RICK EASTON'S PIZZA WITH PEPPERS



Rick Easton's Pizza With Peppers image

In order to bring out all their flavor and sweetness, you must sauté bell peppers before putting them on this variation of the Pittsburgh-based baker and cook Rick Easton's pizza; but that's hardly any work at all. (If you like, add a couple of semihot peppers to the mix.) The mozzarella is a nice touch, as is the rosemary, but almost any herb will work beautifully here. Don't skimp on the olive oil, and don't underbake the pie; it should be good and brown on the bottom.

3/4 teaspoon (2 grams) yeast
1 7/8 cups lukewarm water
3 1/2 cups or 500 grams bread flour, plus more for dusting
3 teaspoons or 8 grams kosher or sea salt
4 tablespoons or 40 grams extra-virgin olive oil
5 bell peppers of varying colors
8 ounces fresh mozzarella, torn into small pieces
1 tablespoon chopped rosemary leaves
2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 teaspoon salt
Pepper to taste

Steps:

  • In a comfortably large, preferably rectangular plastic container, dissolve the yeast into 1 3/4 cups of lukewarm water. Mix in the flour with your hand, squishing it together, just until the flour is absorbed. The dough will be very wet and shaggy. Remove what stuck to your fingers, and mix into the dough. Cover with a lid or plastic wrap, and rest for 20 minutes at room temperature.
  • Dissolve the salt in remaining 1/8 cup of water, and mix with your hand into the dough. Don't worry if it doesn't all mix in. Cover with a lid or plastic wrap, and rest for another 20 minutes at room temperature.
  • With wet hands, release the dough from the sides of the container. Coat the top of the dough with 1 tablespoon of oil, and make a trifold or letter fold by lifting up the dough one-third of the way through and letting the end drop and fold underneath. Repeat this action on the other side so that the seam is on the bottom. Cover with a lid or plastic wrap, and rest for 1 hour in the refrigerator. Repeat this process two more times. After the third fold, rest the dough in the refrigerator for about 24 hours. Sometime halfway through resting, repeat the trifold with oil one last time.
  • If you have a pizza stone, slide it on the lowest rack or on the floor of your oven, and heat oven to 500. Heat for at least 30 minutes and preferably longer before baking. Slice the bell peppers thinly, and sauté, stirring frequently, over medium heat with 2 tablespoons of extra-virgin olive oil and salt until tender, about 15 to 20 minutes.
  • Lightly grease an 18-by-13-inch jellyroll pan with olive oil. (A cookie sheet of a similar size makes a good alternative.) Wipe the pan clean with a dry paper towel; it's important not to bake the pizza on too much oil. Flip the dough out onto a floured surface, and gently press out into a rectangle 1/2-to-3/4-inch thick, being careful not to deflate the dough too much. Place one forearm over the dough, and use the other hand to flip the dough over the forearm and then into the pan, leaving the floured side up. Rearrange the dough on the pan, again pressing only lightly.
  • Spread the topping evenly across the dough, drizzle generously with oil and bake on the pizza stone (or directly on the bottom of the oven or lowest rack) for 5 minutes. Move the pizza to the middle rack in the oven, and continue to bake for 10 to 15 more minutes or until golden brown.
  • Using a bench scraper or metal spatula, scoop under the pizza, and scrape to release it from the pan. This may take some blind faith and a bit of elbow grease. Slide out onto a cutting board, and slice into pieces using a chef's knife, scissors or pizza cutter. Serve immediately or at room temperature, or reheat.
  • Rick Easton creates new variations seasonally, and so can you. Some of his current favorites are:
  • Bake topped only with extra-virgin olive oil, then, when warm, top with Gorgonzola cheese, sautéed onions, grilled pear, fried sage, salt and pepper.
  • Bake with roast puréed pumpkin and fresh mozzarella, then top with walnuts and fresh arugula, olive oil, a light squeeze of lemon juice, salt and pepper.
  • Bake with braised leeks and sautéed apples, then top with thinly sliced lonzino (cured pork loin), or other cured meats like dry coppa, bresaola or prosciutto, extra-virgin olive oil, salt and pepper.

MUSSEL PIZZA

One bite of this and I'm transported to a seaside town in Italy or Provence. Keep some dough in the freezer and you can make this very quickly.

