ENSALADA DE PULPO: OCTOPUS SALAD

1 (5 pound) octopus
2 bay leaves
2 lemons, cut in half, plus 2 more juiced
3 peppercorns
1/2 cup white wine
Hot pepper sauce
1 pound squid, cleaned, tubes only, tentacles reserved for another dish
1 red tomato, medium dice
1 yellow tomato, medium dice
1 red onion, small dice
4 scallions, sliced
2 cups cooked garbanzo beans (chickpeas)
1/4 cup pitted Kalamata olives, sliced
1/4 cup olive oil, plus 1/4 cup
3 tablespoons red wine vinegar
1 tablespoon chopped basil
1 tablespoon chopped cilantro
Salt and freshly ground black pepper
5 annatto seeds
4 garlic cloves, sliced
2 (14-ounce) cans hearts of palm, drained and quartered lengthwise

Steps:

  • In a large stockpot, combine octopus with bay leaves, halved lemons, peppercorns, white wine, hot pepper sauce. Cook until the octopus is very tender, about 2 hours. Strain, cool, and peel the octopus. Clean squid and open tubes flat. In a bowl, season squid and octopus. Grill quickly for 2 minutes on each side. Cool and slice thinly. In a large bowl, combine squid, octopus, tomatoes, onions, scallions, garbanzo beans, and olives. In a separate bowl, prepare a vinaigrette with 1/4 cup oil, vinegar, basil, and cilantro. Season with salt and pepper. Pour on top of the seafood salad and toss well to combine. Set aside. In a saute pan, heat up the remaining 1/4 cup oil with annatto seeds. Remove seeds and add the sliced garlic. Cook until cloves are golden brown. Add the hearts of palm. Continue to cook until the hearts of palm are brown. Add the lemon juice, and season. Serve the salad over the roasted hearts of palm.;

3 fresh bay leaves
The whole peel and juice of 1 lemon
1 1/2 pounds calamari bodies and tentacles, cleaned, bodies cut into 1/2-inch rings
1 cup pitted, slivered green olives
4 inner stalks celery, with leaves, sliced thin on the bias
1 cup roasted red-bell-pepper strips
1/2 teaspoon kosher salt
1/4 teaspoon dried oregano
1/4 teaspoon peperoncino flakes, or to taste
3 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh Italian parsley

Steps:

  • Pour 2 inches of water into a large Dutch oven or pot and bring to a boil. Add the bay leaves and lemon peel, and continue to boil for a few minutes, until they release their aromas.
  • Set a colander or steamer over (but not touching) the water. Slip the calamari rings and tentacles into the colander or steamer, adjust the heat so the water is simmering, and cover. Cook until the calamari is just cooked through and has gone from opaque to translucent, about 6 to 7 minutes.
  • Combine the olives, celery, roasted pepper, salt, oregano, peperoncino, and lemon juice in a large bowl. When the calamari is done, add it to the bowl, drizzle with the olive oil, and toss. Sprinkle in the parsley, toss again, and serve warm or at room temperature.

You could either use squid or octopus for this salad, I have trouble finding octopus most times so I used squid. I normally buy my squid/octopus already cleaned and gutted. If your squid/octopus needs to be clean then remove the guts (discard) and legs from the body and rinse. Cut off the tips on the legs and discard, then chop the remaining leg pieces and body into bite-size chunks. Original recipe comes from 'Harumi's Japanese Home Cooking' by Harumi Kurihara but I have twinkled with it

mixed salad green, to taste
700 g squid or 700 g baby octopus, fresh
salt, to taste
pepper, to taste
2 tablespoons olive oil
1 garlic clove, crushed
1 pinch chili powder, to taste (shichimi togarashi)
3 tablespoons low sodium soy sauce
1 tablespoon freshly grated gingerroot
1/2 teaspoon caster sugar (to taste, you could add more or less)

Steps:

  • Wash, pat dry and cut salad leaves into bite-size pieces, then arrange the salad leaves into serving dish. Set aside.
  • For the squid/octopus cut the body and legs into 1.5 cm thick then season with salt and pepper.
  • Heat the olive oil in a frying pan, add the garlic and fry until you can smell its aroma.
  • Add the squid/octopus into the pan with the garlic and cook until done. Squid/octopus' colour will change and it will no longer be transparent, Please NOTE do not overcook as it will becomes tough.
  • Remove from heat and place on top of the prepared salad leaves in serving dish.
  • Return frying pan to the heat, add the soy sauce, ginger, sugar and mix well with any remaining cooking juices from the squid/octopus, making sure that all the sugar dissolves.
  • Pour dressing on top of squid/octopus then sprinkle some chilli powder or shichimi togarashi.
  • If there is a lot of dressing you could serve it separately and dinners could help themselves if they wish for more dressing.
  • Enjoy.

