Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

4 1/2-5 cups vegetable stock
1 cup minced onion
2 -3 teaspoons olive oil
1 1/2 cups arborio rice
1/2 cup dry white wine (May use white grape juice) (optional)
2 cups peeled and cubed winter squash (3/4 to 1 inch cubes)
3 cups stemmed and chopped kale, packed (about 1/2 pound before stemming, May use other greens)
1/8-1/4 teaspoon nutmeg
1 teaspoon freshly grated lemon, rind of
salt & fresh ground pepper
1/4 cup grated pecorino cheese or 1/4 cup parmesan cheese

Steps:

  • Bring the vegetable stock to a boil and then reduce it to a simmer.
  • Meanwhile, in a heavy saucepan, preferably nonstick, saute the onions in 2 teaspoons of the oil for about 5 minutes, until softened but not browned.
  • Add more oil, if necessary, to prevent sticking.
  • Using a wooden spoon to avoid breaking the grains, add the rice and stir until it is well coated with oil.
  • Add the wine, if using.
  • When it is absorbed (it won't take long), ladle in 2 1/2 cups of the simmering stock, 1/2 cup at a time, stirring frequently for 2 to 3 minutes between each addition, until the rice has absorbed the liquid.
  • Add the squash and the kale and stir.
  • Continue adding 1/2 cup of broth every few minutes for about 10 minutes, stirring often, until all of the stock has been added and the rice is tender but firm.
  • Add the nutmeg, lemon peel, and salt and pepper to taste.
  • Remove the risotto from the heat, stir in the cheese, and serve immediately.
  • Enjoy!
  • Variations:.
  • In addition to or in place of kale, add any of the following:.
  • chopped Swiss chard, cabbage, radicchio, or fresh fennel, chopped celery, roasted red peppers, sun dried tomatoes, green peas, green beans, or even seedless black grapes.
  • This is great served with fish or chicken!

BUTTERNUT SQUASH AND KALE RISOTTO

Butternut Squash and Kale Risotto image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h

Yield 8 servings

Number Of Ingredients 16

2 tablespoons butter
1 tablespoon olive oil
1/2 butternut squash, peeled, seeded and diced
1/2 teaspoon kosher salt
1/4 teaspoon chile powder (more to taste)
Freshly ground black pepper
1 bunch kale, leaves torn, stalks discarded
5 to 7 cups vegetable or low-sodium chicken broth
2 tablespoons butter
1/2 onion, diced
1 1/2 cups Arborio rice
Salt and freshly ground black pepper
1/8 teaspoon turmeric
1/2 cup Parmesan shavings, plus more for serving
1/4 cup heavy cream (less if desired)
Finely minced fresh parsley, for serving

Steps:

  • For the butternut squash and kale: Heat 1 tablespoon of the butter and the olive oil in a large skillet over high heat. Add the squash and sprinkle with the salt, chile powder and pepper. Cook for several minutes, turning gently with a spatula, until the squash is deep golden brown and tender (but not falling apart). Remove to a plate and set aside.
  • In the same skillet, melt the remaining 1 tablespoon butter over medium-high heat and add in the kale. Toss it around with tongs and cook it for 3 to 4 minutes. Add in the cooked squash and gently toss together. Remove to a plate and set aside.
  • For the risotto: Heat the broth in a saucepan over low heat. Keep warm.
  • Add the butter to the same skillet over medium-low heat. Add the onions and cook until translucent, 2 to 3 minutes. Add the rice and stir, cooking for 1 minute.
  • Reduce the heat to low. In 1-cup increments, begin adding the broth to the skillet, stirring to combine and gently stirring as the broth is absorbed. As soon as the liquid disappears, add in another cup to cup-and-a-half of broth. Continue this process, stirring gently as the broth incorporates and the rice starts to become tender. Add salt and pepper along the way.
  • Taste the rice after about 5 cups of broth have been absorbed and see what the consistency is. Add another 1 to 2 cups of broth as needed to get the rice to the right consistency; it should be tender with just a little bit of "bite."
  • When the rice is tender, add in the cooked squash and kale plus the turmeric and stir gently. Add the Parmesan shavings and cream and stir until it's just combined. Taste and add more salt and pepper as needed.
  • Sprinkle the minced parsley over the top and serve immediately with extra Parmesan shavings!

