A traditional recipe from Piedmonte made with a little Umbrian twist.

1 Tablespoon Olive Oil
1 Medium Onion, Finely Chopped
4 Tablespoons Finely Chopped Pancetta (Or Bacon)
1 Kg Fresh Spinach (About 2 1/4 Pounds)
1 1/2 Cups Rice
5 Cups Homemade Broth, Kept Warm (Chicken or Vegetable)
5 Eggs
1 1/2 Cups Grated Pecorino Cheese (Or Grated Parmesan)
1 Teaspoon Dried Oregano
Salt & Pepper
2 Tablespoons Butter
3/4 Cup Breadcrumbs
3 Cups Chopped Cherry Tomatoes
1 Garlic Clove, Peeled & Finely Minced
Salt & Pepper
2 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Chopped Fresh Basil

Steps:

  • Preheat oven to 350 degrees F.
  • Grease the sides and bottom of a 12 inch spring-form pan, and then sprinkle in 3/4 of the breadcrumbs.
  • Turn the pan from side to side to coat the sides and bottom with the crumbs.
  • Reserve the remaining breadcrumbs for the top.
  • Heat the oil in a heavy bottomed saucepan and add the onion and pancetta and cook until the onion is translucent, and the pancetta is lightly browned.
  • In a separate pan, wilt the spinach over low heat, then squeeze out all excess liquid, chop, and set aside.
  • Add the rice to the onions and toast over medium heat for about 5 minutes, stirring continually.
  • Add a ladle full of the broth and stir, cooking and adding broth as the rice cooks until it is al dente.
  • Add the spinach to the rice and mix well, then allow the mixture to cool to room temperature.
  • Reserving one egg yolk, lightly beat the rest of the eggs, and then stir these into the rice mixture along with the grated cheese and oregano.
  • Season with salt and pepper and mix well.
  • Pour the rice mixture into the prepared pan and smooth the top with a spoon.
  • Lightly beat the remaining egg yolk and brush it across the top of the torta, then sprinkle on the remaining breadcrumbs.
  • Bake the torta for 55 minutes to an hour until set.
  • While the torta is baking, mix together the topping ingredients in a small bowl and set aside.
  • Serve the torta warm or at room temperature in slices with a scoop of the tomato topping.

1 cup shredded reduced-fat Swiss cheese, divided
3/4 cup egg substitute, divided
1/4 teaspoon curry powder
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup fat-free evaporated milk
1/2 cup sliced fresh mushrooms
2 tablespoons chopped onion
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon pepper

Steps:

  • Combine rice, 1/2 cup cheese, 1/4 cup egg substitute and curry powder. Press onto the bottom and up the sides of microwave-safe 9-in. pie plate. Microwave on high for 4-5 minutes or until firm. Combine the spinach, milk, mushrooms, onion, garlic powder, pepper and remaining cheese and egg substitute; pour into crust. Microwave on 50% power for 20 minutes, rotating a quarter turn every 5 minutes, or until a knife inserted in the center comes out clean.

I made this delicious and rustic torta di riso with fresh spinach and leeks, but the recipe is a perfect catch-all for those abundant summer vegetables. Things like eggplant, peppers, beans, and squash all work beautifully. Just cut them kind of small, cook them tender, and let the rice, cheese, and eggs do the rest.

2 tablespoons olive oil, divided
2 tablespoons finely grated Parmigiano-Reggiano cheese, divided
3 cups chopped leeks
3 cloves garlic, minced
2 cups cooked rice

¾ cup finely grated Parmigiano-Reggiano cheese
2 large eggs, beaten
1 teaspoon salt, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Brush a pie plate with 1 tablespoon olive and dust with 1 tablespoon Parmigiano-Reggiano cheese.
  • Heat remaining olive oil in a large skillet over medium heat. Cook and stir leeks with a pinch of salt in hot oil until leeks are soft and sweet, 5 to 10 minutes. Stir garlic into leeks and cook until fragrant, about 1 minute.
  • Stir leek mixture, rice, spinach, 3/4 cup Parmigiano-Reggiano cheese, eggs, salt, black pepper, cayenne pepper, and nutmeg together in a bowl. Torta Rustica With Ricotta and Spinach image