1 cup chopped celery
1 medium onion, chopped
1 teaspoon oregano
1/4 teaspoon allspice
1/2 cup fresh parsley, chopped
1/3 cup extra virgin olive oil
1/4 cup white wine vinegar or 1/4 cup lemon juice

Steps:

  • Blanche the squid circles in boiling water until the circles curl (30-60 seconds or exactly as long as it takes to say a Hail Mary).
  • Drain and place the squid, onions and celery in a large bowl.
  • Mix in remaining ingredients and toss.
  • Chill for at least 1/2 hour before serving.

1 1/2 lbs cleaned squid
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar, to taste
1/3 cup extra virgin olive oil
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup thinly sliced red onion (1 small onion, thinly sliced)
1/3 cup pitted kalamata olive, halved lengthwise
2 cups cherry tomatoes (3/4 lb) or 2 cups grape tomatoes, halved if large (3/4 lb)
2 celery ribs, sliced (cut into 1/4-inch-thick slices)
1/2 cup fresh flat leaf parsley, plus more to taste
2 tablespoons chopped fresh basil
1/4 cup crumbled feta (optional)

Steps:

  • (If you got whole squid, clean them first: gently pull the head and tentacles away from the body, then pull out the backbone from inside the body and discard it and the intestines and ink sac; cut the tentacles from the head just below the eyes and discard head; remove membrane from body.).
  • Rinse all the squid under running water and pat dry.
  • Cut the tentacle bunches in half, and cut the bodies into 1/4 to 1/3-inch wide rings; cut the wings from the bodies.
  • Fill a 5 or 6 quart pot full of water, add a couple teaspoons of salt, and bring it to a boil.
  • Prepare a bowl of ice water.
  • Cook all the prepared squid pieces in the boiling water until just opaque, a brief 40 to 60 seconds, then remove from pot and immediately plunge into the ice water to halt the cooking.
  • When squid has cooled, transfer to a colander, let drain, and pat dry; set aside.
  • In a small bowl, whisk together the lemon juice, vinegar, oil, garlic, salt, and pepper; add in onion, stir, and let the dressing stand for 5 minutes.
  • In a large bowl, combine the cooked squid, olives, tomatoes, celery, parsley, basil, and feta (if using), then toss with the dressing.
  • Let salad stand, tossing occasionally, for at least 15 minutes to allow the flavors to develop.
  • Note: although good eaten right after preparation, it's even better if you chill it for 8 hours - tossing occasionally - then bring it to room temperature before serving (about 1 hour); also, some people prefer the onion to be sautéed lightly before adding it to the salad.
  • Makes 4 main course servings, 8 side dish servings.

This dish could also be used with calamari. I have been looking for a squid/calamari dish that does not have Szechuan pepper as I am unable to find it. This recipe comes from The Australian Womans Weekly Simply Seafood book.

500 g squid, cleaned hoods only
1/2 teaspoon cracked black pepper
1 teaspoon sea salt
1/2 teaspoon lemon pepper seasoning
1 tablespoon peanut oil
1 lebanese cucumber, sliced thinly (about 130 grams)
2 green onions, sliced thinly (also known as spring onions)
250 g cherry tomatoes, halved
1/3 cup roasted peanuts, chopped coarsely
1/2 cup fresh mint leaves, loosely packed
1 tablespoon red wine vinegar
1 tablespoon peanut oil

Steps:

  • Cut squid hoods along one side and open out. Using a small sharp knife, score inside of hoods in a diagonal pattern, without cutting all the way through. This will allow the squid to curl during cooking. Cut each squid hood into eight pieces.
  • Sprinkle squid with combined pepper, salt and lemon pepper seasoning.
  • Heat oil in wok or large frying pan, stir-fry squid in batches until curled and just cooked through. Serve squid with cucumber salad.
  • Cucumber Salad: Combine cucumber, onion, tomato, nuts and mint in medium bowl. Add combined vinegar and oil, toss to combine.
