SWEET AND SPICY FRESH SALSA
This fresh salsa recipe makes the best fruit salsa you'll ever taste! A spicy-sweet combination of jalapeño, grapes and cucumbers. Perfect with chips for snacking, or use as a topping on grilled meats, poultry, or fish.

Steps:
- Combine all ingredients in a nonreactive bowl and allow it to sit at room temperature at least 20 minutes so the flavors can meld.
- Chill at least 10 minutes before serving. Can make up to 12 hours ahead.
- Stays fresh (covered) in fridge for up to 4 days.

- Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill pineapple, covered, over medium heat for 3 to 5 minutes on each side or until golden brown. Grill jalapenos until tender, turning occasionally., Let pineapple and peppers cool slightly; finely chop and transfer to a large bowl. Add the remaining ingredients. Chill at least 2 hours. Before serving, allow salsa to come to room temperature.

SPICY CHUNKY SALSA

- In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, a few at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Drain and pat dry. Peel and finely chop tomatoes to measure 9 cups; place in a stockpot., Stir in remaining ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 30 minutes., Ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

SPICY SALSA
This salsa is a spicy fresh addition to any Mexican meal and it's great on breakfast burritos. If you'd like to decrease the heat of the jalapenos, remove the seeds and membranes from the peppers before dicing them.

- In a large bowl, combine the tomatoes, plum tomatoes, green onions, peppers, celery, cilantro, garlic, lime juice, pepper and salt to taste. Refrigerate for 45 minutes before serving.

TAY'S HOT AND SPICY SALSA
Steps:
- Put everything but the tomatoes in a food processor. Chop until diced. Add the tomatoes. Serve with chips.
- Mix ingredients together and store in an airtight container for up to 6 months.
SWEET AND SPICY SALSA
This is my new favorite salsa recipe. When you first taste it, it's sweet and then the spice hits you. Instead of the fresh tomatoes you can use whole, canned tomatoes.

Steps:
- Place the ingredients in a blender in the order given - jalapenos on the bottom, tomatoes next, etc.
- Pulse for one second at at time.
- Take a wooden spoon and mix ingreditents then pulse again until blended, but not too long where it will turn to liquid.
- Serve with tortilla chips and enjoy!
