½ -1 teaspoon Szechuan Peppercorns (or sub black peppercorns)
1/4 cup soy sauce ( of Gluten-Free Liquid Aminos) see notes.
3 tablespoons honey (or sub maple syrup, coconut sugar, brown sugar or sugar alternative)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar (or black vinegar)
1 tablespoon Chinese cooking wine (shaoxing) or mirin (both optional)
3 garlic cloves, finely minced (use a garlic press)
2 teaspoons fresh ginger, finely minced ( or use ginger paste)
1 tablespoon garlic chili paste (or sambal oelek) more for more spicy or sub 1 teaspoon chili flakes
½ teaspoon Chinese Five Spice
optional- 2-3 teaspoons corn starch, to thicken, see notes.

Steps:

  • Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  • Place all ingredients in a medium bowl or small jar and whisk until well combined.
  • If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
  • If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.
  • If making a stir-fry, try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry, right before adding the Szechuan Sauce. Do not eat the chilis. ????

1 tablespoon Szechuan peppercorns
Salt
1 pound boneless, skinless chicken, pounded thin and cut into 1-inch thick strips
2 tablespoons canola oil
2 tablespoons ginger, minced
1 tablespoon garlic, minced
1 cup onions, julienned
1 cup broccoli florets
1/4 cup green peppers, julienned
1/4 cup red peppers, julienned
1/4 cup yellow peppers, julienned
1 cup shiitake mushrooms, sliced
2 tablespoons thin soy sauce
1/4 cup dry sherry
1 tablespoon chile paste
1/4 cup scallions, cut thinly on the bias

Steps:

  • Heat a small, dry saucepan. When the saucepan is hot, add the Szechuan peppercorns and, shaking the pan constantly, toast until the peppercorns are fragrant. Remove from the heat. Place the peppercorns in a spice grinder and grind. Season the chicken pieces with the peppercorns and salt and set aside. Heat a large wok over high heat. When the wok is hot, add the oil. Add the ginger, garlic and onions and stir-fry for 1 minute. Add the chicken, broccoli, peppers, shiitake mushrooms, soy sauce, sherry and chile paste. Stir-fry until the chicken is cooked through and the vegetables are cooked, but al dente, about 5 minutes. Add the scallions and stir-fry for 1 more minute.

This beef and vegetable stir-fry takes its cues from dry fried Sichuan beef, which calls for browning strips of beef over high heat to ensure juicy, flavorful meat. Hot cherry peppers and spicy black bean sauce give this dish its fire, but you can use sweet black bean sauce for a mellower version. To get closer to the original dish, seek out Sichuan peppercorns.

1 pound flank steak, halved lengthwise and thinly sliced against the grain
2 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
1 English cucumber, peeled, halved lengthwise, seeded and cut into 3/4-inch chunks
2 stalks celery, chopped, plus celery leaves for topping
3 tablespoons Asian black bean sauce
4 pickled hot cherry peppers, chopped, plus 2 tablespoons brine
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 teaspoon mixed peppercorns
4 cups cooked jasmine rice

Steps:

  • Toss the steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch in a large bowl. Combine the cucumber and celery in a separate bowl; set aside.
  • Stir the black bean sauce with the remaining 1 tablespoon soy sauce and 1 teaspoon cornstarch, the cherry pepper brine and 1/4 cup water in a small bowl; set aside.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the cucumber-celery mixture and cook, undisturbed, 1 minute. Toss and cook, stirring occasionally, until crisp-tender, 1 to 2 minutes. Transfer to a bowl.
  • Heat the remaining 1 tablespoon oil in the same skillet. Add the steak in a single layer. Cook until browned on the bottom, about 1 minute. Toss and continue cooking, stirring, until just a few pink spots remain, 1 more minute. Add the garlic, ginger and peppercorns and cook, stirring, until the meat is cooked through, 1 to 2 more minutes. Add the black bean sauce mixture and cherry peppers and bring to a boil. Cook until glossy, about 1 minute. Toss in the cucumbers and celery.
  • Serve the stir-fry over rice. Top with celery leaves.

Steps:

  • Start by preparing and cutting all the vegetables and measuring your ingredients so that they are ready to go. Once you begin stir-frying, it goes very quickly.
  • In a wok or large saute pan, heat canola oil over high heat to almost smoking. While stirring constantly, 1 at a time, add in the peppers and onions, followed by the squash, zucchini, eggplant, garlic, ginger, sesame oil, and teriyaki sauce. Cook for about 2 minutes and then add in the remaining ingredients and seasonings, except for the snow peas. Cook about 2 minutes more. Stir in snow peas when done and remove from heat. 1 egg (, beaten)
1 tablespoon peanut oil ((or vegetable oil))
1/2 teaspoon salt
3 tablespoons Chinkiang vinegar ((*Footnote 2))
2 tablespoons Shaoxing wine
1 tablespoon light soy sauce ((or soy sauce))
1 tablespoon dark soy sauce ((or soy sauce) (*Footnote 3))
1 tablespoon homemade chili oil ((Optional))
1 tablespoon Doubanjiang ((fermented chili bean paste) (*Footnote 4))
1/2 cup beef stock ((or water))
3 tablespoons sugar
1 tablespoon cornstarch
1/3 cup cornstarch
1/3 cup peanut oil ((or vegetable oil))
1/4 white onion (, sliced)
1 bell pepper (, thinly sliced (I used half red and half green))
4 Chinese dried chili peppers
1 tablespoon ginger (, minced)
1 tablespoon garlic (, minced)
Roasted sesame seeds (for garnish (Optional))