BAKED ACORN SQUASH STUFFED WITH WILD RICE AND KALE RISOTTO

Baked Acorn Squash Stuffed With Wild Rice and Kale Risotto image

The filling here is a Greco-Italian fusion, with a little American (wild rice) thrown in. I'm usually not a fusion sort of cook, but I wanted something creamy like risotto to fill these squash. Look for small acorn squash so that each person can have one. They'll be like miniature vegetarian (or vegan) turkeys

Provided by Martha Rose Shulman

Categories     dinner, main course

Time 2h30m

Yield 6 to 8 generous servings

Number Of Ingredients 15

6 small acorn squash
1 bunch kale or 1 10-ounce package stemmed and washed kale, stems picked out and discarded
Salt to taste
1 cup cooked wild rice (1/3 cup uncooked)*
1 quart vegetable stock
2 tablespoons extra virgin olive oil
1/2 cup minced onion
2/3 cup arborio rice
1 plump garlic clove, minced
1/2 cup dry white wine, like pinot grigio or sauvignon blanc
1/4 cup chopped fresh dill
1/4 cup chopped flat-leaf parsley
Freshly ground pepper to taste
1/4 to 1/2 cup freshly grated Parmesan cheese (1 to 2 ounces) (optional)
Cayenne or freshly grated nutmeg to taste (optional)

Steps:

  • Heat the oven to 425 degrees. Line a baking sheet with foil and brush the foil with olive oil. Place the squash in the oven and bake 30 minutes. Each squash should be intact but beginning to give on the side it's resting on, and soft enough to cut through. Remove from the oven and let sit for 15 minutes, until the squash has cooled slightly. Then, resting a squash on the slightly flattened side that it was sitting on in the oven, cut away the top third. You will be putting the top "cap" back on once the squash is filled, so cut it off in one neat slice. Scrape out the seeds and membranes from both pieces and set aside. Repeat for the remaining squash. Turn the oven heat down to 350 degrees. Oil a baking dish or sheet pan that can accommodate all of the squash
  • Meanwhile, blanch the kale in a large pot of salted boiling water for 2 to 4 minutes, until just tender. Transfer to a bowl of cold water, drain and squeeze out excess water. Chop medium-fine and set aside. Cook the wild rice, following the directions below, and set aside
  • Put the stock into a saucepan and bring it to a simmer over low heat, with a ladle nearby. Heat 1 tablespoon of the olive oil over medium heat in a wide, heavy nonstick saucepan or skillet. Add the onion and a generous pinch of salt, and cook gently until it is just tender, 3 to 5 minutes
  • Add the arborio rice and garlic and stir until the grains separate and begin to crackle. Add the wine and stir until it has been absorbed. Begin adding the simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice, and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock and continue to cook in this fashion, adding more stock and stirring when the rice is almost dry. You do not have to stir constantly, but stir often. Continue to add stock and stir until the rice is almost tender, about 20 minutes. The rice should still be a little chewy. Add another ladleful of stock and stir in the kale, wild rice and herbs. Stir together until the stock is just about absorbed, about 5 minutes, and add another ladleful of stock. Remove from the heat. Add pepper, taste and adjust seasonings. Stir in the remaining olive oil and the Parmesan if using
  • Season the surface of the acorn squash with salt, pepper and nutmeg or cayenne (if desired). Fill the hollowed-out squash with the risotto. Place the tops back on the squash and put them in the baking dish or on the sheet pan
  • Bake 40 minutes, or until the squash is tender all the way through when pierced with a knife

  • In a large pot, heat 3 tablespoons olive oil over medium heat. Add shallots and cook, stirring, until softened, about 5 minutes. Add garlic and cook, stirring, for one minute.
  • Add the rice and stir to coat with the shallot mixture. Add the wine, stir, and allow to simmer for a minute. Add one ladleful of the simmering stock to the rice and stir. Stirring continuously, keep adding a ladleful of stock to the rice as soon as the rice absorbs the last addition. Continue this for twenty minutes.
