SPINACH BEAN BURGERS
We like bean burgers and I decided to do these to try to incorporate more spinach into my kids food without completely hiding it so that they will try to accept it more easily in dishes that it doesnt hide well in.

- Add navy beans, lentils, breadcrumbs, minced onion, garlic powder, and eggs to food processor. Process 1 minute or until thoroughly mixed.
- Removed from food processor into large bowl and mix the spinach in with a large spoon, or with your hands. If you have some who don't like spicy food, go ahead and shape a couple burgers now. Then add red pepper flake and mix thoroughly.
- Add oil to large fry pan and preheat. While heating pan, shape mix into burgers. These do not shrink like ground beef, so make them the size you would like the finished result to be.
- Fry 3-5 minutes per side until golden brown.
- Serve with your favorite hamburger toppings.

- Heat a large skillet over medium-low heat and add the bacon. Cook it until crispy and the fat is rendered, then remove the bacon with a slotted spoon and let it drain on a paper towel. To the same skillet, add the spinach and garlic and stir to coat it in the bacon grease. Cook until the spinach is wilted 5 minutes. Remove from heat.
- Add all the contents of the spinach skillet to the bowl of a food processor. Add the beans, bacon, flour, eggs, cheese, scallions, salt and pepper. Pulse until the mixture is coarsely chopped, but not fully pureed. Use a spatula to remove the bean mixture from the food processor. Using your hands, form 6-8 patties out of the bean mixture, depending on your size of the bun.
- Heat the same skillet over medium heat and add the olive oil. Add the bean burgers and cook until golden on both sides, 4-5 minutes. Serve the burgers on toasted buns with the avocado cream on top.
- Wipe out the food processor from the bean mixture. Add the yogurt, avocado, salt and pepper and puree until smooth. This will stay good in the refrigerator 1-2 days if tightly covered.

- Add in your onions, chopped spinach, parsley, garlic, nutritional yeast, and spices and mix well. I like to mix this with my hands or a spatula.
- Add in the lemon juice, chia eggs, and breadcrumbs and mix it all together with your hands so that it gets fully incorporated.
- Shape the mixture into 4 palm sized burgers, flattening them out gently. If you want to prep this ahead of time, you can refrigerate the burgers until you're ready to cook them, or leave the bowl in the fridge and form the patties before cooking.
