PIKE'S PEAK SPIKED APPLE CRISP

5 cups peeled and sliced apples (Pippin, Jonathan, or Winesap)
1/2 teaspoon cinnamon sugar
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 jigger grand marnier
jigger Amaretto de Saronno
3/4 cup granulated sugar
1/4 cup light brown sugar, packed
3/4 cup sifted flour
1/4 teaspoon salt
1/2 cup butter or margarine
1 cream, whipped cream or ice cream for topping

Steps:

  • Arrange apple slices in greased 2-quart round casserole. Sprinkle cinnamon, lemon and orange rinds and both liqueurs on top of apples. In a separate bowl, mix sugars, flour, salt, and butter with a pastry blender until crumbly. Spread mixture over top of apples. Bake uncovered at 350° until apples are tender and top is lightly browned, approximately one hour. Serve warm with cream, whipped cream, or vanilla or cinnamon ice cream. Fun Fact: Pikes Peak is a mountain in the Front Range of the Rocky Mountains, 37 miles west of Colorado Springs, Colorado. Katharine Lee Bates was moved to write the words to the famous song "America the Beautiful" in July, 1893, after having traveled to the top of Pikes Peak on a carriage ride.

4 medium tart apples, chopped (about 4 cups)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butterscotch schnapps
1/2 cup butter, melted
1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1 cup whipping cream
1 tablespoon butterscotch schnapps
1 tablespoon powdered sugar
Caramel topping, if desired

Steps:

  • Heat oven to 375°F. Spray bottom only of 8-inch square pan with cooking spray. In large bowl, toss apples, granulated sugar, brown sugar, cinnamon and 1/2 cup schnapps. Spread in pan.
  • In medium bowl, mix melted butter and cookie mix. Spread on top of apples.
  • Bake 40 minutes.
  • Meanwhile, in chilled medium bowl, beat whipping cream, 1 tablespoon schnapps and the powdered sugar with electric mixer on medium-high speed until stiff peaks form.
  • To serve, alternately spoon warm apple crisp and cream mixture into small glasses. Top each with caramel topping. Serve immediately.

3/4 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, softened
4 cups chopped peeled apples
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla extract
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 4 ingredients. Cut in butter until crumbly. Press half into a greased 2-1/2-qt. baking dish or a 9-in. square baking pan. Cover with apples. , In a small saucepan, combine the sugar, cornstarch, water and vanilla. Bring to a boil; cook and stir 2 minutes or until thick and clear. Pour over apples. Sprinkle with remaining crumb mixture. , Bake 60-65 minutes or until apples are tender. Serve warm, with ice cream if desired.

Steps:

  • Heat the oven to 160C/ 140C fan/ gas mark 3. Core the apple and slice through the equator into very thin slices 1 - 2mm thick. Dust with cinnamon and lay flat on a baking sheet lined with parchment paper.
  • Cook for 45 mins - 1 hour, turning halfway through and removing any crisps that have turned brown. Continue cooking until the apples have dried out and are light golden. Cool, store in an airtight container and enjoy as a snack.

1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
½ cup water
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degree C).
  • Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
