GARLIC BUTTER SHRIMP
This easy garlic butter shrimp with lemon and wine is cooked in a skillet in just 20 minutes. Great with pasta, baguette, grits, or rice!

Steps:
- Pat the shrimp dry with paper towels and place in a large bowl.
- Sprinkle with salt, black pepper, and cayenne pepper. Toss to coat.
- Heat 2 tablespoons of butter in a large skillet over medium heat until it melts. Add the shallot and let cook for 1 to 2 minutes, until it just begins to soften. Add the shrimp in a single layer and let cook undisturbed for 1 minute. With tongs or a wide spatula, turn over the shrimp.
- Add the wine and garlic. Cook until the shrimp are no longer translucent and the wine has reduced by half, about 2 to 3 minutes more.
- Remove the skillet from the heat. Stir in the remaining 1 tablespoon of butter. Zest the lemon directly over the skillet, then cut the lemon in half. Juice half of the lemon over the top and slice the other half into wedges for serving. Add the rosemary and parsley, then toss to combine. Serve immediately with lemon wedges.

SAUTEED SHRIMP WITH GARLIC, LEMON, AND WHITE WINE

- Place 1/4 cup oil, scallion whites, garlic, and oregano in a large skillet or wok over medium heat. Cook, stirring often, until the oil starts to simmer, about 5 minutes. Add shrimp and increase heat to high. Cook, stirring and turning often, until opaque, 4 to 5 minutes.
- Add lemon juice and wine to the skillet; simmer for about 1 1/2 minutes. Add water, pepper, and salt; cook for 30 seconds. Stir in butter, 1 tablespoon olive oil, scallion greens, and parsley until even distributed. Arrange the shrimp on warmed plates and spoon the sauce on top.

- Heat up a skillet on medium heat. Melt the butter.
- Once melted, add the garlic, white wine, and lemon juice. Cook for 30 seconds.
- Add in the shrimp. Cover the skillet and turn the heat down to medium-low. Cook for 5 minutes.
- Remove the lid and garnish with parsley and extra lemon wedges, if desired.

SHRIMP SCAMPI WITH LINGUINI

- For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta reserving 1 cup of water.
- Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta and reserved pasta water. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.
SPICY SHRIMP IN A WHITE WINE, LEMON & BUTTER SAUCE
Whipped this up on a whim with some frozen shrimp and left over wine. It was absolutely delicious so I had to post it! Goes great over spinach or a rice pilaf and a nice piece of crispy bread to sop up the juice!

- If using frozen shrimp defrost in a bowl of tepid water. Then rinse off and pat dry.
- In a large saucepan melt 3 tablespoons of the butter or margarine over medium heat. While that is melting toss the shrimp with all the dry ingredients.
- Once butter is completely melted and turning a light golden color add the shrimp. Cook on one side until nice and brown and crispy. Turn over and add lemon juice. Cook until opaque, one-two more minutes.
- Remove shrimp from pan. Leave pan on the flame. Add the remaining butter and let melt. Once the butter is melted add the wine to deglaze the pan and bring to a simmer. Let sauce cook down until it almost stops bubbling.
- Pour over shrimp and enjoy!
SHRIMP IN LEMON BUTTER SAUCE

- Place the wine and vinegar in a small saucepan over a moderate heat and reduce to 2 tablespoons. Add the lemon juice.
- Gradually whisk in the butter over a low heat, one cube at a time until slightly thickened and glossy.

- Boil wine, vinegar and garlic in small saucepan until mixture is reduced to 1/4 cup, about 4 minutes. Reduce heat to low. Whisk in butter, 1 piece at a time, allowing butter to melt before adding more. Remove from heat. Stir in lemon juice. Season with salt and pepper. Cover and keep warm.
- Heat oil in large nonstick skillet over high heat. Sprinkle shrimp with salt and pepper. Add to skillet and sauté until shrimp are opaque in center, about 3 minutes. Transfer shrimp to plates. Drizzle lemon-garlic butter over. Sprinkle with lemon peel and chives and serve.
SHRIMP PASTA WITH LEMON-BUTTER SAUCE

- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes.
- Slice the whole lemon into circles, then cut circles in half. Juice the remaining half lemon and set aside.
- Preheat a skillet over medium-high heat. Add enough chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter with shrimp and lemon slices. Add parsley, salt, and pepper; cook shrimp until they are bright pink on the outside and the meat is opaque, about 4 minutes. Turn heat off, add tomatoes, and cover with a lid until the heat softens the tomatoes.
- Drain pasta and return to its pan. Add shrimp and tomato mixture and mix to combine. You may take out the lemon slices and squeeze the juice out of them or simply keep them mixed in.
- Add more chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter, more parsley, and the reserved lemon juice. Let the butter melt and simmer, then pour sauce into the pasta along with Parmesan cheese. Stir until fully combined.
