½ pound breakfast pork sausage, cooked, drained
1 (10 ounce) can RO*TEL Diced Tomatoes and Green Chilies, undrained

Steps:

Mix ingredients in microwaveable bowl.
Microwave on HIGH 5 minutes or until VELVEETA is completely melted, stirring after 3 minutes.

1/2 lb. Odom's Tennessee Pride® Hot Country Sausage
1 pkg. (16 oz. each) VELVEETA, cut into cubes
1 can (10 oz. each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
tortilla chips, optional

Steps:

Heat large nonstick skillet over medium-high heat; add sausage. Cook 5 minutes or until crumbled and no longer pink, stirring occasionally. Drain; return to skillet.
Add Velveeta and undrained tomatoes to skillet; stir to combine. Cook over medium heat 5 to 7 minutes or until Velveeta melts, stirring occasionally.
Serve with tortilla chips, if desired.

A rich, spicy cheese dip that is a must for parties and get-togethers. It also works well as a sauce. You can make it as mild or as spicy as you like, depending upon the type of sausage and/or Rotel you use.

Ingredients

1 lb sausage (chorizo works well, too)
32 ounces Velveeta cheese, cut into cubes
2 (28 ounce) cans Rotel Tomatoes (for added spice use the "Extra Hot" flavor)

Steps:

Crumble sausage and brown in skillet.
Place Velveeta and Rotel into a crock pot and heat on high.
Once sausage is browned, add it to the crock pot.
Continue heating on high, stirring occasionally, until cheese has melted.
Turn heat down to low, get out the tortilla chips and beer, and enjoy the ballgame.
This recipe works as a sauce as well.
If you are having a large get-together, I recommend doubling the recipe, it's usually the life of the snack buffet.

This is a great dip that I always get requests for...took it to work (hospital) and it disappeared before lunchtime. The difference is the fresh vegetables and cheese mix. Try it, you won't be disappointed. Freezes well also.

1 lb hot breakfast sausage
3 fresh tomatoes, chopped
2 yellow onions, chopped
2 -3 fresh jalapenos, seeded and chopped
2 lbs Velveeta cheese
8 ounces cheddar cheese
8 ounces monterey jack cheese

Steps:

Fry sausage and drain.
Combine tomatoes, onion and pepper together and sauté.
Cube cheeses, add to vegetables and slowly melt cheese over low heat (can be done in crock pot).
Mix in sausage and heat to serving temperature.

In a large dry pot or deep skillet over med/high heat, brown sausage (10-12 min), breaking it apart with your spatula (the sausage releases enough oil to grease the pan). When browned, remove excess grease by pushing a paper towel around the pan with a spatula until fully saturated then discard.
Add 2 cans un-drained Rotel tomatoes, 15 oz can drained corn, and 8 oz shredded cheddar (reserve some cheddar to garnish the top if desired). Cook over med heat, stirring occasionally just until bubbly and cheese is melted. Remove from heat, garnish with fresh tomatoes, reserved cheddar, and chopped chives. Serve with tortilla chips.
