SPINACH STRAWBERRY SALAD
The best ever Spinach Strawberry Salad with balsamic poppy seed dressing, pecans, and feta. Beautiful, healthy, and always a crowd pleaser!

- Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
- Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
- Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

- To make the Poppy Seed Dressing: In a food processor or blender, add the white and cider vinegars, sugar, salt, mustard powder and onion. Process or blend for 30-45 seconds, or until pureed. With the food processor or blender running on high speed, very slowly start adding the oil, in a very slow, steady stream, until all the oil is added. Add the poppy seeds and blend briefly to combine. Use dressing immediately or put in a jar with a lid and refrigerate until needed. *Note: Dressing will separate as it sits in the fridge. Just shake it in the jar to mix it back up again before using.
- For the salad: Add the baby spinach to a bowl. Add the strawberries, mandarin oranges, sliced almonds and red onion, if using. Toss to combine. Top with crumbled goat cheese, then drizzle with poppy seed dressing, to taste.

- If making a large salad, I suggest doing layers. For individual salads, no need for layers.
- Place 1/2 spinach in large salad bowl.
- Top with 1/2 of the strawberries, 1/2 of the oranges and half of the pecans.
- Add second layer of spinach and top with remaining strawberries, oranges and pecans.
- Serve with poppy seed dressing or balsamic dressing.

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

- Combine all dressing ingredients, mix well and refrigerate.
- Make well ahead to allow flavors to blend.
- Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.
- Tear fresh spinach into bite sized pieces, wash and pat dry.
- Wash strawberries, drain, pat dry and cut in thirds.
- Shake dressing container well and toss with spinach, strawberries, kiwi and mandarin orange sections just before serving, otherwise the spinach will wilt.
- This makes a wonderfully tart, slightly sweet and very colorful salad!

- In a large bowl, mix the spinach, onion, and sliced strawberries.
- Place crumbled feta and candied pecans on top of the salad.

- Place pine nuts in a small frying pan and toast on medium heat until golden, stirring constantly to prevent burning.
- Cool and set aside.
- Core apple and cut into 1/2 inch chunks.
