Categories     main-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 17

2 tablespoons olive oil
2 pounds ground turkey (not lean)
Kosher salt and freshly ground black pepper
4 cloves garlic, chopped
2 stalks celery, chopped
1 large onion, chopped
3 tablespoons chile powder
2 tablespoons tomato paste
One 28-ounce can diced tomatoes
One 15-ounce can pinto beans, rinsed and drained
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 4-ounce can diced green chiles (mild, medium or hot, as desired)

1 cup sliced scallions, for topping

Steps:

Add the turkey, 1 teaspoon salt and a few grinds of pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 8 minutes. Remove the turkey and set aside. SPICY THREE-BEAN PANTRY CHILI

Spicy Three-Bean Pantry Chili image

This vegetarian chili gets its rich flavor from caramelizing tomato paste and warming herbs, rather than long hours of cooking. You can amp up the heat by using a spicy salsa or some of the adobo paste (though the chile itself is pretty hot). Add corn for some sweetness, or canned hominy for a chunkier and funkier chili.

Provided by Food Network Kitchen

Time 40m

Yield 6 servings

Number Of Ingredients 12

3 tablespoons vegetable oil
3 tablespoons tomato paste
1 chipotle in adobo, smashed with a fork into a fine paste
3 tablespoons chili powder
1 teaspoon dried oregano
Two 16-ounce jars mild salsa (about 3 1/2 cups)
Three 15-ounce cans beans, such as kidney, black and pinto beans, or your preference, drained (but not rinsed)
Three 15-ounce cans beans, such as kidney, black and pinto beans, or your preference, drained (but not rinsed)
One 15-ounce can hominy or corn, drained (but not rinsed)
1 cup long-grain white rice
1/4 cup cider vinegar
Serving Suggestions: Tortilla chips and sliced pickled jalapenos

Steps:

  • Heat the oil in a medium pot over medium-high heat. Add the tomato paste and cook, smearing and stirring constantly with a heat-proof spatula or flat-edged wooden spoon, until dark and aromatic, about 90 seconds. Add the chipotle, chili powder and oregano, and cook, stirring, for 1 minute. Stir in the salsa and 1 1/4 cup water. Stir in the beans and hominy. Bring to a boil, reduce the heat to medium-low, cover and simmer for 25 minutes, stirring occasionally.
  • Meanwhile, bring 1 1/2 cups water to a boil in a small saucepan with a lid. Stir in the rice, reduce the heat to medium low, cover and simmer until the water is absorbed, about 15 minutes. Remove from the heat and let stand, covered, 5 minutes.
  • Remove the chili from the heat, stir in the cider vinegar and let stand 1 minute. Fluff the rice with a fork, divide it among 6 serving bowls and top with the chili. Serve with pickled jalapenos and tortilla chips, if desired.

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 18

1 tablespoon vegetable oil
1 lb ground turkey (may use the 1.25 lb. size package)
1 cup diced yellow onion
3/4 cup diced green bell pepper
1/2 cup diced celery rib (2-3 ribs)
2 garlic cloves (finely minced)
3 cups chicken broth (I prefer low-sodium)
1 (15 ounce) can black beans (drained and rinsed)
1 (15 ounce) can dark red kidney beans (drained)
1 (15 ounce) can great northern beans (drained)
1 (14 1/2 ounce) can diced tomatoes in tomato puree (I prefer Hunt's Petite Diced)
1 (4 ounce) can diced mild green chilies
1 (4 ounce) can diced jalapeno peppers
3 1/2 tablespoons chili powder
2 teaspoons ground cumin
1/2 cup fresh cilantro (or dried equivalent)
1 teaspoon salt (Granular table salt is fine)
1 teaspoon black pepper

Steps:

  • In non-stick skillet, heat vegetable oil over medium heat. Add ground turkey, season with salt and pepper; sautee until brown (about 7 minutes). Add diced onion, green bell pepper, and celery; sautee until onion is transluscent (about 3 minutes). Add fresh garlic and sautee another two minutes. Remove skillet from heat. Break ground turkey into small crumbles.
  • Transfer skillet ingredients to heavy, large pot over medium heat. Add chicken broth, all beans, tomatoes with juices, green chiles, jalapeno chiles, chili powder, and ground cumin to turkey mixture. If using dried cilantro, add it at this time. Stir to mix all ingredient evenly. Cover pot with lid; reduce heat to a low; simmer 30 minutes.
  • If using fresh cilantro, use it as a garnish when serving. May also serve with finely shredded cheese, sour cream and chopped onions.

SPICY 3-BEAN CHILI SALAD

Spicy 3-Bean Chili Salad image

This bean salad celebrates all the bold flavors of the hot chili we enjoy during the year's colder months. Three kinds of beans are tossed with a vinaigrette made with tomato paste- and spice-infused oil (which gives the salad surprising depth of flavor). Stir a dollop of sour cream into the chilled salad to cut through some of the spiciness.

Provided by Food Network

Categories     side-dish

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 16

1/2 small red onion, halved and thinly sliced (about 1/2 cup)
One 15.5-ounce can black beans
One 15.5-ounce can kidney beans
One 15.5-ounce can pinto beans
1/2 cup vegetable oil
3 tablespoons tomato paste
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
2 cloves garlic, grated
2 tablespoons finely minced pickled jalapenos plus 1/3 cup pickling juice
Kosher salt
1 small red bell pepper, cut into 1/2-inch dice (about 1 cup)
1 small yellow bell pepper, cut into 1/2-inch dice (about 1 cup)
1/3 cup sour cream
1 scallion, thinly sliced

Steps:

  • Soak the onions in a bowl of ice water to mellow their sharpness and set aside. Strain and rinse the black, kidney and pinto beans.
  • Add 3 tablespoons of the oil, the tomato paste, chili powder, cumin and oregano to a medium skillet. Turn the heat to medium-low and cook, stirring frequently with a wooden spoon or heatproof spatula, until the tomato paste and oil have come together as a dark brown paste, 6 to 8 minutes. Stir in the garlic and cook for 1 minute more. Turn off the heat, and stir in the remaining 5 tablespoons oil. Let cool for 25 minutes so the oil can absorb the flavors of the tomato-paste mixture.
  • Pour the oil mixture into a fine-mesh strainer set over a liquid measuring cup with a spout. Do not press down on the tomato-paste mixture, just let the oil drain until there is at least 1/4 cup of it in the measuring cup, 5 to 7 minutes. Discard the tomato-paste mixture. Put the pickled jalapeno juice and 1 teaspoon salt into a large mixing bowl, and slowly whisk in the flavored oil.
  • Strain the onions, and add them to the bowl with the dressing. Add the jalapenos, all the beans and the red and yellow bell peppers. Stir to combine, and add salt to taste. Cover with plastic wrap, and refrigerate for at least 30 minutes or up to overnight. Serve with a dollop of sour cream, and garnish with the sliced scallions.
