EASY SAUTéED SQUASH



Easy Sautéed Squash image

This sautéed squash is a quick dish and the perfect veggie addition to any summertime meal! It's healthy, tastes yummy, and cooks in less than 10 minutes!

Number Of Ingredients 6

2 tbsp olive or avocado oil
4 medium yellow squash (diced)
1/2 white or yellow onion (diced)
1 tsp dried basil
1 tsp salt
1 tsp garlic powder

Steps:

  • Add oil to a skillet on medium heat.
  • Once oil is hot add diced squash and onion to skillet. Sauté for 2 to 3 minutes without stirring. This will get you that bit of browning we want. Then stir.
  • Season with salt, garlic powder, and basil.
  • Continue to cook, stirring occasionally, for another 5 to 8 minutes or until squash is tender.

This delicious recipe is from Emeril Lagasse 20 - 40 - 60 Fresh Food Fast Cookbook. I often use a combination of large yellow squash and zucchini for color. Wonderful!!

Number Of Ingredients 8

2 tablespoons unsalted butter
1 tablespoon olive oil
8 ounces carrots, cut into small dice
1 1/2 lbs large yellow squash, halved lengthwise and then sliced into 1/4-inch thick half-moons
2 tablespoons thinly sliced shallots
1 1/2 teaspoons kosher salt
3/4 teaspoon fresh ground white pepper
1 tablespoon chopped fresh tarragon

Steps:

  • Set a 12" saute pan over medium-high heat, and once it is hot add the butter and olive oil.
  • When the butter has melted, add the carrots and cook, stirring often, for 2 minutes.
  • Add the yellow squash, shallot, salt and white pepper to the pan and continue to cook, stirring often, until the squash has wilted and released most of its moisture -- about 6 minutes.
  • Sprinkle with the tarragon and toss to blend.
  • Serve hot.

QUICK SAUTEED SUMMER SQUASH



Quick Sauteed Summer Squash image

If you want a quick, flavorful, yellow squash side dish, this is it! Takes a few minutes and is not your Momma's mushy stewed squash! Everyone who complains about summer squash LOVES this!

3 large summer squash
2 large carrot
1 large sweet onion
3-4 Tbsp balsamic vinegar
2 Tbsp olive oil
1-2 tsp lawreys seasoning salt
1 tsp cracked black pepper
1 dash(es) garlic powder

Steps:

  • 1. Slice Yellow Squash and onion in 1/2 slices and halve
  • 2. Use a mandolin and slice carrot in thin slices
  • 3. Mix all veggies together and add spices.
  • 4. Heat olive oil in skillet ( I use a copper wok on a gas range)
  • 5. When very hot, add veggie mixture and pan fry til brown but not soft. Add balsamic vinegar and keep tossing til tender but not mushy.
  • 6. Add vinegar, salt, garlic powder and pepper until desired flavor

These vegetables blend well together as they are, but I sometimes add a couple of tablespoons of sliced ripe olives to the mix for additional color and flavor.

1 medium butternut squash (3 pounds), peeled and cubed
1/4 cup packed brown sugar
1/4 cup olive oil
2 teaspoons kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup chopped walnuts

Steps:

  • Preheat oven to 400°. Cut carrots in half lengthwise, then in half crosswise., In a large bowl, toss squash and carrots with brown sugar, oil, salt, cinnamon and nutmeg. Transfer to two greased foil-lined 15x10x1-in. baking pans. Roast 30 minutes, stirring occasionally., Sprinkle walnuts over vegetables. Roast 5-10 minutes longer or until vegetables are tender.

2 tablespoons olive oil
1 bunch scallions, diced
1 teaspoon minced garlic, or more to taste
1 zucchini, sliced 1/4-inch thick, or more to taste
1 summer squash, sliced 1/4-inch thick, or more to taste
4 pinches dried Italian seasoning, or to taste
salt and ground black pepper to taste
1 teaspoon chopped fresh basil, or to taste

Steps:

  • Heat olive oil over medium heat in a medium-sized skillet, about 1 minute. Add scallions and garlic; saute in the hot oil until tender, 2 to 3 minutes. Add zucchini and squash; season with Italian seasoning, salt, and pepper. Saute until squash is tender, 8 to 12 minutes.

2 pounds summer squash and/or zucchini, cut into matchsticks
1 teaspoon kosher salt plus more
1/4 cup sliced almonds
2 tablespoons olive oil
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper flakes
1/4 cup finely grated Parmesan
Freshly ground black pepper

Steps:

  • Place squash in a colander set in the sink or over a large bowl and toss with 1 teaspoon salt. Let squash stand 10 minutes, then squeeze well to remove as much excess moisture as possible (do not rinse).
  • Meanwhile, toast almonds in a large dry skillet over medium heat, tossing occasionally, until lightly browned, about 3 minutes. Transfer to a plate; let cool.
  • Heat oil in same skillet over medium heat. Add garlic and red pepper flakes and cook, stirring often, until fragrant but not browned, about 2 minutes. Add squash and cook, tossing occasionally, until crisptender, about 5 minutes. Fold in Parmesan and season with salt and pepper. Fold in almonds.

1 poblano pepper, seeded and chopped
