ROCK CAKES
Rock cakes are a delicious and easy treat. This traditional recipe shows you how to make 12 of the classic family favourites. Perfect with a cup of tea!

Steps:
- Preheat oven to 180C Fan
- Lightly grease a baking tray
- Place the flour in a large bowl. Add the cubes of margarine and rub the margarine into the flour with your fingertips to form a breadcrumb like mixture.
- Stir in the dried fruit and caster sugar. Then stir in the egg.
- Form a large ball and using your hands make mounds of equal amounts of the mixture and place them onto the baking tray and brush with the milk.
- Bake in the centre of oven for 10 - 15 minutes until cooked. To check they are cooked through insert a skewer into the centre of one of the buns which will come out clean if they are done.
- Place the buns on a wire rack to cool. Then store in an airtight container and consume within 3 - 4 days.

- Preheat oven to 350°. Toss blueberries with cinnamon and lemon juice; pour into a greased 8-in. square baking dish. In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. , Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Bake until a toothpick inserted into the cake portion comes out clean, 45-50 minutes. Serve warm. If desired, top with whipped cream and additional blueberries.

BLUEBERRY CAKE

- Preheat the oven to 200C/fan 180C/gas 6. Butter a 22cm cake tin, line the bottom with baking parchment. Put a third of the frozen blueberries aside, sprinkle the rest with flour, set aside (do not defrost).
- In a large bowl, beat the sugar and eggs until smooth, add the vegetable oil, lemon zest and juice and yogurt. Combine the wet ingredients with the flour, baking powder and a pinch of salt using a whisk. Don't worry if a few lumps remain. Add the blueberries mixed with flour.
- Pour the cake mixture into the prepared tin. Sprinkle the remaining berries on top. Put the tin in the oven, reduce the temperature to 180C/fan 160C/gas 4. Bake for 1 hr 10 mins-1hr 20 mins or until a skewer inserted into the cake comes out clean. Remove from oven and set aside to cool. After removing from the baking tin, sprinkle the cake with icing sugar, if you like.
HEALTHY BLUEBERRY ROCK CAKES
I make these as breakfast cookies to take to work for my co workers, you can substitute any berries just adjust the amount of splenda accordingly. They are best eaten the day they are made, but can be frozen up to 1 month.

- Preheat oven to 375.
- Line a baking sheet with parchment paper.
- In a large bowl, whisk together egg, splenda, milk and oil.
- In another bowl, mix together flour, oats, wheat bran, poppy seeds, baking powder, lemon zest, cinnamon and salt.
- Stir egg mixture into flour mixture just until combined.
- Gently stir in blueberries.
- Drop batter in 8 mounds onto prepared baking sheet.
- Bake until firm and golden brown, 15 to 20 minutes.
- Remove to rack and let cool.