Torta rustica (also called pizza rustica) is a rich, ricotta-stuffed pie that's traditionally baked for Easter in Southern Italy. This version includes greens (either spinach or chard) for color and freshness. The ham is optional; feel free to leave it out, or substitute chopped olives or sundried tomatoes if you're looking for a similar savory bite. The crust, adapted from Nancy Harmon Jenkins's 2007 cookbook, "Cucina del Sole," is sturdy and slightly sweet, which makes a nice contrast to the salty filling. 2 1/2 cups/310 grams all-purpose flour, plus more as needed
2 tablespoons granulated sugar
1/4 teaspoon fine sea or table salt
3/4 cup/170 grams cold unsalted butter, cut into pieces
1 large egg
1 large egg white (save the yolk for the egg wash)
Zest from 1 lemon
3 to 4 tablespoons iced dry white wine or ice water spiked with 1/2 teaspoon cider or white wine vinegar
3 cups/24 ounces whole-milk ricotta
1 tablespoon extra-virgin olive oil
About 5 cups/5 ounces baby spinach or chard, coarsely chopped
2 garlic cloves, finely grated or minced
1/2 teaspoon fine sea or table salt, plus more as needed
2 large eggs
2 cups/8 ounces shredded fresh mozzarella
1 cup/4 ounces grated Pecorino Romano or Parmesan (pecorino is stronger, Parmesan is milder, or use a combination)
1/2 cup/4 ounces ham, diced (optional)
1/2 cup chopped parsley
1 1/2 teaspoons freshly ground black pepper
1/8 teaspoon red-pepper flakes, plus more as needed
1/8 teaspoon freshly grated nutmeg
Egg wash (1 egg yolk beaten with 1 teaspoon water)

Steps:

  • Make the dough: In a food processor, pulse together the flour, sugar and salt. Add butter and pulse until the mixture forms lima bean-size pieces. Alternatively, mix together flour, sugar and salt in a large bowl, then add butter, working the pieces into the flour with your hands, squeezing and pinching them until the mixture looks like oatmeal.
  • Add egg, egg white and lemon zest, and pulse after each addition. If working by hand, whisk together egg, egg white and lemon zest in a separate bowl, then mix into the butter mixture. Slowly add iced wine, 1 tablespoon at a time, and pulse or mix by hand until the dough just comes together. You may not need all the liquid. The dough should be moist, but not wet.
  • Turn dough out onto a lightly floured surface, and gather and press it into a ball. Divide into 2 portions, one slightly larger than the other, and shape into disks. Wrap the disks tightly with plastic wrap and refrigerate for at least 1 hour and up to 5 days.
  • When ready to bake, heat oven to 375 degrees.
  • Make the filling: If your ricotta seems watery, put it in a sieve and let it drain while you cook the spinach.
  • In a large skillet, heat oil over medium-high heat. Add spinach and cook until wilted, about 2 minutes. Stir in garlic and a large pinch of salt, and continue to cook until spinach is very dry, about 2 minutes longer. Transfer to a large bowl to cool. If any liquid accumulates as the spinach sits, pour it out of the bowl (you don't want it to water down the ricotta).
  • In a food processor, purée drained ricotta and eggs until just combined and smooth. Add to the bowl with the spinach and fold in mozzarella, pecorino, ham (if using), parsley, black pepper, 1/2 teaspoon salt, red-pepper flakes and nutmeg. Set aside when rolling out dough (or chill for up to 4 hours).
  • On a lightly floured surface, roll out the larger pastry dough disk to a 14-inch circle, about 1/8-inch thick. Fit dough into a 9-inch springform pan, pressing the dough up the sides of the pan. Scrape filling into crust and spread evenly. Roll out second pastry disk to a 12-inch circle, about 1/8-inch thick. Cut 1/2-inch-wide strips and weave into a lattice on top of the filling. Seal, trim and crimp the edges. Brush the top of the torta with the egg wash.
  • Place torta on sheet pan and bake until crust is crisp and brown, and filling is firm, 50 to 60 minutes. Cool on a rack for at least 45 minutes before serving.

1 cup arborio rice (risotto)
3/4 cup frozen spinach
3 medium eggs
1 medium onion
4 tablespoons grated parmesan cheese
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon salt
1 teaspoon pepper
1 pinch nutmeg

Steps:

  • Preheat the oven to gas mark 6, 200ºC, 400ºF.
  • Defrost the spinach and squeeze as much liquid out of it as possible.
  • Boil the rice in salted water until 'al dente'.
  • Fry the onion in the olive oil until soft and golden.
  • Break the eggs into a cup and beat lightly.
  • Put the rice in a large bowl and add the Parmesan, nutmeg, salt and pepper. Mix well.
  • Add the spinach, onion and butter, followed by the eggs.
  • Mix everything together thoroughly.
  • Grease an ovenproof dish. Make sure it's not too big - the mixture should be three inches or so deep.
  • Bake for about 25 minutes, until firm and golden brown.