Number Of Ingredients 10

16 to 20 black mussels (about 10 to 12 ounces)
1 whole-wheat pizza dough (1/2 batch, see recipe)
3 tablespoons extra virgin olive oil
2 large garlic cloves, minced or puréed
3/4 cup canned crushed or puréed tomatoes
Salt and freshly ground pepper
1/4 cup chopped fresh parsley
Dried red pepper flakes
Dried oregano
1/2 ounce Parmesan, freshly grated (2 tablespoons)

Steps:

  • Clean the mussels. Inspect each one carefully and discard any that have opened (if some are partly opened, tap them with your finger, and if they close back up they are O.K.) or have cracked shells. Place in a large bowl, fill the bowl with cold water and rinse several times, swishing the mussels around in the water, pouring out the water and refilling. Clean the shells, if necessary, with a brush or the end of one of the mussels, and pull out the beards - the hairy attachments emerging from the shells. Do not do this until just before cooking, or the mussels will die and spoil.
  • Preheat the oven to 450 degrees, preferably with a pizza stone in it. Roll out the pizza dough and place on a peel or on a lightly oiled pan.
  • Bring 1 cup water or white wine to a boil in a large saucepan, pot or lidded skillet, and add the mussels. Cover and steam until they open, 3 to 4 minutes, stirring the mussels after the first 2 minutes. Using tongs, transfer the mussels to a bowl and discard the water or wine from the pan. When the mussels are cool enough to handle, remove them from their shells and toss with 2 tablespoons of the olive oil, 1 of the garlic cloves, a pinch of red pepper flakes and half of the parsley.
  • Stir the remaining garlic into the tomatoes and season to taste with salt and pepper. Brush the pizza dough, but not the rim, with the remaining tablespoon of olive oil. Spread the tomato sauce on the pizza and sprinkle with chili flakes and oregano or marjoram. Place in the hot oven and bake 10 minutes. Remove from the heat and arrange the mussels over the pizza. Pour on any marinade and return to the oven. Bake for another 10 minutes, or until the crust is brown and crispy on the edges. Remove from the heat, sprinkle with the remaining parsley and the Parmesan, and serve.

SCRAMBLED PEPPERS AND EGGS



Scrambled Peppers and Eggs image

As in many Mark Bittman recipes, the idea here is more vegetables -- in this case, peppers -- than protein. It works because except for the jalapeño, none of the peppers is hot.

2 tablespoons olive oil
1 small onion, chopped
2 red bell peppers, chopped
2 poblano or Anaheim chiles, chopped
1 fresh hot green chile (like jalapeño), chopped, optional
1 tablespoon minced garlic
Salt and ground black pepper
4 eggs, beaten

Steps:

  • Put oil in a large skillet over medium-high heat. Add onion and cook, stirring occasionally, until it's translucent, 1 or 2 minutes.
  • Add peppers, chiles and garlic, and sprinkle with salt and pepper. Cook, stirring occasionally, until peppers are brightly colored but not too soft, 4 to 6 minutes.
  • Reduce heat to medium-low and pour in eggs. Cook, stirring occasionally with a wooden spoon or rubber spatula, until eggs are cooked, 3 to 8 minutes. Serve on toast or over rice, or wrapped in a flour tortilla.

If you've ever craved pizza and a cheesesteak at the same time -- and who hasn't? -- you're in luck; this pizza incorporates the flavors of both for a hearty dinner the whole family will love.

All-purpose flour, for work surface
1 pound pizza dough, thawed if frozen, divided in half
5 teaspoons extra-virgin olive oil
10 ounces sirloin steak (1 inch thick)
Coarse salt and ground pepper
1 medium red onion, thinly sliced
2 bell peppers (not green), stemmed, seeded, and thinly sliced lengthwise
4 ounces Monterey Jack cheese, shredded (1 cup)
1/4 cup coarsely chopped fresh parsley leaves

Steps:

  • Preheat oven to 500 degrees, with racks in upper and lower thirds. On a lightly floured surface, roll out 1 dough half into a 14-inch oval. Transfer dough to a parchment-lined baking sheet and brush with 1 teaspoon oil. Repeat with remaining dough half. Bake until crusts are puffed and golden brown, about 14 minutes, piercing large air bubbles with a knife, if necessary, and rotating sheets halfway through.
  • Meanwhile, pat steak dry and season with salt and pepper. In a large cast-iron or other heavy skillet, heat 1 teaspoon oil over medium-high until almost smoking. Cook steak until medium-rare, 6 to 8 minutes, flipping once. Transfer to a cutting board, tent with foil, and let rest 10 minutes.
  • In skillet, heat 2 teaspoons oil over medium. Add onion and bell peppers and season with salt and pepper. Cover and cook, stirring occasionally, until beginning to soften, about 5 minutes. Uncover and cook until vegetables are crisp-tender and dark brown in spots, 8 minutes.
  • Thinly slice steak against grain. Top crusts with steak, vegetables, and cheese. Bake pizzas just until cheese is melted, 3 minutes. Sprinkle with parsley before serving.

