
2 teaspoons canola oil
1 garlic clove, minced
1 cup shredded cooked chicken
1 cup canned black beans, rinsed and drained
1/3 cup thinly sliced green onions
1/2 cup enchilada sauce
1/2 cup picante sauce
4 corn tortillas (6 inches)
1 cup shredded cheddar cheese
Sour cream and shredded lettuce, optional

Steps:

  • In a large skillet, saute pepper in oil for 3 minutes. Add garlic and cook 2 minutes longer or until pepper is crisp-tender. Stir in the chicken, beans and onions; heat through. Transfer to a bowl and keep warm. , In the same skillet, combine enchilada and picante sauces. Coat both sides of one tortilla with sauce mixture; place in a greased 9-in. pie plate. Top with a third of the chicken mixture and 1/4 cup cheese. Repeat layers twice. Top with remaining tortilla, sauce and cheese. , Cover and bake at 350° for 18-22 minutes or until heated through. Remove to a serving plate and cut into wedges. Serve with sour cream and lettuce if desired.

2 tablespoons extra-virgin olive oil
8 ounces pork blade steak, diced
Garlic salt
Freshly ground pepper
2 cloves garlic, minced
3 4-ounce cans green chile peppers, drained and diced
1 cup canned diced tomatoes
1 1/2 teaspoons red pepper flakes
1/4 cup all-purpose flour
1 cup New Mexico red chili powder
2 cloves garlic
1/2 cup all-purpose flour
Garlic salt
Freshly ground pepper
2 tablespoons extra-virgin olive oil
8 ounces beef top sirloin, diced
12 6-inch corn tortillas, toasted or lightly fried
1 cup shredded cheddar cheese
Nonstick cooking spray
4 large eggs
Kosher salt and freshly ground pepper
Shredded lettuce and diced tomatoes, for garnish

Steps:

  • Make the green sauce: Heat the olive oil in a large saucepan over medium-high heat. Season the pork with garlic salt and pepper, add to the pan and brown on all sides. Add the minced garlic and cook 30 seconds, then add the chiles, tomatoes, red pepper flakes and 3 cups water. Simmer until the pork is tender, about 1 hour. Combine the flour and 1 cup water in a blender until smooth, then whisk into the sauce and simmer until the sauce thickens, about 5 more minutes.
  • Meanwhile, make the red sauce: Process the chili powder, garlic and 5 cups water in a blender until smooth. Season the flour with garlic salt and pepper in a shallow dish. Heat the olive oil in a large skillet over medium-high heat. Toss the beef in the flour, then add to the skillet to brown on all sides. Pour in the chili powder mixture and simmer until the beef is tender, about 15 minutes.
  • Make the enchiladas: Preheat the broiler. Place 4 tortillas on a baking sheet. Sprinkle each with cheese, then top with green sauce on one side and red on the other. Repeat to make two more layers. Top the stacks with more cheese and broil until melted, 3 to 5 minutes. Meanwhile, mist a nonstick skillet with cooking spray and fry the eggs as desired, then season with salt and pepper. Top each enchilada stack with lettuce, tomatoes and a fried egg.

GREEN CHILE STACKED ENCHILADAS

This is something I put together one night when I was trying to use up some random ingredients I had on hand. Came out really 'company good'. Soooo not good for a diet though. Makes a large pan.

1 tablespoon vegetable oil, or as needed
16 (6 inch) corn tortillas, or more to taste
4 boneless skinless chicken thighs, cut into chunks
½ onion, diced
½ cup diced mild green chiles
1 (28 ounce) can green chile enchilada sauce
1 (8 ounce) package shredded Monterey Jack cheese
4 ounces shredded mozzarella cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium-high heat. Run 1 tortilla through the hot oil until softened, 2 to 3 seconds per side; transfer to a plate. Layer a dry tortilla on top of the cooked tortilla on the plate. Cook another tortilla in the hot oil and stack on the dry tortilla. Repeat process until all the tortillas are used.
  • Cook and stir chicken and onion in the same skillet, adding more oil if needed, until chicken is 2/3 done, about 10 minutes. Add green chiles; cook and stir until chicken is no longer pink in the center and onions are tender, 5 to 10 minutes more.
  • Layer tortillas in a 9x13-inch baking dish; top with chicken mixture, enchilada sauce, Monterey Jack cheese, and mozzarella cheese. Repeat layering until all ingredients are used, ending with sauce and cheese.
  • Bake in the preheated oven until cheese is golden brown, 35 to 45 minutes. Cool until set, 5 to 10 minutes.