Risotto rice cooks in the filling to give it a creamy texture, which binds the vegetarian ingredients together beautifully

400g spinach
2 tbsp olive oil
1 large onion , finely chopped
2 garlic cloves , finely chopped
pinch of chilli flakes
300g courgette , cubed
100g risotto rice
100g mature cheddar , grated
2 large eggs and 1 medium egg
1 tbsp Dijon mustard
500g pack shortcrust pastry
2 tbsp milk
2 tsp sesame seed

Steps:

  • Wash the spinach and put it in a large saucepan with just the water that clings to its leaves. Heat for 1-2 mins until gently wilted, then tip into a colander and allow to cool. Once cool, squeeze out the excess water and chop finely.
  • Heat the oil in a frying pan and gently cook the onion for about 5 mins until softened. Stir in the garlic and chilli flakes, and cook for 1 min more. Tip into a bowl, add the spinach, courgettes, rice and cheese, and toss together.
  • Beat the 2 large eggs with the mustard, a pinch of salt and a good grinding of black pepper. Add to the spinach mixture and mix well. Heat oven to 200C/180C fan/gas 6. Put a baking sheet in the oven to preheat. Cut the pastry in half and roll 1 piece out on a lightly floured work surface until you have a sheet that measures 32 x 17cm. Place in a 30 x 15cm tin and prick it well all over the base. Roll out the remaining piece of pastry to the same size.
  • Spoon the spinach mixture into the pastry base. Beat together the milk and remaining medium egg, then brush the edges of the pastry with it. Lay the other sheet of pastry over the top and press down gently to seal. Brush the top with a little more beaten egg and sprinkle with the sesame seeds.
  • Place the tin on the preheated baking tray and bake for 10 mins, then reduce the temperature to 160C/140C fan/gas 4 and bake for a further 30 mins until the pastry is golden. Leave to cool for 10 mins before cutting into squares.

This is an interesting variation on the basic rice side dish from Taste of the Caribbean by Rosamund Grant. It is tasty all on its own, but unassuming enough to serve with a spicier dish to top it off. Note: The original recipe called for 2 1/2 cups basmati rice with 2 1/2 cups of water - I used that same amount of water with just a little over 1 cup of regular long grain rice and it was just right. Collard greens could also be used in place of the spinach.

1 onion, chopped
1 -2 fresh tomato, chopped
1 cup long grain rice
2 garlic cloves, crushed
2 1/2 cups stock or 2 1/2 cups water
12 ounces shredded fresh spinach (or 8 oz frozen spinach)
salt, to taste
pepper, to taste

Steps:

  • melt butter in a saucepan with tight-fitting lid.
  • Gently saute the onion for 3 or 4 minutes.
  • Stir in the chopped tomatoes.
  • Add the rice and crushed garlic, gently cook for 5 minutes.
  • Gradually add the stock or water, stirring constantly.
  • Season to taste with salt and pepper.
  • Cover and simmer gently for 10-15 minutes, till rice is almost cooked, then reduce heat to low.
  • Spread the spinach in a thick layer over the rice.
  • Cover the pan and cook over low heat, 5-8 minutes, till spinach has wilted and rice is tender.

2 tablespoons olive oil
2 medium onions, chopped

4 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
12 large eggs
1 1/2 teaspoons dried basil
1 1/2 teaspoons crumbled dried rosemary
1 1/4 teaspoons salt
1 1/2 cups freshly grated parmesan cheese, divided
1 cup shredded smoked cheddar cheese or 1 cup extra-sharp cheddar cheese

Steps:

  • Position rack in the center of the oven; preheat to 325°; lightly oil a 13x9 inch baking dish; sprinkle with bread crumbs.
  • Tilt dish to coat with the crumbs, and tap out the excess.
  • Bring a medium saucepan of lightly salted water to a boil over high heat; add in the rice and decrease heat to medium.
  • Cook, uncovered, until the rice is tender (about 16 minutes); drain well and set aside.
  • Heat oil in a large nonstick skillet over medium heat; add in the onions.
  • Stir/saute 6 minutes or until the onions are tender.
  • Add in the garlic; stir until it gives off its aroma, about 1 minute.
  • Add in the spinach; cook, stirring often, just to evaporate any remaining liquid, about 3 minutes; set mixture aside.
  • In a big bowl, whisk the eggs, basil, rosemary, salt, and pepper together; add in the rice, spinach/onion mixture, 1 cup of parmesan cheese, and the cheddar cheese; mix well.
  • Spread mixture in the baking dish; sprinkle remaining parmesan on top.
  • Bake until the torta feels firm when pressed in the center, about 45 minutes.
  • Cool completely in the dish; cut the torta horizontally into 6 equal strips, then vertically into 9 strips to make 54 pieces.
  • Arrange on a serving platter; serve at room temperature.
