SPICY OKRA AND TOMATOES
Steps:
- Gather the ingredients.
- Trim off and discard the stem ends from the okra and cut the pods into 1/4- to 1/2-inch slices. Set the prepped okra aside.
- Peel and thinly slice the onion ; set it aside.
- Chop the tomatoes, reserving their juices; peel and mince the garlic; set them both aside.
- Heat the oil in a large frying pan or sauté pan over high heat. Once the oil is hot, add the chopped onions and cook, stirring frequently, until the onions start to brown, about 5 minutes.
- Add the garlic and cook, stirring, until brightly fragrant, about 30 seconds.
- Add the chili powder, cumin seeds, turmeric, and cayenne, if using, and cook, stirring as the spices sizzle, another 30 seconds.
- Add the okra and stir to coat the pieces with the onion-spice mixture.
- Add the tomatoes, any juices they've released, the salt, and 1/2 cup of water.
- Stir to combine everything and then cover. Reduce the heat to maintain a steady simmer.
- Cook until the okra is tender and the flavors are well blended, 5 to 10 minutes.
- Take off the heat. Stir in the lemon juice and add more salt to taste, if desired.
- Serve the okra hot or warm.

Steps:
- Combine sausage, scallions, and garlic in a large soup pot over medium-high heat. Cook and stir until sausage is browned and crumbly and garlic and scallions have browned a bit, about 10 minutes. Mix in okra, diced tomatoes, and tomato sauce until well combined.
- Reduce heat and simmer for 20 to 25 minutes. Add mushrooms, salt, and pepper; simmer for another 20 to 25 minutes, adding water if mixture begins to dry out.

- Rinse okra in a colander under hot water.
- (Rinsing okra gives it a cleaner taste and texture.) Heat oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring until golden, about 3 minutes.
- Add tomatoes (including juice) and chile and boil, stirring until tomatoes are softened and liquid is reduced by half, 5 to 10 minutes.
- Add okra and cook, gently stirring, until okra is tender, about 5 minutes.
- Stir in salt and pepper and discard chile.

Steps:
- Preheat oven to 400 degrees; line baking pan with release foil or spray with cooking spray.
- Rinse the okra in cold water and drain well on paper towel; trim the tops of okra BUT don't remove the caps.
- Put okra in prepared baking pan, add sliced onion, garlic tomatoes(whole cherry or cut in half ,cut heirloom tomatoes into chunks) add green beans if using and mint.
- Drizzle with olive oil season with salt & pepper, stir together.
- Roast in oven for 10 to 12 minutes, giving the vegetables a toss if needed.
- Serve hot, warm or at room temperature, enjoy.

SPICY OKRA AND TOMATOES
Steps:
- Line a plate with paper towels. In a large skillet, heat the oil over medium-high heat. Add the okra and cook until lightly browned, about 4 minutes. Transfer with a slotted spoon to the prepared plate. Set aside.
- Add the onion to the residual oil in the skillet and cook, stirring occasionally, until golden, about 10 minutes. Add the garlic and ginger and cook until fragrant, 45 to 60 seconds. Add the cumin, coriander, cayenne, and turmeric and stir to combine. Add the tomatoes with juices, and stir to combine.
- Cook until slightly thickened, about 5 minutes. Add the reserved okra and stir to combine. Decrease the heat to medium-low and cook until the okra is tender, about 10 minutes. Taste and adjust for seasoning with salt and pepper. Garnish with cilantro and serve immediately.
SPICY OKRA AND TOMATOES-A NEW TWIST TO A TRADITIONAL DISH.

- Cook the okra according to package directions, then rinse under cold running water to stop the cooking, and drain. Preheat a large skillet over medium-high heat. Add the oil, then the onions, bell pepper, and garlic. Sauté until the onions turn translucent, about 3 minutes. Add the okra, tomatoes, tomato sauce, salt, and black pepper. Cover, reduce the heat to medium-low, and simmer to heat through, 4 to 5 minutes.
OKRA WITH BASIL
Steps:
- Bring two quarts of heavily salted water to the boil. Blanch the okra for exactly five minutes. Drain and refresh under cold running water for five minutes. Drain. Toss okra, vinaigrette and basil. Allow to marinate for 30 minutes before serving. This salad may be made up to four hours ahead of time.

- Heat the oil in a large pan or wok over medium-high heat. Fry the okra until they are slightly crisp and somewhat browned (about 5 minutes). Remove from the oil and set aside.
- In the same oil, fry the garlic, ginger, serrano peppers, turmeric, basil, and cumin for 2 minutes. Add the shrimp and mix well. Cook until shrimp are done, or about 3 minutes.
- Add the rest of the ingredients along with the fried okra. Quickly fry the mixture for 5 more minutes, stirring gently to prevent the okra from breaking. Serve hot over rice, if desired.

SPICY OKRA WITH CHILES, GARLIC, TOMATOES & BASIL
Steps:
- Heat 1/4 cup of oil in a large skillet with a heavy bottom over medium heat. Add okra, turmeric and coriander and lightly brown on all sides, stirring once in a while. If you don't have pan large enough to hold the okra in one layer cook it in batches if necessary, divide the spices along with the okra. Remove okra and wipe pan clean. Heat the pan over a medium flame and add the rest of the ghee/oil. Add garlic and red chiles, cooking to a very light, golden brown. Add ginger and sauté for a few moments before adding onions. Salt the mixture lightly, turn down the heat and cover the pan. Cook the onions until they are very soft and fragrant. Turn up the heat to medium high and add the tomatoes and any liquid that may have accumulated. Cook for a few moments to render some juice before adding the sautéed okra and Serrano chiles. Season the mixture again with salt and if it seems very dry add 1/2 cup of water to moisten it before covering it and returning the heat to medium-low. Cook for about 15-20 until the okra is tender, but not yet falling apart. Stir in lemon juice and basil, adjust seasoning and top with cilantro just before serving.