Steps:

  • Beat the egg in a medium sized bowl. Add the sliced beef, vegetable oil, and salt. Mix well and let marinate for 15 to 20 minutes while preparing the other ingredients.
  • Combine everything for the sauce in a big bowl and mix well.
  • When you're ready to cook, drain the extra liquid from the bowl of beef. Add the cornstarch. Stir to coat the beef, until it forms an uneven coating with a little dry cornstarch left unattached.
  • Heat oil in a large nonstick skillet (or a cast iron pan) over medium high heat until hot. Add the beef and spread into a single layer in the skillet. Separate the beef pieces with a pair of tongs or chopsticks.
  • Cook without touching the beef for 2 to 3 minutes, or until the bottom turns golden. Flip to brown the other side, 1 to 2 minutes. Transfer the beef to a big plate and remove the pan from the stove. Let cool for 2 to 3 minutes.
  • Place the pan back onto the stove and turn to medium heat. You should still have 1 to 2 tablespoons of oil in the pan. If not, add more.
  • Add the onion, pepper, and dried chili pepper. Cook and stir for 1 minute.
  • Add the ginger and garlic. Stir a few times to release the fragrance.
  • Stir the sauce again to dissolve the cornstarch completely. Pour into the pan. Stir and cook until it thickens a bit.
  • Add back the beef pieces. Stir to coat beef with sauce.
  • Transfer everything to a plate immediately and garnish with roasted sesame seeds, if using.
  • Serve hot over steamed rice as a main dish.

This was the other main dish at my Chinese New Year's party. Several guests declined a second chopstick load and requested large amounts of water, others went back for thirds. Depends on how much you treasure the continued existence of your taste buds...and don't be scared by the long ingredients list, they're all simple and easy. Serve this alongside something savory, follow with something cool and sweet, and vary the marinade and number of chilies according to taste. I used long, skinny 'pyro peppers' in this version. Oh, and try to resist the temptation to turn the heat down -- high heat is important to a quick stir fry, though it does make the chilies and chili oil quite pungent.

3 -6 tablespoons water
2 red chilies, diced

1/4 cup bamboo shoot
3 stalks celery, diced
1 large red bell pepper, diced
1 large yellow bell pepper, diced
3/4 cup carrot, diced
1 1/2 cups broccoli florets
1 1/2 cups straw mushrooms
2 tablespoons peanut oil
6 scallions, lower portions only, diced
3 teaspoons minced garlic

Steps:

  • Mix together the diced chilies, soy sauce, chili garlic paste, vinegars, and honey until well blended.
  • Add the szechuan seasoning, ginger, cayenne, and garlic.
  • Stir to mix.
  • Add the oils, mix, and then water down to desired spiciness.
  • Marinate the seitan / chicken / tofu for at least 2 hours, preferably 4-6.
  • Shake or turn occasionally to ensure even flavor distribution.
  • Heat the oil in your wok.
  • Add scallions, garlic, and chilies and stirfry to season, 1-2 minute
  • Turn on the fan above your stove.
  • Trust me.
  • Add the marinated chicken and about 1/3 of the sauce.
  • Saute on high heat for 5-10 minutes.
  • Add carrots, water chestnuts, and celery; stir fry for 4-5 minutes.
  • Add 1/3 more of the marinade sauce.
  • Add broccoli, bamboo shoots, mushrooms and bell peppers.
  • Saute for 3-5 minutes.
  • If you desire, thicken the remaining marinate sauce with 2 tsp cornstarch and stirfry for an additional 1-3 minutes after adding.
  • Serve over hot whole wheat spaghetti (trust me, this works) or brown rice.

This used to call for a cheap cut of flank steak but flank steak has been 'discovered'. It's not worth $6-7 a pound. It is probably my fault, I spent years singing the glories of the stuff and people finally believed me. That is the way of it all. If you can find it use soy sauce made with water, soy beans, and salt and nothing else. It is much richer and better. Portions and cooking time are a guess.

  • Add Carrots and stir fry 1 minute.
  • Add Celery, Red Bell Pepper, and Onion, stir fry 2 minutes.
  • Remove and set aside.
  • Reheat wok.
  • Add oil, swirl to coat.
  • Add Crushed Red chilies, cook a few seconds.
  • Add Beef, stir fry 3 minutes.
  • Add ginger, stir fry 1/2 minute.
  • Push Meat to the sides of the wok.
  • Pour Sauce into the center of the wok.
  • Stir and thicken for 30 seconds.
  • Return the vegetables, stir and heat through.
  • Serve.
