MOM'S NEW YEARS PIG'S FEET
This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

Steps:
- Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
- Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

- Combine the pig's feet, vinegar, water, soy sauce, onion, garlic, peppercorns, bay leaves, sugar, and salt together in a stockpot; bring to a boil for 2 to 3 minutes. Reduce heat to medium-low; allow the stew to simmer, stirring occasionally, until the meat pulls easily from the bones and the liquid has thickened, about 1 hour. Serve hot.

- 1. Boil pig's feet for about 15 minutes in Dutch oven and drain. Add pig's feet back to Dutch oven. Cover with water. Add remaining ingredients to Dutch oven, bring to a boil. Reduce heat to low and cook for 2 hours, until pig's feet are tender. Remove pig's feet from Dutch oven. Increase heat to concentrate the juice. Plate up pig's feet, pour juice on pig's feet and top with garnish. Enjoy!

- In a large stainless steel pot, place pig's feet and enough water to cover. Boil feet 2 hours or until tender; drain. Rinse feet in hot water to remove excess fat. Remove as many bones as you can.
- Put 1 chili pepper and 3 pig's feet in each one quart jar. In a separate bowl, mix salt and vinegar together. Pour vinegar mixture over pig's feet to cover. Seal jars and refrigerate for at least 3 days to 1 week before eating.

- Step 1: Cut the trotters into pieces, then soak in water for 8 minutes.
- Step 2: Bring the water to a boil, then put the trotters in and cook for 4 minutes.
- Step 3: Heat up the pot, add some oil to stir-fry the prepared ginger, green onion, chili and garlic.
- Step 4: Add two spoons of bean paste and stir fry for 3 minutes.
- Step 5: Put the trotters into the pot and then add light soy sauce, dark soy sauce, cooking wine, sugar and salt, stir-fry evenly, then add water, bring to a boil over high heat, and simmer until the trotters are cooked through.
- Step 6: The finished product, just sprinkle with chopped green onion, it is really delicious.

- 1. scrape and clean feet well and put on to boil in enough salt water to cover. Simmer for approximately 4 hours or until meat will separate from the bones. Remove from pot, allow to cool, and chop the meat.
- 2. Mix stock in which meat was cooked with vinegar, salt, pepper and spices. Bring to the boiling point and hold for 30 minutes. Strain liquid to remove spices.
- 3. Place pieces of meat and chopped pickle - sour or dill? - in a flat dish or stone jar and pour sour liquid over it ( I guess the 2 cups stock in recipe). Chill in the refrigerator until perfectly cold. Slice and serve.
