Nonstick cooking spray, for the baking sheet
6 frozen dinner roll dough balls, thawed according to package instructions
6 hot dogs
1/4 cup baking soda
1 large egg, beaten
1 teaspoon pretzel salt
1 cup spicy mustard
Pickles, for serving

Steps:

  • Bring a pot of water to a boil. Preheat the oven to 425 degrees F. Spray a baking sheet with cooking spray and set aside.
  • Roll each dinner roll into a long rope approximately 1 1/2 to 2 times the length of a hot dog. Coil each rope around a hot dog, pinching the ends to seal them so they cannot come loose.
  • Add the baking soda to the boiling water, then, working in batches, drop the pretzel dogs into the water for 30 seconds and remove to a rack.
  • When all the dogs have been boiled, place them on the greased baking sheet. Brush with the beaten egg and sprinkle with pretzel salt.
  • Bake until the bread ropes are cooked and have turned golden brown, about 12 minutes. Serve with spicy mustard and pickles.

Homemade corn dogs made with breakfast sausage are served with a spiced maple syrup dip in this fair food treat everyone loves.

8 wooden skewers
8 breakfast sausage links
1 cup maple syrup
½ teaspoon ground cinnamon, or more to taste
¼ teaspoon cayenne pepper
2 quarts vegetable oil for frying
¾ cup all-purpose flour
¾ cup cornmeal
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon chili powder
¼ teaspoon cayenne pepper
¾ cup milk
1 egg

Steps:

  • Soak wooden skewers on a shallow bowl of water for 30 minutes; drain.
  • Heat a skillet over medium-high heat; saute sausage links, turning every 2 minutes, until cooked through and browned, about 6 minutes. Thread each sausage onto a wooden skewer.
  • Whisk maple syrup, cinnamon, and 1/4 teaspoon cayenne pepper together in a saucepan over low heat until warmed, 2 to 4 minutes. Remove maple dip from heat.
  • Heat about 2 inches of oil in a deep-fryer or large saucepan to 360 degrees F (182 degrees C). Line a baking sheet with paper towels.
  • Whisk flour, cornmeal, sugar, baking powder, chili powder, and 1/4 teaspoon cayenne pepper together in a bowl. Add milk and egg; whisk just until batter is smooth. Pour batter into a tall water glass to 3/4 full.
  • Dip each sausage into the batter, swirling and dipping to evenly coat.
  • Place the battered sausages gently in the hot oil, 4 at a time; cook, turning every 30 to 60 seconds, until evenly browned, 3 to 4 minutes. Adjust heat as needed to maintain 360 degrees F (182 degrees C). Transfer corn dogs to the paper towel-lined baking sheet. Serve with the maple dip.

1 cup stone-ground cornmeal
1 cup self-rising flour
2 tablespoons granulated sugar
1 teaspoon kosher salt
1 cup plus 2 tablespoons milk
1 large egg
About 14 cups vegetable oil, for frying
12 precooked breakfast sausage links
1 1/2 teaspoons apple pie spice
1 1/2 teaspoons pure vanilla extract
Confectioners' sugar, for dusting
1 1/2 teaspoons ancho chile powder
1 1/2 teaspoons sweet paprika
3/4 teaspoon cayenne pepper
1/2 cup fresh flat-leaf parsley leaves, chopped
1/4 cup sliced fresh chives
3/4 teaspoon mustard powder
1/4 teaspoon coarsely ground black pepper
Maple syrup, hot sauce and/or ketchup, for serving

Steps:

  • For the batter: Whisk together the cornmeal, flour, granulated sugar and salt in a large bowl. Whisk together the milk and egg in a small bowl. Pour the egg mixture into the flour mixture and stir until combined. At this point, you can leave the batter plain or you can add the ingredients for the sweet, spicy or herb-mustard options.
  • For the corn dogs: Fill a deep, medium pot a little more than halfway with vegetable oil. Attach a deep-fry thermometer and bring the oil to 350 degrees F over medium-high heat. Preheat the oven to 250 degrees F.
  • Fill a tall glass about three-quarters full with some of the batter. Push the pointed end of a 6-inch wooden skewer about halfway through each sausage. Line a baking sheet or large plate with paper towels.
  • Once the oil is hot enough, dip 1 sausage in the glass of batter until fully submerged and completely coated. Let any excess drip off, then dip completely in the hot oil, holding it by the skewer for a few seconds until the batter is set. Then let it go to bob and fry in the oil. Continue dipping in batches so you're frying only 2 or 3 at a time, turning the corn dogs in the oil as needed with tongs and adjusting the heat as necessary to maintain the temperature, until deep golden brown, 4 to 6 minutes. Let the finished corn dogs drain on the paper towel-lined baking sheet, then transfer to the oven to keep warm while you dip and fry the remaining batches. Fill the glass with more batter as needed.
  • If making the sweet version, dust each corn dog with confectioners' sugar. Serve with desired dipping sauces.

SPICY KIELBASA DOG WITH STOUT ONIONS

1 tablespoon butter
1/2 cup stout beer
1 Spanish onion, very thinly sliced
Kosher salt and freshly cracked black pepper
1 tablespoon canola oil
1 pound Polish kielbasa sausage link, cut into thirds
3 baguette portions (the length of the links), split through the center but not through the bottom
1/4 cup spicy whole-grain mustard
1/4 cup pickled sweet picante peppers, such as Peppadews
1 cup watercress

Steps:

  • In a medium saucepan, heat the butter over medium heat until melted. Add the beer and onions and cook, stirring often and reducing the heat to low as the onions start to brown, until the onions are caramelized and all of the liquid has reduced to allow the sugars to brown, 5 to 7 minutes. Season with salt and pepper and set aside.
  • In a large saute pan, heat the canola oil over medium heat. Split the links through the center just to open them up so they lay flat. Sear the links on the cut side until brown, about 5 minutes, then remove them from the pan. In the same pan, toast the buns again on the cut side until brown, a few minutes.
  • Spread the mustard onto the buns, then add the links. Top with the pickled peppers and caramelized onions. Finish with a small handful of watercress and serve.

  • Preheat oven to 400° For the mustard sauce, in a small bowl, whisk together and combine cream, dijon and yellow mustard. Set aside until ready to use. For the Kielbasa dogs, cut off the top of the pepper, about a ¼” from the stem. Remove the seeds and slice into paper-thin ringlets. Set aside until ready to use.
  • Add oil and butter to a cast iron skillet over medium-high heat. Once melted, add Kielbasa and sauté 8 minutes or until it begins to caramelize. Remove from the skillet and place onto a plate and set aside.
  • Add peppers and onion to the skillet, season with salt, pepper, and paprika about 6-7 minutes or until wilted looking. Add half of the mustard sauce to the vegetables, stir to evenly distribute and remove from the heat.
  • Place hot dog buns on a baking sheet, drizzle with olive and bake for 5-7 minutes or until golden. To assemble the dogs, add arugula to the bottom of the bun, top with Kielbasa, evenly distribute pepper mixture over the top and drizzle with extra mustard sauce. Serve immediately and enjoy.