1 jar (16 oz.) green salsa
1 container (8 oz.) reduced fat sour cream
3/4 lb pork tenderloin, diced
1 large onion, chopped
1 medium yellow or green bell pepper, chopped
3 cloves garlic, finely chopped
3/4 cup shredded reduced fat mozzarella cheese
4 fat free flour tortillas (6-8 in.)

Steps:

  • Preheat oven to 400 degrees F. Spray 9-inch round baking dish with cooking spray. Mix salsa and sour cream; set aside.
  • Spray 10-inch skillet with cooking spray; heat over medium high heat. Cook pork, onion, bell pepper and garlic in skillet about 6 minutes; stirring occasionally, until pork is no longer pink. Stir 2 cups of the salsa mixture into pork mixture. Cook an additional minute, stirring frequently; remove from heat. Stir in 1/2 cup of the cheese.
  • Place 1 tortilla in baking dish. Top with 1/3 of the pork mixture. Repeat layers finishing with a tortilla. Spoon remaining salsa mixture on top; sprinkle with remaining 1/4 cup cheese.
  • Cover loosely with foil and bake 10 min.

My husband made a bachelor's version of this when we were dating in college. I've since added some healthier stuff to the mix. It's a favorite with the kids because they can choose what they want in their "stack" and it's a great alternative to eating out since it's so fast. Just dump and heat. Enjoy!

1 lb lean ground beef
1 (13 ounce) can enchilada sauce
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can sweet corn
2 cups shredded cheddar cheese
16 corn tortillas

Steps:

  • In a small frying pan, brown then drain the ground beef.
  • In a small sauce pot, heat enchilada sauce.
  • In another sauce pot, combine the black beans and corn. Cover and heat.
  • I like to warm the tortillas in the microwave then put them in one of those handy plastic tortilla warmers. It's just better when they're warm and soft. (If you really want to go all out, try making your own tortillas with masa mix. You just add water and they taste sooooo much better!).
  • Now just make an assembly line. I usually have the two sauce pans on the front burners and the rest on paper plates to the side. Pile on in this order: tortilla, meat, bean/corn combo, sauce, cheese. Repeat so you have two layers. Yummy and quick!
  • Some other good toppings include sour cream, guacamole and olives.

2 cups shredded cooked pork
1 (10 ounce) can enchilada sauce
½ teaspoon onion powder
1 cup reduced fat sour cream
1 (4 ounce) can chopped green chilies
2 cups shredded Colby-Monterey Jack cheese
1 (10.75 ounce) can condensed tomato soup
¼ teaspoon garlic powder
½ teaspoon ground cumin
6 (7 inch) flour tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine cooked pork, enchilada sauce, onion powder, 1/2 cup sour cream, green chilies, and one cup of the shredded cheese in a large bowl. In a separate bowl, stir together tomato soup, remaining 1/2 cup sour cream, garlic powder, and cumin.
  • Pour a thin layer of the tomato soup mixture into a 9x13 baking dish. Spread pork mixture down the center of each tortilla. Roll tortillas to enclose filling; place seam side down in the baking dish. Pour the remaining soup mixture over the filled tortillas. Top with the remaining 1 cup cheese.
  • Bake in preheated oven until hot and bubbly, about 30 minutes.

1 tablespoon vegetable oil
1 onion, chopped fine
3 tablespoons chili powder
2 teaspoons ground cumin
2 (8 ounce) cans tomato sauce
3/4 cup low sodium chicken broth
1/2 teaspoon salt
1 rotisserie-cooked chicken, skin discarded, meat shredded into bite sized pieces
1 1/2 cups mexican cheese, shredded
2 tablespoons fresh cilantro, chopped fine
12 (6 inch) corn tortillas

Steps:

  • 1. adjust oven rack to middle position and heat oven to 400 degrees. Heat oil in large saucepan over medium high heat until shimmering . Cook onion unitl softened, about five minutes. Add chili powder and cumin and and cook unitl fragrant about thirty seconds. Stir in tomato sauce, broth, and salt and simmer until slightly thickened about five minutes. Cover and keep warm.
  • 2. Toss Chicken, 1/4 cup sauce, 1 cup cheese, and cilantro in bowl. Spread 1/2 cup sauce tortillas on plate and microwave until pliable about one minute. Place four tortillas on bottom of dish and cover with half chicken mixture. Top with four tortillas and and half of remaining sauce. Cover with remaining chicken mixture, tortillas, sauce and cheese.
  • 3. Wrap with foil and bake until heated through, about 15 minutes. Remove foil and bake until cheese is light browned, about five minutes.
