A yummy, easy salad with candied walnuts, cranberries, Gorgonzola cheese, mixed greens, and a raspberry vinaigrette. It's always a big hit and is requested by my friends and family constantly! Even my picky fiance!

½ cup walnut halves
¼ cup sugar
3 cups mixed greens
½ cup dried cranberries
½ cup crumbled Gorgonzola cheese
1 tablespoon raspberry vinaigrette
1 tablespoon white vinegar
1 tablespoon olive oil

Steps:

  • Place walnuts and sugar in a skillet over medium heat, stirring constantly until the sugar dissolves into a light brown liquid and coats the walnuts. Remove walnuts from skillet, and spread them out on a sheet of aluminum foil to cool.
  • Place in a large salad bowl the mixed greens, cranberries, cheese, vinaigrette, vinegar, and olive oil. Toss gently; add candied walnuts, and toss again.

3/4 teaspoon vanilla extract
2 cups walnut halves
1/2 cup sugar
DRESSING:
1/4 cup canola oil
2 tablespoons cider vinegar
1 tablespoon sugar
1-1/2 teaspoons light corn syrup
1 teaspoon poppy seeds
1/4 teaspoon salt
1/4 teaspoon ground mustard
SALAD:
8 ounces fresh baby spinach (about 10 cups)
1-1/2 cups fresh raspberries

Steps:

  • Preheat oven to 300°. In a small bowl, whisk egg white and vanilla until frothy. Stir in walnuts. Sprinkle with sugar; toss to coat evenly. Spread in a single layer in a greased 15x10x1-in. baking pan., Bake 25-30 minutes or until lightly browned, stirring every 10 minutes. 2 lbs fresh spinach, washed and dried
2/3 cup dried cranberries
1 cup candied walnuts
2/3 cup olive oil
1/8 cup apple cider vinegar
1/8 cup honey
1/4 cup sugar

Steps:

  • Candy the walnuts: Place the walnuts and the 1/4 cup of sugar in a nonstick skillet. Turn heat to medium high and stir constantly with a wooden spoon until the sugar has melted and coated the walnuts. Turn onto a greased sheet of foil and separate with 2 forks. Let cool while assembling the salad.
  • Wash and dry the spinach. Tear into bite sized pieces and place in a large bowl.
  • Add cranberries and candied walnuts.
  • Make dressing: in a cruet, combine the olive oil, vinegar and honey. Shake well.
  • Dress the salad just before serving.

1/4 cup plus 2 tablespoons pomegranate juice
1 teaspoon sugar
Kosher salt
1/2 cup coarsely chopped walnuts
1/4 cup thinly sliced red onion
One 5-ounce container baby spinach
4 ounces white button mushrooms, trimmed and thinly sliced, about 1 cup
3/4 cup grape tomatoes, halved
1 tablespoon red wine vinegar
1 tablespoon good quality extra virgin olive oil

Steps:

  • Combine 1/4 cup juice with the sugar and 1/4 teaspoon salt in a small nonstick skillet. Bring to a simmer over medium-high heat and cook, stirring occasionally, until the mixture reduces slightly, about 5 minutes. Add the walnuts and continue to cook, stirring, until the nuts are coated and dark and the liquid evaporates in the skillet, about another 5 minutes. Transfer to a baking sheet to cool. When cool, break apart with your hands.
  • Meanwhile, soak the red onion in ice water for about 10 minutes; drain and pat dry. Place the baby spinach in a serving bowl and top with the onions, mushrooms, tomatoes and walnuts. In a bowl whisk the remaining 2 tablespoons juice with the vinegar, 1/4 teaspoon each salt and pepper, and then whisk in the oil. Drizzle over the salad and toss just before serving.

2 teaspoons Creole or grainy mustard
2 tablespoon honey
1/4 cup cherry jam
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
10 ounces baby spinach
1 pint blackberries
1/4 cup thinly sliced red onion
1/2 cup Candied Walnuts, recipe follows
1 small chunk Parmesan or pecorino
2 tablespoons unsalted butter
1 1/4 cups walnut halves
1/4 cup granulated sugar
1/2 teaspoon cinnamon
Kosher salt and freshly ground black pepper

Steps:

  • For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
  • For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
  • Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.

