PAUL MCCARTNEY'S SPINACH TART
This recipe was featured in a magazine recently. It is from his new Meat Free Monday Cookbook. It is just lovely as it is. The only thing I changed was to use fat free half and half instead of cream. I will submit it with that change so I have the updated nutritional values.

Steps:
- Preheat oven to 400.
- Place lined tart pan in oven, bake for 10-15 minutes.
- Gently cook spinach with half the butter, until wilted. Drain and chop finely.
- Heat rest of butter and cook onions until soft.
- Spread spinach and onion over bottom of pie crust.
- In processor or blender blend eggs, yolks, cream, mustard and seasonings.
- Stir in cheese then pour over spinach and onion and return to oven for 20-25 minutes, until top is golden.
- Turn off heat and leave in oven for 5 miutes (may leave oven door ajar to prevent over browning).
- Serve.

SPINACH TART - SPINACH PIE
Another adopted recipe.... While I made this, I made a few changes. Also the directions had a couple of flaws, so I fixed those. The final outcome was gorgeous and delicious. Definitely glad I chose this one. I did use 10 oz of frozen chopped spinach which I wrung dry in cheesecloth, but I think the fresh would be better. Can use pre-made pie crust.

- Pour flour into a bowl, add salt and the butter.
- Using fingertips, work the butter into flour until a crumbly dough forms.
- Add the egg yoke and milk, incorporate, and knead dough into a ball.
- Wrap in plastic wrap and refrigerate for 1 hour.
- Pre-heat oven to 350 degrees.
- Using 1 tbs butter, grease a 9 inch tart pan with a removable bottom and then dust with flour.
- Using a lightly floured board, roll out the dough into a round shape, making it 1 inch larger than the diameter of the pan.
- Line the prepared pan with the pastry dough and trim.
- In a bowl, combine the blanched, chopped spinach, raisins, whole eggs, cream and Parmesan cheese.
- Mix well and season with salt and pepper to taste.
- Pour into the pastry-lined tart pan and top with the pine nuts.
- Bake in oven until it is golden, about 40 minutes.
- Remove, let cool slightly and then transfer to a serving dish.
- Serve this spinach recipe luke warm or cool.

SPINACH PIE

- Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.
CRUSTLESS MUSHROOM SPINACH TART

- Coat a 9-in. pie plate with cooking spray. Sprinkle bottom and sides with bread crumbs; shake out the excess. Set plate aside., In a nonstick skillet, saute mushrooms and onion in oil for 12-14 minutes or until all of the liquid has evaporated. Remove from the heat; stir in spinach., In a bowl, combine the milk, egg substitute, salt and pepper. Stir in the spinach mixture, 1 cup Mexican cheese blend and Parmesan cheese. , Pour into prepared pie plate. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. - Crust: Preheat oven to 425 degrees. Whisk together flours, salt, and sesame seeds in a large bowl. Stir in oil and water, then knead until a ball forms. Roll out dough into a 12-inch round and fit it into a 9 1/2-inch tart pan with a removable bottom. Trim any excess length. Prick bottom all over with a fork and bake until crust is golden brown and crisp, about 35 minutes. Let cool on a wire rack.
- Filling: Reduce oven temperature to 350 degrees. Place spinach in a large pot (if spinach is dry, add 1/4 cup water) and cover. Cook over medium heat, stirring occasionally, until just wilted, about 6 minutes. Transfer to a colander to drain. When cool enough to handle, wrap in a kitchen towel and squeeze to remove excess water. Coarsely chop and transfer to a bowl. Wipe pot dry and heat oil over medium heat. Add shallot, garlic, and red-pepper flakes; cook, stirring, until shallot is softened, about 4 minutes. Transfer to bowl with spinach. Add feta, eggs, and salt; stir until combined.
- Pour filling into crust and sprinkle with sesame seeds. Bake tart until just set, 30 to 35 minutes. Let cool slightly, about 10 minutes. Serve warm or at room temperature with red-pepper flakes.
