Creamy Spinach Artichoke Chicken image

Pan seared chicken is smothered in a decadent sauce with spinach and artichokes in this Creamy Spinach Artichoke Chicken. It's a quick simple way to put a gourmet meal on the table any day of the week. Not only is it quick to make, it's made all in one pot so clean up is a breeze.

4 boneless skinless chicken breasts (thinly sliced)
2 Tablespoons Olive oil
Salt Pepper
1/4 cup butter
2 garlic cloves minced
1 tablespoon flour
1/2 cup chicken broth
1 cup heavy cream or half and half
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup spinach chopped
1 cup artichokes (quartered)

Steps:

  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

This is a great appetizer. Very tasty and different. I brought it to a party and everyone really enjoyed it and I had to pass out the recipe. I adapted this recipe from Pillsbury. Enjoy!

Number Of Ingredients 10

2 (8 ounce) cans refrigerated crescent dinner rolls
1 (14 ounce) can artichoke hearts, drained, chopped
1 (9 ounce) package frozen spinach, thawed, squeezed to drain
3/4 cup grated parmesan cheese
2/3 cup mayonnaise
2/3 cup sour cream
1/8 teaspoon garlic salt
2 cups diced chicken breasts
1/4 cup cheddar cheese
2 cups mozzarella cheese

Steps:

  • Heat oven to 375 degrees. Spread crescent dinner rolls on the bottom of a 12x15 sheet pan. Bake 10-12 minutes until lightly golden.
  • Meanwhile, in medium bowl, combine all remaining ingredients except mozzarella cheese; mix well. Spread mixture evenly over partially baked crust.
  • Top with Mozzarella Cheese.
  • Bake at 375°F for an additional 10-12 minutes or until topping is thoroughly heated. Serve Warm.