This is my friends favorite salad! I find this to be a very interesting combination of tastes and textures and is a great pairing with many main dishes. Add cooked chicken and make it a main dish. Be sure to have copies of the recipe ready because everyone wants one!

4 cup(s) baby spinach
1 cup(s) candied walnuts
1 cup(s) dried cranberries
1 cup(s) crumbled gorganzola
6 tablespoon(s) walnut oil
2 tablespoon(s) black fig vinegar
- salt and pepper to taste
* - some brands of walnut oil and black fig vinegar require refridgeration

Steps:

  • Candied walnuts - Mix together 1 c walnuts, 2 Tbs honey, 1 Tbs sugar, 1/2 tsp salt, 1/4 tsp ground black pepper and a generous pinch of cayenne pepper.
  • Preheat oven to 325.Spray baking sheet with non-stick spray, spread nut combination on sheet and cook until nuts are deep golden, approx 12-15 min. Cool, breaking up clumps. (Can be made 3 days ahead and stored in airtight container)
  • Add 3 cups spinach to bowl. Add 1/2 c walnuts, 1/2 c cranberries, and 1/2 c gorgonzola and salad dressing to taste. Toss well. Add remaining spinach and the rest of ingredients. Toss lightly and adjust seasonings to taste. You may have extra dressing.
  • Add very thinly sliced poached or sliced pears for a great summery addition!

1/2 pound hickory smoked bacon slices, roughly chopped
1/2 cup pecans, toasted and roughly chopped
Two 6-ounce containers baby spinach
1/2 small red onion, thinly sliced
1 cup dried cranberries
1/2 cup Danish blue cheese, crumbled
1/4 cup buttermilk
1/4 cup sour cream
1/4 teaspoon sugar
Salt and freshly cracked black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Fry chopped bacon in a medium skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer to a paper towel-lined 1/4-sheet tray to drain.
  • Toast pecans in the oven on a 1/4-sheet tray until lightly golden and fragrant, about 6 minutes.
  • In a medium bowl mash the blue cheese with a fork. Mix in the buttermilk, sour cream, sugar, salt and pepper, to taste.

Perfect ThanksGiving/Christmas salad! And VERY virsatile. Make it your own by using whatever lettuce, cheese and nuts you prefer. The colors are so festive and it's the dressing that makes it!

1 large bag of baby spinach (or i often like to use a mix of romaine and red leaf lettuce).
1/2 bag of craisins (sweetened dried cranberries)
6 oz pkg of crumbled gorgonzola cheese (or blue cheese or feta if you prefer).
1 c sugared pecans or walnuts (which ever you prefer). you can purchase candied nuts already prepared or you can make your own by following the directions below.
FOR DRESSING:
1 sm. pkt. of good seasons italian salad dressing mix
1/4 c balsamic vinegar. (balsamic vinegar is used in place of the red-wine vinigar called for on the pkg)
2 Tbsp water
2 Tbsp sugar
3/4 c vegetable oil

Steps:

  • 1. FOR DRESSING: Mix Good Seasons pkt with water, vinegar & 2 tbsp sugar in jar w/tightly fitted lid. (I prefer to use the crudette jar that is sold along w/the Good Season's dressing mixes). Then add oil and shake well.
  • 2. If preparing your own candied nuts: Melt 3/4 cup sugar in a saute pan coated with cooking spray, on high heat. Simply stir w/wooden spoon until sugar begins to melt down & liquify. Add nuts & toss to coat well, & spread evenly onto wax paper to cool. Break into pieces with mullet if needed.
  • 3. Just before serving toss lettuce with amt of dressing desired. Then add cranberrys, nuts & cheese and toss again. Serve immediately.

¾ cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
2 teaspoons minced onion
¼ teaspoon paprika
¼ cup white wine vinegar
¼ cup cider vinegar
½ cup vegetable oil

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.
  • In a large bowl, combine the spinach with the toasted almonds and cranberries.
