TEX MEX CHICKEN TACO SOUP

1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic
Vegetable oil
1 pound chicken breasts, boiled and shredded
1 package taco seasoning mix
1 (8-ounce) jar salsa
1 (14-ounce) can kernel corn
1 (14-ounce) can hominy
1 (16-ounce) can ranch style beans
2 (4-ounce) cans tomato paste
2 (14-ounce) cans chicken broth
1 (8-ounce) package cream cheese

Steps:

  • Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.
  • Also, great on the second day over rice.

1/2 cup chopped onion
1 tablespoon canola oil
2 garlic cloves, minced
4 cups chicken broth
3 cups cubed cooked chicken
3 medium zucchini, sliced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1/2 cup salsa
2 teaspoons ground cumin
1 teaspoon salt, optional
3/4 teaspoon pepper
1/2 teaspoon dried oregano
Shredded cheddar cheese, optional
Tortilla chips, optional

Steps:

  • In a large stockpot, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the next 11 ingredients; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Serve with cheese and tortilla chips.

1 medium onion, sliced
2 tablespoons olive oil
15 ounces black beans, rinced and drained
10 ounces rotel mexican festival diced tomatoes with lime juice and cilantro
10 ounces enchilada sauce
2 cups cubed cooked chicken
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground pepper
1 1/2 cups Bisquick baking mix
1 egg
2/3 cup skim milk
1 cup shredded low-fat cheddar cheese, divided
1/2 cup chopped fresh cilantro, divided

Steps:

  • Saute onion in hot oil in a 10 inch cast iron skillet over medium heat for 3 to 4 minutes or until tender. Stir in beans and next 8 ingredients. Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
  • Combine baking mix, egg and milk in a medium bowl, stirring until smooth. Fold in 1/2 cup cheese and 1/4 cup cilantro; pour over simmering checken mixture.
  • Bake at 400 degrees for 20 minutes or until a wooden pick inserted in topping comes out clean. Sprinkle with remaining 1/2 cup cilantro.
  • Serve with sour cream.

4 boneless skinless chicken breast halves

Steps:

  • Heat grill to medium heat.
  • In a small bowl mix together the spices and then sprinkle over both sides of the chicken.
  • Spray the chicken with non stick cooking spray and place on preheated grill. Cover.
  • Grill 7-10 minutes or until no longer pink in the center, turning once.

A spicy dish that you'd never know was a "diet" dish unless something was said! Found in the South Beach Diet Cookbook it is a simple one-dish meal that 's very easy to prepare. Whether on the Beach diet or not you can make any modifications you want and it will still turn out great. It's spicy on it's own with just cumin so the jalapeño is optional. And make sure you only use fresh good quality salsa because that will have a major impact on the flavor and texture of your dish. If you're eating carbs I suggest a crusty baguette to soak up some of the soup to make it even more filling than it already is. This is also great for people who need recipes for small families or couples. You're guaranteed leftovers no matter how big of an eater you have on your hands.

1 tablespoon extra virgin olive oil
1 small onion, chopped
1 jalapeno pepper, diced (optional)
2 garlic cloves, minced
2 teaspoons ground cumin
5 cups reduced-sodium chicken broth
1 1/2 lbs boneless skinless chicken breasts
2 cups mild refrigerated fresh salsa
salt & freshly ground black pepper
cilantro (optional)

Steps:

  • Cut your chicken breasts into small strips about 2 inches long.
  • Heat oil in a large saucepan over medium heat. Add onion and jalapeño; cook, stirring often, until vegetables are tender, 5 minutes.
  • Stir in garlic and cumin; cook 30 seconds more.
  • Add broth, increase heat to high, and bring to a rapid simmer. Add chicken and cook until no longer pink, about 3 minutes. Stir the pan making sure to get all the bits of onion, jalapeño and cumin are well mixed into the soup and not stuck to the bottom of the pan.
  • Stir in salsa (don't drain), bring back to simmer, season with salt and pepper to taste and top with cilantro if desired.

This casserole is my alternative to a noodle casserole, as my better half is not a big noodle fan. I also get to use my homemade HOT SALSA..this is scrumptious!

1 1/3 c uncooked rice, i use uncle bens
2 2/3 c water
4 boneless, skinless chicken breasts
1 can(s) 10 3/4 oz cream of chicken soup
1 can(s) 10 3/4 oz cream of mushroom soup, i also use golden mushroom
2 c shredded cheddar cheese
2 c monterey jack , shredded, or you can use a tex mex blend
1/2 c sour cream
1 1/2 c salsa, use any heat you want, i use my homemade hot salsa
1 onion, chopped
1 Tbsp tony chachere's creole seasoning ( optional)

Steps:

  • 1. Gather your ingredients
  • 2. Place the rice in the water and bring to a boil. Reduce heat, cover and simmer 20 minutes.
  • 3. Cook the chicken breast is saucepan; covering them with water. Bring to boil and cook for 20 minutes; or till done.
  • 4. When chicken is done; remove from water, when cool enough, shred and add the seasoning, this is not a must, I like the added spice.
  • 5. Preheat oven to 350 degree. Spray a 9 x 13 baking dish with cooking spray.
  • 6. In a medium bowl; combine the cheeses
  • 7. In a medium bowl; mix together soup, sour cream, onion, and salsa.
  • 8. Layer 1/2 of the rice, 1/2 of the chicken, 1/2 of the soup and salsa mixture, and 1/2 of the cheese mixture in prepared dish. Repeat layers, ending with cheese.
  • 9. Bake in preheated oven for about 40 to 45 minutes, or until bubbly.
  • 10. Let rest 20 to 30 minutes before serving, to let set up. I serve this with a dollop of sour cream and hot pepper flakes atop for more added heat; and garlic bread. Or perhaps a salad..This is a very versatile and tasty casserole! This freezes well also. I put it on a paper plate and vacuum sealed it. ENJOY!!

  • Put olive oil into a large stockpot and heat to medium. Add the onion, garlic, carrots, celery and diced jalapeno and saute on medium heat until the onions are translucent. Add the chicken pieces and brown on both sides; do in multiple batches if necessary. Add the Swanson® Unsalted Chicken Broth, diced tomatoes, bay leaves, cumin, cayenne pepper and cilantro. Bring to a boil and then lower heat to simmer for an hour and a half, occasionally skimming the foam off the surface. Taste broth and correct seasoning with salt and pepper.
  • Remove chicken from pot and turn off the heat. After the chicken has cooled, remove fat and pick the meat off the bones and either shred or cut into bite-sized pieces. Sprinkle chicken with salt and pepper to taste.
  • Remove fat from soup using a gravy separator or my preferred method; refrigerate the soup until it has chilled enough for the fat to start solidifying; then it's easy to spoon the fat off the surface.
