10 oz Chinese egg noodles/or thin spaghetti noodles
3/4 C chicken broth
3 Tbs low sodium soy sauce
3 Tbs lime juice
1 Tbs sugar
1 Tbs Sriracha hot sauce
1 Tbs chopped fresh ginger
2 Tbs Canola Oil
8 oz ground turkey
5 oz baby spinach

Steps:

  • In a large covered saucepan, heat salted water to boiling on high. Add 10 oz Chinese egg noodles. Cook as label directs, drain and rinse under cold water.Puree in a food processor the chicken broth, soy sauce, lime juice, sugar, hot sauce and ginger. Heat 2Tbs canola oil in 12 inch skillet on high. Add 8oz ground turkey; cook 5 minutes, breaking up with a spoon. Add broth mixture; simmer 5 minutes or until turkey is cooked through. Stir in 5 oz baby spinach; cook 1 minute. Divide noodles among 4 plates; top with sauce and chopped peanuts.

This recipe for spicy peanut noodles is adapted from Ken Hom, the chef and cookbook author best known for his BBC television show "Ken Hom's Chinese Cookery." It is incredibly easy to put together on a weeknight, yet loaded with complex flavors and textures.

1 tablespoon Sichuan peppercorns
1/2 pound ground pork
3 tablespoons dark soy sauce
Salt to taste
1 cup peanut oil
3 tablespoons chopped garlic
2 tablespoons finely chopped peeled fresh ginger
5 tablespoons finely chopped scallions
2 tablespoons sesame paste or smooth peanut butter
2 tablespoons chili oil
1 cup chicken stock
12 ounces fresh or dry Chinese egg noodles (or spaghetti noodles)

Steps:

  • Heat a wok or heavy skillet over medium heat. Add the peppercorns and stir-fry for about 5 minutes until they brown slightly and start to smoke. Remove them from the heat and allow them to cool, then grind them. Set aside.
  • Combine the pork, 1 tablespoon of the soy sauce and 1 teaspoon of the salt and mix well. Heat a wok or skillet, add the oil and when the oil is hot, deep-fry the pork, stirring it with a spatula to break up the pieces. When the pork is crispy, about four minutes, remove it with a slotted spoon and drain it on paper towels.
  • Pour off all but two tablespoons of the oil. Put a pot containing 3 to 4 quarts of water on the stove and bring to a boil.
  • Reheat the wok with the remaining oil and stir-fry the garlic, ginger and scallions for 30 seconds, then add the sesame paste, the remaining soy sauce and salt, the chili oil and chicken stock. Simmer for four minutes. Return the pork to the pan and stir.
  • Cook the noodles in the boiling water two minutes if they are fresh, five minutes if they are dried (if using spaghetti, cook according to package directions). Drain in a colander. Transfer them to a serving bowl or individual bowls. Ladle on the sauce and top with the fried pork mixture. Sprinkle with the ground Sichuan peppercorns and serve.

1 lb ground beef
1 1/2 cups chopped onions
2 teaspoons minced garlic
1 1/2 teaspoons minced fresh ginger
1/2-1 1/2 teaspoon dry crushed red pepper (start off with just a little and work your way up)
2 tablespoons sesame oil
2 tablespoons cornstarch
3/4 cup beef broth
1/3 cup hoisin sauce
2 tablespoons soy sauce
8 ounces vermicelli, cooked
1/2 cup sliced green onion

Steps:

  • Brown ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
  • Pour sesame oil in pan and heat till hot. Saute onion and next 4 ingredients hot sesame oil until tender.
  • Combine cornstarch and beef broth, whisking until smooth.
  • Stir broth mixture, hoisin sauce, and soy sauce into onion mixture.
  • Bring to a boil, stirring constantly; boil, stirring constantly, 1 minute.
  • Stir in ground beef.
  • Toss with hot cooked pasta, and sprinkle with sliced green onions.
  • Yield: 4 servings.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade. Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers. Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temperature. The remaining sauce may be added, as needed, to moisten the pasta.

1/2 cup(s) grape seed oil
3 1/4" slice(s) 3 slices of ginger 1/4" rounds..no need to peel
1/4 cup(s) ground fine hot red pepper
3 clove(s) minced fine garlic
2 tablespoon(s) mallah (szechuan peppers) ground fine
4 tablespoon(s) soy sauce
2 - scallions (white to green) thinly sliced
1/4 cup(s) crushed peanuts

Steps:

  • In a frying pan, pour oil in and sauté ginger and 1 whole clove of garlic for a few minutes to flavor the oil ...DO NOT let garlic brown or it will make it bitter
  • In salted water, boil the noodles and cook as per directions on bag 8-10 minutes.....save 1 cup of the hot cooking water when draining
  • In a bowl, add soy and minced garlic
  • Pick out ginger and garlic from oil and add red pepper and mallah to oil and sauté 1 minute
  • Pour oil and cooked pepper onto bowl with soy and stir. Toss in noodles and pour hot water to help incorporate sauce
  • Top with peanuts and scallions to serve

This recipe comes from the cookbook The Ultimate Chinese and Asian Cookbook, with a few alterations on my part. Feel free to add cooked chicken or crab, or even vegetables. I usually double the sauce ingredients. I do not find these are spicy, so you may want to add in some red pepper flakes or ground Szechuan peppercorns if you want some heat. Preparation time is an estimate.

For this recipe, we prefer fresh Chinese noodles with a width between linguine and fettuccine. If you are using Asian sesame paste that has a pourable rather than spreadable consistency, use only 1 cup of chicken broth. Don't hesitate over this dish because of the list of ingredients. Just follow the all-important basic drill which streamlines all Chinese recipes. They always have several clusters of ingredients. You mix each of them together and end up with maybe three or four little bowls that will come together in literally minutes. First, read through the recipe. Then gather all the ingredients in one place. Mix together the different elements. Finally, when you are ready, cook. Steps:

  • Bring 6 quarts water to a boil in a large stockpot for the noodles.
  • Meanwhile, toss the pork with 1 tablespoon of the soy sauce, rice wine, and a pinch of pepper to combine and set aside. In a separate bowl, whisk the remaining 2 tablespoons soy sauce, oyster sauce, sesame paste, vinegar, and a pinch of pepper together until smooth, then whisk in the broth; set aside.
  • Heat the vegetable oil in a 12-inch skillet over high heat until shimmering. Add the pork mixture and cook, breaking up the meat with a wooden spoon, until the pork is in small, well-browned bits, about 5 minutes. Stir in the garlic, ginger, and pepper flakes and cook until fragrant, about 30 seconds. Stir in the broth mixture, bring to a boil, then reduce to a simmer over medium-low heat and cook until slightly thickened, about 3 minutes. Off the heat, stir in the sesame oil; cover and set aside.
  • While the sauce simmers, stir the noodles into the boiling water and cook, stirring constantly, until the noodles are tender, about 4 minutes for fresh noodles or 10 minutes for dried linguine. Drain the noodles, divide them among individual bowls, then ladle a portion of the sauce over the top. Sprinkle with the scallions, the bean sprouts and ground Szechuan peppercorns, if using, and serve.

  • Add peanut oil and swirl.
  • Add meat mixture and cook, breaking up into small pieces until pork is well browned, about 5 minutes.
  • Stir in ginger, garlic and red pepper flakes, cook until fragrant, about 1 minute.
  • Add sauce mixture; whisk to combine and bring to a boil.
  • Reduce heat to medium low and simmer while noodles are cooking.
  • Just before serving stir in sesame oil.
  • Drain noodles; divide into individual bowls, top with sauce.
  • Sprinkle with scallions and bean sprouts as desired while eating.