PIZZA WITH SPRING ONIONS AND FENNEL



Pizza With Spring Onions and Fennel image

Fennel and spring onions, cooked gently until they begin to caramelize, make a sweet topping for a pizza. Fennel is an excellent source of vitamin C and a very good source of fiber, folate and potassium. Fennel also contains many phytonutrients, including the flavonoids rutin and quercitin, as well as a compound called anethole, mainly responsible for its anise-y flavor, that may have anti-inflammatory properties.

2 tablespoons extra virgin olive oil
1 medium size sweet spring onion, chopped, about 1 cup
Salt, preferably kosher salt
freshly ground pepper
1 1/4 pounds trimmed fennel bulbs, tough outer layers removed, cored and chopped
2 large garlic cloves, minced
2 tablespoons minced fennel fronds
1/2 recipe whole wheat pizza dough (see recipe)
Parmesan

Steps:

  • Preheat the oven to 450 degrees, preferably with a baking stone in it. Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet, and add the onion and about 1/2 teaspoon salt. Cook, stirring often, until the onion is tender, about five minutes. Add the fennel and garlic, and stir together. Cook, stirring often, until the fennel begins to soften, about five minutes. Turn the heat to low, cover and cook gently, stirring often, until the fennel is very tender and sweet and just beginning to color, about 15 minutes. Season to taste with salt and pepper. Stir in the chopped fennel fronds, and remove from the heat.
  • Roll or press out the pizza dough and line a 12- to 14-inch pan. Brush the pizza crust with the remaining tablespoon of olive oil and sprinkle on the Parmesan. Spread the fennel mixture over the crust in an even layer. Place on top of the pizza stone, and bake 15 to 20 minutes, until the edges of the crust are brown and the topping is beginning to brown. Remove from the heat. Serve hot, warm or room temperature.

PIZZA WITH CARAMELIZED ONIONS, RICOTTA AND CHARD



Pizza With Caramelized Onions, Ricotta and Chard image

This luxurious pizza is topped with tender caramelized onions spread over a creamy mixture of ricotta, Parmesan cheese and chopped Swiss chard.

Number Of Ingredients 11

2 tablespoons extra virgin olive oil
1 1/4 pounds onions, sliced
1 teaspoon chopped fresh thyme leaves
2 garlic cloves, minced
Salt
freshly ground pepper
1/2 pound chard, stemmed, leaves washed
1 14-inch pizza crust (1/2 batch pizza dough)
3/4 cup ricotta (6 ounces)
2 ounces Parmesan, grated 1/2 cup, tightly packed
1 egg yolk

Steps:

  • Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
  • While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
  • Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
  • In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
  • Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.

Everything is fair game at breakfast - and long has been, of course - but to most Americans it doesn't seem appropriate to start making what amounts to dinner at 7 in the morning. This pizza could be considered dinner or lunch fare, but it makes a hearty first meal of the day.

1/4 cup extra virgin olive oil, more for pan
1/2 cup milk, preferably whole
Salt
1 cup coarse cornmeal
Freshly ground black pepper
1 small onion, chopped
1/2 cup (about 4 ounces) chopped pancetta
1 pound spinach, washed, trimmed and dried
1 to 1 1/2 cups Gorgonzola cheese, crumbled

Steps:

  • Heat oven to 450 degrees; brush a layer of olive oil on a pizza pan or cookie sheet. In a medium saucepan over medium-high heat, combine milk with 2 1/2 cups water and a large pinch of salt. Bring just about to a boil, reduce heat to medium, and add cornmeal in a steady stream, whisking all the while to prevent lumps from forming. Turn heat to low and simmer, whisking frequently, until thick, 10 or 15 minutes. If mixture becomes too thick, whisk in a bit more water; you want a consistency approaching thick oatmeal.
  • Stir 1 tablespoon oil into cooked cornmeal (polenta). Spoon it onto prepared pan, working quickly so polenta does not stiffen; spread it evenly to a thickness of about 1/2 inch all over. Sprinkle with salt and pepper, cover baking sheet with plastic wrap and put it in refrigerator until it is firm, an hour or more (you can refrigerate polenta overnight if you prefer).
  • Put polenta in oven and bake for 25 to 30 minutes, or until it begins to brown and crisp on edges. Meanwhile, put two tablespoons oil in a large skillet over medium heat. Add onion and pancetta and cook, stirring occasionally, until onion is soft and pancetta is nicely browned, about 10 minutes. Use a slotted spoon to take onion and pancetta out of pan; set aside. Add spinach to skillet and sauté until it releases its water and pan becomes dry; sprinkle with salt and lots of pepper.
  • Take polenta out of oven, sprinkle with Gorgonzola, then spread onion-pancetta mixture and spinach evenly on top of cheese; drizzle with another tablespoon olive oil. Put pizza back in oven for two minutes, or until cheese begins to melt and pancetta and vegetables are warmed through. Cut into slices and serve hot or at room temperature.
