EASY CLASSIC GOULASH

This version of classic American beef goulash makes an easy one-pot meal for the whole family. We love it.

2 pounds lean ground beef
2 large yellow onions, chopped
6 cloves garlic, chopped
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 cups water
½ cup sofrito sauce (such as Goya®)
3 tablespoons Worcestershire sauce
2 tablespoons Italian seasoning
1 tablespoon seasoned salt, or to taste
3 bay leaves
2 ½ cups uncooked elbow macaroni

Steps:

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
  • Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
  • Pour macaroni into beef mixture, cover the pot, and continue simmering until pasta is tender and flavors are completely blended, about 25 minutes. Discard bay leaves.

1-1/2 cups uncooked spiral pasta
1 pound boneless beef sirloin steak, cut into 1/8-inch-thick strips
1 tablespoon vegetable oil
1 medium onion, chopped
1 medium green pepper, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups water
1 cup reduced-sodium beef broth
1-1/2 teaspoons red wine vinegar
1 to 2 teaspoons paprika
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon caraway seeds
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1/4 cup cold water

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a large nonstick skillet, stir-fry beef in oil for 4-5 minutes or meat is no longer pink. Add onion and green pepper; cook and stir for 2 minutes. Stir in tomatoes, water, broth, vinegar and seasonings. Bring to boil. Reduce heat; cover and simmer for 15 minutes. , In a small bowl, combine flour and cold water until smooth. Add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; stir into beef mixture.

Number Of Ingredients 10

2 lbs ground beef (or turkey, or mixture)
1 medium onion, diced
1 medium green pepper, diced
2 (14 1/2 ounce) cans diced tomatoes
1 1/2 teaspoons garlic, chopped (jar type is okay)
8 ounces canned mushrooms
1 teaspoon oregano (jar type, or use less if dry)
1 teaspoon basil (jar type, or use less if dry)
1 (46 ounce) can plain tomato juice
2 cups elbow macaroni (less than a 1 lb box, uncooked)

Steps:

  • BROWN MEAT UNTIL DONE, DRAIN GREASE.
  • TRANSFER TO VERY LARGE POT OR DUTCH-OVEN.
  • ADD THE ONION, GREEN PEPPER, TOMATOES, GARLIC, MUSHROOMS, TOMATO JUICE AND MACARONI. DO NOT ADD THE OREGANO OR BASIL YET.
  • STIR TO MIX.
  • ADD SALT AND PEPPER TO TASTE (ABOUT A TBSP SALT AND AT LEAST ½ TBSP PEPPER).
  • COVER; SIMMER ON MEDIUM-LOW HEAT FOR ~45 MINUTES, STIRRING ONCE OR TWICE.
  • CHECK PERIODICALLY DURING LAST 10-15 MINUTES FOR (MACARONI) DONENESS. MACARONI SHOULD BE JUST A SLIGHT BIT UNDERDONE AS IT WILL CONTINUE TO COOK AFTER BEING REMOVED FROM THE HEAT. ADD OREGANO AND BASIL AT THIS TIME. STIR & RE-COVER AFTER EACH CHECK.
  • LET SIT FOR AT LEAST 5 MINUTES BEFORE SERVING.
  • Serve with Italian bread and Parmesan Cheese!

This is not the traditional Hungarian recipe by any stretch of the imagination. My mother "threw this together" back in the late 1960s and named it goulash, when she was a young bride and money was very tight. I took her "recipe" and altered it to my own taste, mainly by adding spices. The last time I prepared this dish I made measurements, so I could share this tasty concoction with you. I serve this with a side green salad, garlic toast, and plenty of grated parmesan cheese on top. Note: Without the noodles, this recipe makes a great stir-in to your favorite canned spaghetti sauce!

1 lb ground beef
1/2 medium onion (chopped very fine)
1/2 teaspoon red pepper flakes (optional)
1 teaspoon Mrs. Dash seasoning mix
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika (sweet, not smoked or hot)
salt (to taste)
fresh ground pepper (to taste)
2 tablespoons light brown sugar (more or less, depending on your taste)
1 tablespoon vinegar (I use apple cider vinegar, but whatever you have on hand is fine)
1/2 cup ketchup (I use Heinz)
1 1/2 teaspoons mustard
8 ounces egg noodles (or elbow macaroni)

Steps:

  • Place ground beef and onion into large pan and season with spices, herbs, salt, and pepper. Cook until beef is done but not browned. (If the beef is very lean, you may need a bit of oil to get things started).
  • Add brown sugar, vinegar, ketchup, and mustard to the cooked beef mixture. Stir until all is very well blended. Reduce heat to simmer.
  • While beef mixture is simmering, prepare the noodles or macaroni according to package instructions.
  • When noodles are done, drain them and add them to the pan with the beef mixture. Mix everything very well and serve immediately.

QUICK AND EASY GOULASH

1 lb lean ground beef
2 (284 ml) cans heinz condensed tomato soup (this is the best kind for it)
2 cups uncooked macaroni noodles
1 1/2 cups frozen corn
2 -4 cloves garlic (pressed)
1 small onion (chopped)
salt and pepper, to taste

Steps:

  • Brown ground beef in frying pan with onion and garlic.
  • Meanwhile, cook pasta for 10 minutes or until al dente.
  • Combine fully cooked meat mixture with condensed soup and corn, heat to desired temperature and add salt and pepper.
  • Combine strained pasta with meat"mixture", continue to heat on medium-low if needed.
