SOUTHWEST TURKEY BURGERS

Steps:
- Chop your garlic and veggies.
- Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
- While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.
SPICY AND SAVORY BROILED TURKEY BURGERS
These are some of my favorite turkey burgers. They begin with the beautiful trio of onion, garlic, and ginger and are accented with a wide range of spices. Most ground turkey comes in 20-ounce plastic-covered trays, so I usually just peel off the top, dump all the ingredients in, make patties, and throw away the package. No dishes to do, except for the cooking pan and utensil.

- Set an oven rack about 4 to 5 inches from the heat source and preheat the oven's broiler. Lightly spray a broiling pan with cooking spray.
- Combine turkey, onion, garlic, ginger, Worcestershire sauce, seasoned salt, Italian seasoning, cumin, coriander, chili powder, red pepper flakes, and black pepper in a mixing bowl. Mix by hand until uniformly combined. Form into 4 patties and place on the prepared pan.
- Broil until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), 6 to 7 minutes per side.

- In a large bowl mix together the oregano, pepper, cumin powder, garlic powder, egg white and salsa. Add the turkey and mix thoroughly. Shape into 2 burgers. Cook on stove top in cast iron grill pan or on outdoor grill over medium heat. Cook burgers for 6-8 minutes per side until center is no longer pink. Serve on a bun with toppings.

SPICY TURKEY-BULGUR BURGERS

- 1. Place the bulgur in a 2-quart heatproof bowl. Add the boiling water, and set the mixture aside for 5 minutes.
- 2. Add turkey, egg or substitute, onion, marjoram, salt, pepper, and mustard to the bulgur mixture and mix well.
- 3. Using floured hands, form the mixture into 8 patties as thin as possible for a flatter size meat. Coat a ceramic skillet with organic olive oil and/or spray, and cook the patties over medium heat for 7 minutes on each side, or until browned and crisp. Transfer the patties to a cookie sheet to drain, works well, or a plate, because the oil makes the burger taste better, no need to drain on paper towels.
- 4. Cut each spelt bun in half. Spread the bottom half of each bun with condiments of your choice. Follow with a patty burger, and remaining vegetables. Serve!

- Mix ground turkey, bread crumbs, onion, green onion, egg, garlic, parsley paste, Worcestershire sauce, hot pepper sauce, and salt together in a bowl. Cover bowl with plastic wrap. Refrigerate at least 1 hour.
